Instant Pot Smoked Sausage Country Boil (video)
I’ve been seeing all sorts of recipes for shrimp boil in the Instant Pot but unfortunately Greg is allergic to shrimp. I decided to make my own version with smoked sausage and other fun added ingredients. I was so pleased with how it turned out. Very flavorful and I love how it’s a one pot meal.

I decided to use a 1 minute pressure cook time for this recipe. I did this because I knew that green beans and corn don’t need much time. I used baby red potatoes and sliced them in half. I layered the ingredients so that the potatoes would cook on the bottom (closest to the heating element) and get done and then the corn and beans would not be overdone. I was so happy when I opened the pot and all the food was cooked (not overcooked or undercooked!) perfectly.
My Smith’s had a sale on smoked sausage so I stocked up. I used a garlic chicken sausage that was made by Hillshire Farm and it was so tasty. You can also use kielbasa or andouille sausage (or whatever you want).
Greg, Reagan, Reagan’s friend and I ate this up in no time! Skyler was sad when he came home and it was all gone. It was a hit. I loved drizzling the remaining juices over the top of my potatoes. It had so much flavor. So don’t forget to do that!

What Pressure Cooker Did You Use?
To make Instant Pot Smoked Sausage Country Boil I used my 6 quart Instant Pot Duo 60 7 in 1*. I love this Instant Pot because it has the yogurt making function which I use almost weekly. It has two pressure settings (high and low), and there are also little slots in the handles so that you can rest the lid there instead of putting it down on your counter-top.

I made this last night and it was a hit though next time I need to add more Bay Seasoning. I didn’t measure, I just sprinkled and the potatoes didn’t get much flavor. Instead of the corn on the cob, I used frozen corn so it wouldn’t be as messy to eat. My only problem is that I’m doing WW and it was high in points. ๐
But Karen, I do want to tell you that this site is my go to for new IP recipes. Thank you!
★★★★
Thanks for following along! And yes my recipes aren’t necessarily WW friendly.
So fast and easy! But the best part was the flavor. My family loved it! We didn’t have shrimp but next time we’ll get shrimp to add. Your recipes are so easy to follow and the videos are helpful for a non-cook like me. You’re making me into a cook!
★★★★★
Ahhh, thanks Andy! That is so nice to hear. Keep up the good work!
WHOA! Did this 2 nights ago. Soooooooo delicious. Used the Old Bay & added frozen shrimp on top as other readers suggested. Turned out perfect. Karen, you and my IP are my new BFF’s!!!
★★★★★
Haha! I love this! Thanks for sharing your review.
Did you add frozen precooked shrimp or raw shrimp?
Thank you.
Will the green beans come out hard? I have used green beans once because they, they came out hard.
If they do I will mix a can of green beans is at the end.
Thank you
★★★★★
Mine come out plenty soft.
Thank you I will try them again.

Delicious! I used 2 tablespoons of Old Bay and added shrimp. (The sausage was precooked chicken Andouille from Whole Foods.) The shrimp was frozen and stuck together. I got half a dozen pieces unstuck and put them on the top, but didnโt want to thaw the rest and overcook them. The ones on the top were fine but just a tad overdone.
When the boil was done everything except the liquid was put on a platter plus a plate (lots of food!) and I put the now thawed shrimp into the liquid to sautรฉ for under 2 minutes. Next time Iโll add a little more string beans; there was still a little room.
Washing potatoes, cutting them, cutting out bad spots, washing string beans, trimming, prepping corn took about 30 minutes. (It was tough breaking/cutting the corn!) After that itโs a breeze. Will make again.
★★★★★
Right, that’s definitely the longest part of the recipe. But once that’s done it’s easy!
Absolutely. I prepped early and just put everything in the frig, with the potatoes in cold water. I have to say my husband and I loved this dish, and heated up the next day I thought it was even better with the flavors mingling overnight. We just heated our individual plates in the microwave for two minutes – no damage done. I was even dipping my corn in the juice since only my husband was there to see. Using two tablespoons of Old Bay plus the Andouille turkey sausage ramped up the heat a bit the next day too.

This reminds me of my all time fave recipe of yours with potatoes, green beans and sausage with Cajun spice (I just leaves the mushrooms out). And this one will be a huge hit since Iโm from Maryland, where Old Bay was born and raised! I have everything because I was going to make the other recipe tomorrow – except we have frozen ears of corn from the grocery store. Could they work, and if so, would they be added earlier? If not a slight postponement until next week. Thanks, so looking forward to it.
I decided to postpone to get fresh corn, though am curious if frozen will work and may try it down the road.
BTW, your prep times do not include washing veggies, shucking corn, snapping ends off of string beans, scrubbing potatoes, etc., right? Because doing that food prep will take me a good 15+ minutes. Or 20-25 if Iโm honest. (Iโm not slow as mud but not a speed pro either.)
Thanks!
Yes add them in frozen, same cook time should work out well! And yay for Old Bay and Maryland!
I am new to the pressure cooking world. I have a 6.5 w pressure cooker. ( not a instant pot) I thought Iโll use this so I donโt have to buy one!! Iโm going to make this tonight. I canโt wait. I donโt have green beans but I thought peppers and corn would work! Iโll let you know how it went. I am a major fan of six sisters and say that you are connected to them so I am a major fan of yours now. I have a lot of your recipes saved and waiting for me to cook!!
How fun! Thanks for being here Lorraine. Hope you find lots of great dinner ideas!
This was great. Will make again.
So glad you liked it Rita! ๐
I made this recipe for dinner tonight and my family absolutely love it! There wasnโt a drop of food left in the instant pot after dinner!
★★★★★
That’s a good sign that it was a winner!
Are the green beans hard after being cooked?
★★★★★
Nope, they are soft.
Hi Karen,
This looks great. Instead of using all the seasonings, how do you think Old Bay would be? Do you think the flavor would conflict with the seasonings in the sausage?
Dave
I bet that would be great!
I used uncooked sausage since the recipe did not specify precooked. I also didn’t have cob corn so put in a can of corn (drained) and at the end, I still had a lot of water left. Thinking next time I’ll try just half a cup of liquid as the sausage likely released a lot
How did the uncooked sausage do?
No complaints, though I’d suspect fried sausage would give that extra what’s-it-called flavor to take it up a notch. Overall, everything still tasted great, but next time I might grill the sausage first and see how that goes. Or I might stay lazy and just toss it in uncooked ๐
★★★★★
Haha! I’m so lazy when it comes to that stuff!
This was excellent. The spices really stand out in this recipe, so kudos there. I would suggest everyone try to get the freshest, sweetest corn possible.
★★★★★
Love me some sweet corn!
Excellent!
-Used Old Bay seasoning as substitute for all spices–about 2 Tbsp total and it was perfect (add more if you like more spicey)
-The tiny red potatoes were super expensive so I used just red potatoes and cut into quarters/eighths. Worked fine.
And yes the potatoes were cooked with just 1 min of pressure cooking!
If I wasn’t gluten free, I would have made with toasted garlic bread. Yum!
Definitely a family ‘keeper.’
★★★★★
Yum! your ideas sound great!
that sound very good
It is!
5 Star! I added some frozen shrimp to the top of the pot and everything cooked perfectly! Thanks so much for. This simple to prepare and delicious recipe!
This is so good to know that the shrimp worked! I will make a note in my recipe. Thank you.
So what is the total time it takes to cook this?
Hi Renee, it will take the pot about 10-15 minutes to come to pressure, 1 minute of pressure cooking time, about 3 minutes to quick release the pressure. So around 15 minutes give or take a few minutes. Hope this helps! It’s a tasty recipe
Could you use Old Bay in place of the spice mixture?
Yes!
What if I added cabbage? Need more liquid? Same cooking time?
I bet you could just throw some in without any changes.
I made this last night. We had intended to have leftovers for lunch today, BUT this recipe created such a delicious meal that we ate all of it last night. This recipe deserves 10 stars!
★★★★★
How awesome to hear Mary! I’m glad you liked it.
Just to clarify, is the sausage already cooked?
I buy fresh links and am not sure if one minute would be enough to cook them. Thank you!
Yes, the sausage I use is pre-cooked. You may want to cook yours first and then use the 1 minute time.
So good! The spices are perfect and everything was cooked just right. The potatoes were some baby potatoes from our garden. The only thing I did differently was to fry the slices of sausage in a skillet before putting in the IP. That gives it a little extra flavor. Thank you for the delicious recipe.
★★★★★
Yum on frying the sausage! Good idea ๐
Save getting a skillet dirty. Use the saute setting and brown sausage with 2 tsp oil in the IP, remove when done, cancel saute mode and continue with the recipe. Yum.

I am using all fresh vegetables as called for in the recipe but I added a bag of frozen shrimp on top and because I am using my 8 qt pot I increased water to 2 cups. The recipe says to cook for one minute after reaching pressure. Should I cook longer because of the frozen shrimp?
I’d keep the same time. It will take longer to reach pressure.
Another winner! I was a little doubtful about the one minute, but the potatoes came out fine. So easy to make.
★★★★★
Yay!!! I know the one minute is throwing people off but the way it’s layered it works!
This was great, I used frozen veggies and increase the time to 8 min turned out perfectly. I also used fingerling potatoes. Will have this as one of my weekly go to instant pot meals.
★★★★★
Good to know! Thanks Laverne.
Same question regarding shrimp.
Excellent! I followed the recipe except used 4 ears of corn cut into thirds instead of 3 ears. (My Kroger only had fresh corn in pre-shucked packages of 4) Dinner turned out great!!! I used my 8 quart Instant Pot. The flavor was amazing. All the ingredients cooked perfectly. Vented immediately after the 1 minute cook time. It took my 8 qt. 23 minutes to come to pressure. I will be making again! Thank you.
★★★★★
Thanks for sharing your experience with the 8 quart! Very helpful
Thanks i am still learning my ip and didnt see how many minutes to cook this lol
★★★★★
My Instant Pot has 2 pressure settings…do I use High or Low?
I would always use high unless noted.
yes that’s right
high
Can this be done in a Crock-Pot and how many hours would I do it for?
Here’s the crockpot version: https://www.365daysofcrockpot.com/slow-cooker-smoked-sausage-country-boil/
How would you add shrimp to this?
I’d add it in on the top with the corn
Can i use shrimp instead of sausage
I believe you could. Not as flavorful though.
Would everything be the same in an 8 quart instant pot? What about if I added in frozen shrimp?
It will take longer to come to pressure so hopefully it won’t be overdone. You may need to increase the liquid amount so that it can reach pressure. You might want to heat up the water a bit so that it reaches pressure sooner.
How long would you cook this if you were using frozen beans and frozen corn?
I’m not sure. I would probably run some hot water over the frozen corn and beans first. Someone said they used frozen corn and it was still cold.
