Instant Pot Mango Salsa Chicken
Karen W. sent me an email ” A friend sent me this recipe. Is there a way you could convert it to an IP recipe?” The recipe was a very simple crockpot recipe for Pineapple Salsa Chicken. It looked like it was a weight watchers recipe or something similar. I told Karen I would love to try it! I ventured off to the store to grocery shop but could not find the pineapple salsa. Apparently it was a Trader Joe’s product and unfortunately I do not have a Trader Joe’s close to where I live. I opted for a peach mango jarred salsa that is made by Pace’s instead.
The very simple and easy recipe took about 3 minutes to get going in the Instant Pot and tasted like summer! Lots of flavors from the bright salsa. I chose to eat mine over some rice. I also used some of the leftover chicken for chicken enchiladas. Yum! Next time I will use the chicken in chicken quesadillas with those delicious uncooked tortillas that you find in the refrigerated section of the grocery store.
Personally I love the succulent taste of chicken thighs but I don’t love how many more calories they contain than chicken breasts. That’s why I love to make this recipe with a combination of the two types of chicken. Typically I buy one bag of thighs and one bag of breasts from Costco. Then I use them in recipes like this.
Because I used frozen chicken there was quite a bit of liquid after the chicken was cooked. I turned the Instant Pot to the saute button and let the sauce reduce on its own while I shredded the chicken. Then I used a cornstarch slurry to thicken up the sauce before I added the chicken back in. The sauce tasted great over rice. If you want less sauce then you can drain the liquid before returning the chicken to the pot.

What Pressure Cooker Did You Use?
To make Instant Pot Mango Salsa Chicken I used my 6 quart Instant Pot Duo 60 7 in 1*. I love this Instant Pot because it has the yogurt making function which I use almost weekly. It has two pressure settings (high and low), and there are also little slots in the handles so that you can rest the lid there instead of putting it down on your counter-top.

Description
With only 4 ingredients this Instant Pot Mango Salsa Chicken will be a go-to summer recipe. It’s perfect over rice, on tortillas or over riced cauliflower.
Ingredients
- 1/2 cup chicken broth
- 2 pounds boneless skinless chicken thighs or breasts (frozen is okay)
- 1 Tbsp soy sauce
- 1 (15 oz) jar Pace’s Peach Mango Jalapeno Salsa (or other similar salsa)
Instructions
- Pour broth into Instant Pot. Add in the chicken into pot in a single layer. Pour soy sauce over chicken. Scoop half of the jar of salsa over the top of the chicken.
- Cover your Instant Pot and secure the lid. Make sure the valve is set to sealing. Set the manual/pressure cook button to 15 minutes for thawed chicken and 18 minutes for frozen chicken *(or for a more accurate time check out this post). When the time is up let the pot sit for 10 minutes and then move the valve to venting. Remove the lid.
- Remove the chicken and place on a cutting board. Shred the chicken. If you want to thicken the juices in the Instant Pot make a cornstarch slurry by mixing 2 Tbsp cornstarch with 2 Tbsp water until smooth and then stirring the mixture into the pot on the saute setting. Stir the shredded chicken back into the juices in the pot.
- Stir the remaining half of salsa into the pot.
- Serve the chicken and sauce with rice, tortillas or even over cauliflower rice.
Notes
I like to use a combination of chicken breasts and chicken thighs.

To make gluten free: make sure salsa is gluten free and use a gluten free soy sauce.

I sprinkled garlic and onion powders on top of the chicken. Fifteen minutes for frozen thighs and one breast was enough time. Was good over Mexican rice.

How would I change the time for frozen chicken tenders? And to complicate even more, what about rice? Can I add it in or do pot in pot, if I use frozen chicken tenders?
yes frozen tenders would be great. I would do 8 minutes. And then yes on the pot in pot rice. Place on a trivet on top of the chicken.
Thanks so much for your quick response! I did use frozen chicken tenders and pot in pot white rice for 8 minutes with 10 minutes NPR. Turned out great! I did add a can of black beans and a can of corn and then stirred the rice in to help soak up some of the liquid.

do i put it on high or low pressure for the pressure cook?
Hi Anny, high pressure. When in doubt always use high pressure.
Why the soy? Or would just a little salt work?
Also, I rarely cook dinner without onion or garlic. Would those hinder this recipe?
You could use onion and garlic to add more flavor. Soy sauce just adds a depth of flavor. You could use tamari instead or coconut amninos.
Would it work to serve the mango chicken in sandwiches or is it too moist for that
You could. I would try to strain off the juices first though.
