Gina’s Casserole
Today’s recipe is a slow cooker recipe that is quite fun. It’s got pork and beans, sausage, meatballs and more. It seems like a random combination but was actually super yummy together. The boys and I loved it.
I love making slow cooker recipes on Sundays lately! It’s nice to cook in the mid-morning and then come home after church to linner (lunch + dinner) already completed.
This recipe worked best as a slow cooker recipe instead of a pressure cooker recipe so that’s why I made it as such. If you only have an Instant Pot you can still make this recipe by using the slow cooker function on your pot. Enjoy!

Ingredients/Substitution Ideas
- Pork and beans–I used Van Camp’s brand
- Tomato sauce
- Spicy brown mustard–or yellow, dijon
- Frozen sweet corn–or canned corn
- Cornmeal–this is used as a thickener. You can also use a cornstarch slurry of 1 Tbsp mixed with cold water until smooth.
- Andouille sausage–or beef smoked sausage, kielbasa
- Ground beef–I used 93/7
- Dry minced onion
- Panko bread crumbs–or plain bread crumbs, seasoned bread crumbs
- Egg
- Dried parsley
- Kosher salt
- Black pepper
- Worcestershire sauce
- BBQ sauce–I used sweet baby ray’s
- Cheddar cheese–or mozzarella
Steps
In a slow cooker (size 3 to 6 quarts) stir together the pork and beans, tomato sauce, mustard, corn cornmeal and sausage.
In a mixing bowl add the beef, onion, panko, egg, parsley, salt, pepper, Worcestershire sauce and BBQ sauce.
Use your hands to mix the ingredients together until evenly combined. Avoid over mixing the meat. Form into meatballs (I made 9 ping pong ball size meatballs). Place the meatballs on top of mixture in the slow cooker.
Cover slow cooker and cook on low for 3-4 hours, or until meatballs reach 160 degrees F in the middle.
Remove the lid and sprinkle the cheese on top of the meatballs. Replace the lid and let the cheese melt for a couple of minutes. Serve and enjoy!
Notes/Tips
- Serve with spinach salad, broccoli salad, mac and cheese, fruit salad or roasted vegetables.
- I used my 6 quart Ninja slow cooker. You can also make this in a smaller slow cooker (anything between 3-6 quarts will work fine.) Remember all slow cookers cook differently so your cooking time may be shorter or longer than what is listed in the recipe card.
- Store leftovers in an airtight container* in the refrigerator for up to 5 days or in the freezer for up to 3 months.

- 1 (8 oz) can tomato sauce
- 1 Tbsp spicy brown mustard
- 1 cup frozen sweet corn
- 2 Tbsp cornmeal

Notes
To cook this recipe in an Instant Pot: Add ingredients into pot as stated and then use the SLOW COOK button on “more” for 3-4 hours to cook the meal.

Would this recipe work using frozen meatballs instead, with maybe less cooking time since you’re just thawing and heating them, not cooking them?
