Instant Pot Egg Bites

After seeing egg bite recipes across the internet for months I finally decided to try my hand at them myself. I guess I hadn’t made them yet because I saw pictures of them and thought that they didn’t look that great. I was also hesitant to make them because it required a new accessory for the Instant Pot and I try to keep things as simple as possible for you.

However after trying the egg bites I decided that buying the Instant Pot silicone mold* was well worth the investment. They were super tasty and fluffy and can be made with whatever you have in your fridge. The recipe below is completely adaptable to you, your diet needs and what you have in your fridge at this moment.

Equipment needed to make egg bites

You’ll need a 6* or 8* quart Instant Pot to make this recipe. Along with some sort of trivet with handles or a sling* to lower and lift the egg bites mold* in and out of the pot.

Mix-in ideas

You really only need eggs and some dairy to make Instant Pot egg bites. But you can get fun and creative with other ingredients. Here are some of my favorite ideas:

  • Ham
  • Bacon
  • Sausage
  • Pepperoni
  • Cheese: cheddar, pepper jack, monterey jack, parmesan, mozzarella, goat cheese
  • Cottage cheese
  • Fresh herbs: parsley, cilantro, basil
  • Chopped spinach
  • Tomatoes
  • Bell peppers
  • Green onions
  • Mushrooms
  • Caramelized onions
  • Minced garlic

Egg bites can be eaten plain or topped with salsa or a few squirts of Tabasco sauce.

How to store and reheat Instant Pot egg bites

If you have extra egg bites and want to store them. Put them into an airtight container or a ziploc bag and store in the refrigerator for up to 1 week or in the freezer for up to 3 months.

To reheat egg bites all you need to do is pop them into the microwave for 30 seconds or if they are frozen they will take about 90 seconds in the microwave. I put them on a paper towel or napkin and fold half of the paper towel over the top.

Is this keto friendly?

Egg bites can be keto diet friendly. Just don’t include higher carb veggies (like tomatoes) and use heavy cream instead of milk or full fat cottage cheese.

How to double this recipe

The egg bites come out more evenly cooked when they are cooked just one tray at a time. However you can stack egg bite molds on top of each other. Increase the pressure cooking time to 10 minutes and cover with foil or with an oven safe lid.

Are egg bites healthy?

Egg bites are a great breakfast or snack with protein to keep you full longer. They have 88 calories each, 7 grams of protein and 1 gram of carbohydrate. Whatever you add in will affect the nutrition information so keep that in mind.

Description

Crust-less quiche-like bites of eggs, cheese and whatever mix-ins you want. They’re protein packed and a perfect portable breakfast. 


Ingredients

Scale
  • 4 eggs
  • 1/4 cup milk or cottage cheese
  • Salt and pepper
  • 1/2 cup grated cheese of your choice
  • 1/2 cup of a combination of mix-ins of your choice

Instructions

  1. Add eggs and milk or cottage cheese to a blender. Blend until smooth. Pour into a bowl.
  2. Salt and pepper to taste. Add in the cheese and mix-ins of your choice.
  3. Spray your silicone egg mold with non-stick cooking spray. Then dip a ¼ cup measuring cup into the egg mixture and fill each of the impressions in the mold. They can be filled almost to the very top. 
  4. Pour 1 cup of water into the Instant Pot liner. Place the egg mold onto a trivet/sling and carefully lower the mold into the bottom of the Instant Pot.
  5. Cover the Instant Pot and secure the lid. Make sure the valve is set to sealing. Set the manual/pressure cook button to 8 minutes. When the time is up let the pot sit for 5 minutes and then move the valve to venting. Remove the lid.
  6. Use hot pads to remove the sling and egg bite mold from the pot. Invert the mold onto a plate to remove egg bites or use a spoon to carefully scoop out each egg bite. 

Notes

Mix and match these additional ingredients if desired. I used cubed ham, diced tomatoes and chopped spinach. Some ideas are: Ham, Bacon, Sausage, Pepperoni, Fresh herbs–parsley, cilantro, basil, Chopped spinach, Tomatoes, Bell peppers, Green onions, Mushrooms, Caramelized onions, Minced garlic

I used my 6 quart Instant Pot Duo 60 7 in 1*.

    can you tell me can i make hard boiled eggs in the silicone bits mold? if so how long do i put them in the instant pot for? would be great not to have to pill the eggs.

      Are you thinking you would just spray the molds with non-stick spray and then crack an egg into each hole? I haven’t tried that but I bet it would work! I would start with a 3 minute pressure cook time (1.5 cups water in bottom of pot) and see how it goes. Maybe just try one egg at first until you get it right on the timing.

      I just used my egg mold for the first time to test it. Just cracked the eggs into each. Added 1 cup water to the pot and trivet. Set the mold on top. Closed the lid and did 8 minutes manual time. PERFECT results.

      Was it the pan on the top or the bottom? Sometimes this happens. Just take out the pan that cooked and put the undercooked ones back into the pot and pressure cook for an additional 2-4 minutes.

        Thank you! I made another batch today and they turned out! A tip for others, I washed my egg mold With dish soap and I think it left a bit of residue because this last batch of egg bites tasted a tiny bit like dish soap so I’m just going to give it a really good wash with hot water and not use dish soap on it anymore

    Thank you so much for your recipe. I have made them twice now and they are good. My question is could I use yogurt instead of cottage cheese? I’m the only one who eats cottage cheese in the house so I don’t have it. By the way, I don’t even use a stick blender or any other kind of blender to mix my eggs. All you need is a whisk! Thanks for all you do.

    Just made these today and they turned out great! I will see how they re-heat as I’m going to try bringing them to work. Definitely don’t skip the spraying of the egg bite mold, my first batch didn’t come out very well (tasted fine, but stuck to the mold), remembered the spray on the second (we ate the first for brunch) batch and they came out much better. Thanks for the recipe, I’ve seen them talked about a lot, but wasn’t sure about amounts or times, so this was awesome.

    I added green chili in my egg bites. I have been making a similar recipe that uses cottage cheese that I bake in the oven. I never blend the cottage cheese and it has always been tasty. So, if you don’t have a blender, no need to blend.

    I already served this many times, it is delicious and easy to prepare. I like to make 14 – double recipe – and once cooled down I put the lid on and bring them to the cottage to reheat for several breakfast or for company the next day.     Ma’am,

    You did not specify low or high pressure with the egg bites so I went with low because I like softer eggs. Also, I was able to fit 8 eggs in the 7 egg container (silicone-egg-bites-mold). Hopefully this goes well 😬

    I’m on a major bites kick: pancake bites, then meatloaf and today egg bites for lunch. Scrumptious! Like you, Karen, initially the look didn’t appeal to me but so glad I made them!
    I used a Cuisinart 2-speed hand blender which comes with a container perfect for pouring egg into the molds without using another bowl or having to measure. After filling, added Wellshire Farms already cooked turkey bacon, cheddar cheese, mozzarella cheese and chopped cherry tomatoes in different combos.
    The most fun part was when the lid was removed they puffed way up and then sank back down like little alien pac-men or -women.

      Wish we could edit. I mean to say the blender was a stick blender, so no bowl or big blender to take apart and clean – a goal for me being less cleanup. Also used the paper towel on the plate like others suggested to catch any water drops. Making them again today with just a few little changes. Just love them.

    Made these for the first time today with chopped up chicken sausage and shredded cheddar. They were very easy to prepare and tasted excellent. I got my mold at Bed Bath and Beyond. Between a sale and the ubiquitous 20% off coupon, it was less than $10.00. I was so leery, but the recipe seems foolproof. I want to try some different add-ins. Someone suggested putting a paper towel on the plate before inverting the mold. That’s a great idea, and I will use it going forward (definitely ended up with some water on the plate. It was not a big deal, but I will try the paper towel next time).

    Made egg bites for the first time today. Followed the recipe 4 eggs 1/4 cup milk s&p. then added a 1/2 cup shredded cheese. This mixture did not even fill up the seven molds, so I mixed another 4 eggs with milk and it now filled up 11 out of the 14 molds I had. As I am typing I noticed it called for grated cheese. Do you think that is why my mix did not fill all 7 molds, because I used shredded cheese.

      You might want to do some research. Contrary to what we’ve been told for years, eggs are nutrient dense and most of those nutrients are in the yolk. Enjoy them in good health!

      I make these often for other people and play with the eggs. Today I made 4 sets, each a different flavor, but used two XL eggs and 1/2 cup egg white for a cholestral concious friend, then followed the formula of 1/4 cup cottage cheese blended, 1/2 cup cheese and a generous 1/2 cup other stuff.
      My combos were salmon/asparagus with gruyere , turkey sausage w/roasted red bell pepper with jack cheese, spinach, mushroom and caramelized onion with cheddar and , broccoli, ham and swiss.

    Very good and perfectly cooked. I used grape tomatoes, a minced small red mini pepper, fresh cilantro and bacon bits. Next time will add the individual ingredients to each egg bite separately instead of stirring it in the egg mixture to ensure more even distribution of the ingredients. Place a paper towel on the plate before removing the cooked egg bites to absorb excess moisture.

      To come to pressure your going to need about 1.5 cups of liquid. But sometimes ingredients have liquid that comes off of them like chicken or mushrooms so you won’t need that much in those cases.

    I have been making egg bites for two years. I do not have the molds and make them in small single serve jelly jars. I can put nine in my IP at a time. Cover with aluminum foil to cook. Set on STEAM for 8 minutes, 10 minutes NR then QR. Remove foil to cool, then screw on lid to store in refrigerator for up to a week. Remove lid, cover with paper towel, microwave one for 1 minute or two for 1 minute 30 seconds. Yum and so easy.

    Have you played around doing these is slow cooker? I have a smaller mold that fits in slow cooker, was designed for 3 qt. Instant Pot.

    I make these every week to take to work for breakfast. I saute peppers, onions, garlic and mushrooms.
    Add in S&P, canadian bacon and cheese. MW for 30 seconds per bite (1 minute for two). Also freezes well for a month or so.

      Linda – you don’t use milk?? I am lactose intolerant. I have found a wonderful cheese substitute but not for milk. I would be so excited if your recipe DOES NOT use milk!!!

      You can use it to freeze small portions of leftovers & then just pop them out & into a ziploc freezer bag.

      I make grits and freeze them in the tray, then pop them out into a zip bag. I use 1 or 2 for breakfast. I’ve seen recipes for muffins, brownies and even meatloaf in the mold!

      I’ve made small meatloaf for my MIL when she was sick and not eating much. They were the perfect size.
      We also did the eggs for her with protein powder added in since she wasn’t eating much.
