Sugar Mountain Casserole–sliced potatoes and cubes of ham in a creamy parmesan sauce made fast with your Instant Pot.

Sugar Mountain Casserole

Today’s recipe is comfort food! It reminds me of a ham chowder without the soup-y part. Ham and potatoes in a creamy white sauce is going to be a family favorite. Greg told me I was a culinary genius as he was eating this dinner. Haha. If only he knew. I am just a lady with her Instant Pot and a few basics under my belt. Then this morning Skyler was eating the leftovers for breakfast. Oh man. That kid. Hope your family loves this dinner as much as we did!

Recipe adapted from Sugar Mountain Potatoes on Harps Foods.

Ingredients/Substitution Ideas

  • Red potatoes–or Yukon gold potatoes
  • Butter
  • Shallot–or onion
  • Garlic–I use my garlic press*
  • Flour–I used all purpose
  • Heavy cream
  • Milk
  • Kosher salt
  • Black pepper
  • Chives–I used freeze dried chives
  • Ham cubes–or smoked sausage
  • Parmesan cheese–or gruyere

Steps

Pour 1 ½ cups water into bottom of Instant Pot. Scatter potatoes into a steamer basket (try not to stack directly on top of each other). Place the steamer basket into the Instant Pot.

Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 2 minutes. When time is up move valve to venting and remove the lid.

Move steamer basket out of the pot and set aside. Discard the water and dry out the pot.

Turn Instant Pot to saute setting. When display says HOT add in the butter and let it melt. Add in the shallot and saute until softened, about 3 minutes. Stir in the garlic.

Sprinkle in the flour and whisk it in. Very slowly whisk in the cream and milk, stirring as you go. Stir in the salt, pepper, chives and ham. Once the sauce has thickened turn off Instant Pot.

Stir in the parmesan cheese. Fold in the potatoes. 

Salt and pepper to taste. Serve and enjoy!

Notes/Tips

  • Serve as a main dish or as a side dish. Serve alongside some dinner rolls and a spinach salad.
  • I used my 6 quart Instant Pot*. You can also make this in a 3 or 8 quart pot.
  • I used my silicone steamer basket* to cook the potatoes.
  • I love using these knives* for my everything when I cook!
  • Store leftovers in an airtight container* in the refrigerator for up to 5 days or in the freezer for up to 3 months.
  • Other recipes you can make with shallot are Winter Cabin Casserole and Chicken Georgia.
  • Try stirring in some cooked broccoli, sweet corn, green beans or asparagus into the final product for a one pot meal.
  • Instead of ham you can also use cubed smoked sausage. I like using beef smoked sausage best.

Description

Ingredients

Scale
  • 1 1/2 pounds red potatoes, sliced into quarter inch rounds
  • 2 Tbsp butter
  • 1/4 cup minced shallot
  • 1 Tbsp minced garlic
  • 1 Tbsp flour
  • 1/2 cup heavy cream
  • 1/2 cup milk
  • 1/2 tsp kosher salt
  • 1/2 tsp black pepper
  • 1 Tbsp chives
  • 8 ounces ham cubes
  • 1/2 cup shredded parmesan cheese

    can I make this in my crockpot since I don’t have a instant pot how come I see recipe for instant pot when nobody has instant pot

    Oh my gosh this is amazing!! The sauce gets so creamy and melts into the potatoes, which get softer the more they soak in. I subbed ham cubes for bacon and it really reminded me of a baked potato soup! So delicious and easy to make!
