Instant Pot Smoked Sausage Country Boil (video)
I’ve been seeing all sorts of recipes for shrimp boil in the Instant Pot but unfortunately Greg is allergic to shrimp. I decided to make my own version with smoked sausage and other fun added ingredients. I was so pleased with how it turned out. Very flavorful and I love how it’s a one pot meal.

I decided to use a 1 minute pressure cook time for this recipe. I did this because I knew that green beans and corn don’t need much time. I used baby red potatoes and sliced them in half. I layered the ingredients so that the potatoes would cook on the bottom (closest to the heating element) and get done and then the corn and beans would not be overdone. I was so happy when I opened the pot and all the food was cooked (not overcooked or undercooked!) perfectly.
My Smith’s had a sale on smoked sausage so I stocked up. I used a garlic chicken sausage that was made by Hillshire Farm and it was so tasty. You can also use kielbasa or andouille sausage (or whatever you want).
Greg, Reagan, Reagan’s friend and I ate this up in no time! Skyler was sad when he came home and it was all gone. It was a hit. I loved drizzling the remaining juices over the top of my potatoes. It had so much flavor. So don’t forget to do that!

What Pressure Cooker Did You Use?
To make Instant Pot Smoked Sausage Country Boil I used my 6 quart Instant Pot Duo 60 7 in 1*. I love this Instant Pot because it has the yogurt making function which I use almost weekly. It has two pressure settings (high and low), and there are also little slots in the handles so that you can rest the lid there instead of putting it down on your counter-top.


Instant Pot Smoked Sausage Country Boil
- Prep Time: 15 minutes
- Cook Time: 1 minute
- Total Time: 30 minutes
- Yield: 4–6 servings 1x
Description
A one pot meal with tender red potatoes, sweet corn, fresh green beans and smoked sausage. A perfect summer meal with tons of flavor.
Ingredients
- 1 Tbsp Old Bay Seasoning (OR 1 tsp seasoned salt, 1/2 tsp celery seed, 1 tsp smoked paprika, 1/2 tsp black pepper, 1 tsp garlic powder, 1/2 tsp onion powder, 1 tsp dried parsley, 1 bay leaf)
- 1 cup water or broth
- 1 1/2 pounds petite red potatoes, washed and halved
- 1 (13 oz) package smoked sausage of your choice, sliced into half inch rounds
- 1/2 pound fresh green beans, washed and trimmed
- 3 ears of corn, husked and cut into thirds
- 2 Tbsp butter, cut into 8 small pieces
- Optional: 8 oz shrimp
Instructions
- Pour water into the bottom of the Instant Pot.
- Add in the potatoes in an even layer. Sprinkle about half of the Old Bay/seasonings over the potatoes. Add in the sausage in an even layer. Add in the green beans in an even layer. Sprinkle the beans with half of the remaining seasonings. Add in the corn in an even layer. Sprinkle the corn with the rest of the seasonings. Add in the butter on top of the corn. If using shrimp add it on top.
- Cover and secure the lid. Make sure the valve is set to sealing. Set the manual/pressure cook button to 1 minute. The pot will take a while to come to pressure. Once the minute of pressure cook time is up move the valve to venting. Remove the lid.
- Toss the contents of the pot with tongs. Scoop onto serving dishes. Drizzle a tablespoon of the drippings onto each serving.

I’ve made this a dozen or more times and ADORE it. Being from Maryland, since Maryland is for Crabs — old tourist slogan when neighboring Virginia had Virginia is for Lovers — I almost double the Old Bay.
QUESTION: I’ve always used fresh corn, but have frozen corn cobettes that actually are tasty off season. Would I change anything adding frozen corn to the pot? I don’t want the green beans to turn to mush taking longer to come to pressure – they’re already quite soft. Should I just thaw the corn?

I bet they’ll be okay to add in frozen and keep the same cooking time. You may want to put them towards the bottom of the pot.
I have made this several times, and it is always a hit! I was nervous about the one minute time, but it works! My favorite shrimp to throw on top is shell on (but headless) large, frozen shrimp. they cook to perfection, and peeling the shell adds to the fun of the dish. Also, my meat of choice is a chicken andouille sausage that’s amazing.
I normally hate fresh green beans, but in this, they are amazing. Who would have thought! Thanks for the amazing recipe! I passed it onto my parents and they now make it almost weekly 😀

Uneducated cook question….if I add shrimp should it be raw/frozen, raw/fresh, cooked/frozen? Made this tonight and it was delish but wish I would have added shrimp and was scared about the how-to.
raw frozen or raw fresh…just add it in and it will be great on the 1 minute pressure cook time. Or you could stir cooked shrimp in after the pressure cooking time is over.

I never write reviews but had to for this. This meal was both amazingly easy and delicious! I followed the recipe as listed and added frozen shrimp, except based on other reviews I added more old bay seasoning, about 2 1/2 tablespoons. I did 1 minute but it probably would have also been cooked well enough at zero minutes cook time since it did take awhile to come to pressure. My husband likes just about everything I make, but said repeatedly while devouring this that it was scrumptious and it was in his top 5 dinners so looks like I’ll be making it frequently 😊.

For this particular recipe I didn’t use a rack.
I have made this several times this summer for guests and always get rave reviews from them. I do use at least 3 tablespoons of the Old Bay spices, though and the flavor is fabulous. I also used uncooked frozen shrimp with just the tail on. I like that there is less mess without having to peal the shrimp, and the tail on keeps the shrimp from shrinking up too much. This recipe is definitely a keeper!!

I have read through all the comments & replies but have not read what size shrimp. I have a bag of frozen cooked medium & a bag of frozen raw large shrimp.
I have tried the medium cooked shrimp from frozen and the shrimp were chewy and overcooked.
I am trying large raw defrosted shrimp today. I will let you know how it turns out.

It was very good. I used what was on hand – russets, peeled. Used more green beans and added a couple of carrots cut in large chunks. Topped it all with frozen shrimp which was perfectly cooked as well as the corn. I felt the potatoes, green beans and carrots were a bit overdone. I made this tonight with shrimp..the one minute made me leery so I did 2 minutes, lol. Just so any other doubters read this…one minute would have been long enough. I would make this recipe again but next time I will do only 1 minute cook time and I might squeeze some lemon juice over the top before serving…or even throw some lemon slice on top of the green bean layer.

No, same cooking time.
This recipe is restaurant worthy, we so love it. I use two tablespoons of Old Bay, being from Maryland, where it originated for crab spieces, and used smoked beef sausage this time, and no shrimp. In fact this recipe makes me want to buy an 8-quart IP to have more leftovers! Thank you so much for a swoonable meal.
As for most recipes on the internet, I think the amount of time to prep is underestimated unless trimming string beans, shucking corn and washing potatoes/corn/string beans is not included.
(The bag of string beans said they were washed and trimmed, but some weren’t trimmed, and a huge number of articles have been written by health officials and others that greens and vegetables still should be carefully washed. Some tests have shown that lettuce, for example, has as much bacteria in it due to the nooks and crannies, as unwashed lettuce from the store.)

Only change I made was using the better than bullion roasted garlic base instead of the chicken base you used (my wife loves garlic).. I made this last night and it was a hit though next time I need to add more Bay Seasoning. I didn’t measure, I just sprinkled and the potatoes didn’t get much flavor. Instead of the corn on the cob, I used frozen corn so it wouldn’t be as messy to eat. My only problem is that I’m doing WW and it was high in points. 🙁

Mandy, so sorry, I just saw this question today when Karen sent this recipe again on email! I used frozen raw shrimp & it turned out perfect. I think if you want to use precooked shrimp, then just add it at the end & put the lid back on for a few minutes for it to get warm. Otherwise that shrimp will get rubbery. And I always triple the Old Bay.
Will the green beans come out hard? I have used green beans once because they, they came out hard.
If they do I will mix a can of green beans is at the end.

Delicious! I used 2 tablespoons of Old Bay and added shrimp. (The sausage was precooked chicken Andouille from Whole Foods.) The shrimp was frozen and stuck together. I got half a dozen pieces unstuck and put them on the top, but didn’t want to thaw the rest and overcook them. The ones on the top were fine but just a tad overdone.
When the boil was done everything except the liquid was put on a platter plus a plate (lots of food!) and I put the now thawed shrimp into the liquid to sauté for under 2 minutes. Next time I’ll add a little more string beans; there was still a little room.
Washing potatoes, cutting them, cutting out bad spots, washing string beans, trimming, prepping corn took about 30 minutes. (It was tough breaking/cutting the corn!) After that it’s a breeze. Will make again.

Absolutely. I prepped early and just put everything in the frig, with the potatoes in cold water. I have to say my husband and I loved this dish, and heated up the next day I thought it was even better with the flavors mingling overnight. We just heated our individual plates in the microwave for two minutes – no damage done. I was even dipping my corn in the juice since only my husband was there to see. Using two tablespoons of Old Bay plus the Andouille turkey sausage ramped up the heat a bit the next day too.

I am new to the pressure cooking world. I have a 6.5 w pressure cooker. ( not a instant pot) I thought I’ll use this so I don’t have to buy one!! I’m going to make this tonight. I can’t wait. I used uncooked sausage since the recipe did not specify precooked. I also didn’t have cob corn so put in a can of corn (drained) and at the end, I still had a lot of water left. Thinking next time I’ll try just half a cup of liquid as the sausage likely released a lot
How did the uncooked sausage do?
No complaints, though I’d suspect fried sausage would give that extra what’s-it-called flavor to take it up a notch. Overall, everything still tasted great, but next time I might grill the sausage first and see how that goes. Or I might stay lazy and just toss it in uncooked 😉

-The tiny red potatoes were super expensive so I used just red potatoes and cut into quarters/eighths. Worked fine.
And yes the potatoes were cooked with just 1 min of pressure cooking!

Hi Renee, it will take the pot about 10-15 minutes to come to pressure, 1 minute of pressure cooking time, about 3 minutes to quick release the pressure. So around 15 minutes give or take a few minutes. Hope this helps! It’s a tasty recipe

Yes, the sausage I use is pre-cooked. You may want to cook yours first and then use the 1 minute time.

I am using all fresh vegetables as called for in the recipe but I added a bag of frozen shrimp on top and because I am using my 8 qt pot I increased water to 2 cups. The recipe says to cook for one minute after reaching pressure. Should I cook longer because of the frozen shrimp?
I’d keep the same time. It will take longer to reach pressure.

Excellent! I followed the recipe except used 4 ears of corn cut into thirds instead of 3 ears. (My Kroger only had fresh corn in pre-shucked packages of 4) Dinner turned out great!!! I used my 8 quart Instant Pot. The flavor was amazing. All the ingredients cooked perfectly. Vented immediately after the 1 minute cook time. It took my 8 qt. 23 minutes to come to pressure. It will take longer to come to pressure so hopefully it won’t be overdone. You may need to increase the liquid amount so that it can reach pressure. You might want to heat up the water a bit so that it reaches pressure sooner.
How long would you cook this if you were using frozen beans and frozen corn?
I’m not sure. I would probably run some hot water over the frozen corn and beans first. Someone said they used frozen corn and it was still cold.
