Don’t get me wrong I’m all about the creamy soups and ribs that you can make in your Instant Pot or slow cooker. In fact, that’s my preference most of the time. Ha ha! But I do feel better when I eat a little lighter. Today I’ll be sharing with you 61 healthy Instant Pot and slow cooker recipes that you can add to your dinner menu this month. Although these won’t cover everyone’s definition of “healthy,” they cover mine. Whole grains, vegetables, lean meats etc. Although these recipes are healthier they are not lacking in flavor! Enjoy!

Thanks, Karen, for all your delicious recipes! I use my Instant Pot ALL the time and do love the variety of food you include. A question for those of us that are on Keto…in recipes that include rice, pasta, potatoes, etc., as a part of the recipe and the meat or chicken is cooked in the bottom of the pot along with other ingredients, how much can I reduce the called-for liquid in the main recipe if I would prefer to cook the carbs separately? I do realize that defeats the time & pot-saving ability of a one-pot meal, but with rice particularly, it is next to impossible to separate at the table! Thanks so much for your help with this!
Hi Connie. The liquid that is in pasta and rice recipes is usually solely to cook the rice or pasta. The liquid that’s in potato recipes is to help the pot come to pressure usually. It’s hard to say a definitive answer to this question. If you gave me a specific recipe I could tell you what I would do.
I’d like to make your Smothered Greek Chicken but cook the rice separately. I know I need some liquid for the pot to come to pressure. Thanks!
With chicken it puts off a lot of liquid so you’ll only need about 1/2 cup broth for the pot to reach pressure in a 6 quart pot. This is especially true with frozen chicken.

From now on for all of us Single People it would be helpful if you would add a “1/2 X” to the Scale section of your recipes. If you want to go back and redo all of your old recipes to that would be Great!
