This recipe came together when I was searching through my kitchen trying to figure out what to make for dinner. I had some chicken breasts in the freezer, a little taco sauce and a package of McCormick’s Mojito Lime Marinade seasoning that I’d picked up at Winco for 10 cents (score!). What turned out was an amazing shredded chicken that had the best flavor ever. We served our chicken as tacos but you could also serve this chicken on a salad or in a quesadilla or a myriad of other ways. Add this EASY recipe to your menu this week! I promise you won’t be disappointed.

What Pressure Cooker/Slow Cooker Did You Use?
Slow Cooker: To make Instant Pot/Slow Cooker 3-Ingredient Lime Chicken Tacos (from frozen) I used my 6 quart oval Kitchenaid slow cooker.* I love this slow cooker (you can see me talking about it in a video here). It cooks low and evenly. I love the medium heat choice because most slow cookers that I’ve seen only have the option of cooking on low or high. If you’re going to buy just one slow cooker, this is the one that I recommend.
Instant Pot: To make Instant Pot/Slow Cooker 3-Ingredient Lime Chicken Tacos (from frozen) I used my 6 quart Instant Pot Duo 60 7 in 1*. I love this Instant Pot because it has the yogurt making function which I use almost weekly. It has two pressure settings (high and low), and there are also little slots in the handles so that you can rest the lid there instead of putting it down on your counter-top.

Description
This is the easiest and tastiest shredded chicken that you can serve in tacos (or other ways). The best part is that you can use frozen chicken and it takes about 2 minutes of prep time.
Ingredients
- 1/2 cup chicken broth (for Instant Pot version only)
- 1 1/2 pounds boneless skinless chicken breasts (can be frozen)
- 1/2 cup La Victoria green taco sauce
- 1 Tbsp McCormick’s Grill Mates Mojito Lime Marinade (it’s in a packet)
Instructions
For Instant Pot Version:
- Add ingredients: Add 1/2 cup chicken broth to the Instant Pot. Add in the chicken. Pour the taco sauce over the chicken. Sprinkle a tablespoon of the mojito lime marinade seasoning over the top of the chicken.
- Pressure cook: Cover the pot and make sure valve is set to sealing. Set the manual/pressure cook button to 12 minutes (for frozen chicken) or 10 minutes (for thawed chicken) on high pressure. When the time is up let the pot sit there for 10 minutes and then move the valve to venting.
- Shred chicken and serve: Open the pot and remove the chicken. Place on a cutting board. Shred the chicken and then return it to the juices in the pot. Stir the chicken into the juices and then serve the chicken on tacos, quesadillas, salad, burritos, etc.
For Slow Version:
- Add ingredients: Add the chicken into slow cooker. Pour the taco sauce over the chicken. Sprinkle a tablespoon of the mojito lime marinade seasoning over the top of the chicken.
- Slow cook: Cover the slow cooker and cook on low for about 3-4 hours for thawed chicken and 5-6 hours for frozen chicken.
- Shred chicken and serve: Open the slow cooker and remove the chicken. Place on a cutting board. Shred the chicken and then return it to the juices in the pot. Stir the chicken into the juices and then serve the chicken on tacos, quesadillas, salad, burritos, etc.

How should I adjust the cooking time if using frozen chicken thighs instead?
I’d do 14 minutes for chicken thighs.
What kind of frozen chicken breast do you usually use?
Big processed box from Costco , for example. You always talk about nice tender chicken breast.
I usually use fresh frozen with the filet, so they are big thick blocks! I find them kinda dried out when pressure cooking from frozen( or even fresh).

Sometimes I buy costco chicken breasts sometimes I buy fresh chicken breasts at the grocery store and freeze them myself. I guess the key is cooking them through without overcooking them. That’s why it’s so hard to get just right. I should probably measure my chicken breasts for thickness and specify that in my recipes from now on. If you like chicken thighs those always turn out tender for me! I buy my chicken thighs in the frozen section at costco.

What spices/ sauce subs would work if you don’t have either handy?
Do you have green enchilada sauce or green salsa? Do you have fresh lime? You could use enchilada sauce in place of taco sauce. You could use salt, chili pepper, garlic, onion powder, lime zest and lime juice for the seasoning. It won’t be the same but you could sure try it!
