The best thing about making potato salad in the Instant Pot is that you can cook the potatoes and the hard boiled eggs at the same time in the same pot! I love my version of potato salad that has less mayo than a normal potato salad and a bit of olive oil instead.

Last March when COVID 19 began spreading we began isolating. This meant that I was suddenly cooking every day. Since Hubby ( age 76)& I (age 73) enjoy eating out this was quite a change. II had gotten a 6 quart IP a few months before and decided this was the time to learn how to cook a different way.
