Instant Pot Cajun Sausage, Potatoes and Green Beans
I saw a recipe for foil packets that had sausage, potatoes and beans in it. I thought it sounded good but in all reality I would probably never make them since I don’t really camp or use my grill that often. I decided to transform the recipe into a one pot Instant Pot meal. It worked out perfectly and the flavors were so scrumptious.
I don’t like cajun seasoning. If you’re not a fan of cajun seasoning your could use kielbasa sausage instead of andouille and use a different seasoning like montreal chicken seasoning or lemon pepper seasoning.
Where did you find your sausage? There are all sorts of types of sausage. For example chicken sausage with apples or kielbasa sausage. They look like plump hot dogs and come in a 12 ounce package. Really you could use any kind of sausage that you want. I chose an andouille cajun style sausage. I found mine in the grocery store by the bacon and other cured meats.
Can I use canned green beans? No. Don’t do it! Fresh green beans taste so great in this meal so use fresh. Plus canned green beans would get really mushy.
I don’t like mushrooms. It’s fine. You don’t have to add mushrooms in. You can definitely leave them out.
Can I use another type of potato besides red potatoes? You can. Yellow potatoes will cook at the same rate as red potatoes. Russet potatoes will take a bit longer and I would peel the russet potatoes if I were you. Add 1-2 minutes to the cooking time for russet potatoes.

What Pressure Cooker Did You Use?
To make Instant Pot Cajun Sausage, Potatoes and Green Beans I used my 6 quart Instant Pot Duo 60 7 in 1*. I love this Instant Pot because it has the yogurt making function which I use almost weekly. It has two pressure settings (high and low), and there are also little slots in the handles so that you can rest the lid there instead of putting it down on your counter-top.

Ingredients
- 3/4 cup chicken broth
- 1 (12 oz) package cajun style andouille sausage (it’s a precooked smoked sausage)
- 1 1/2 pounds (24 oz) red potatoes
- 1 1/2 pounds (24 oz) green beans
- 1/2 pound (8 oz) white mushrooms
- 4 tsp cajun seasoning
- 3/4 tsp kosher salt
- 1/2 tsp black pepper
- 4 Tbsp butter
Instructions
- Pour chicken broth into Instant Pot.
- Cut sausage into thin quarter inch slices. Cut red potatoes into 1 inch cubes or chunks. Wash and trim the ends of the green beans. Quarter the mushrooms. Add the sausage, potatoes, green beans and mushrooms into the Instant Pot.
- Sprinkle the cajun seasoning, salt and pepper into the pot. Toss with a spoon. Cut the butter into 8 pieces and toss them into the pot.

This is so good and extremely easy to make! It is a little too spicy for my kids so I want to take it down a notch without compromising too much of the flavor. Would you suggest using the andouille sausage and eliminating some or all of the cajun seasoning? Or would you suggest using a kielbasa sausage and using the recommended seasoning? Thank you!
Karen says
I would change up the sausage and then start with half the seasoning and add more to taste!
Jackie S Stavish says
I have a question if double the recipe how much both should you use?
Karen says
I would keep the broth the same and double the rest of the ingredients
Nancy says
This recipe was so good! I’ve seen it before and never made time to buy the ingredients for it but it came in through my email as a fan favorite Friday recipe and I decided this was the weekend to try it.
I did substitute beef sausage kielbasa instead of the andouille sausage because I was a little worried about my eight year old thinking the sausage was going to be too spicy. But my husband, my 11-year-old and eight-year-old all ate their portions, and my husband even commented after a few bites that the recipe was delicious.
Thank you for another great recipe and a night of not eating out. You help save the budget with meals that people look forward to eating!
Karen says
Thank you so much Nancy!

Hello Karen,
I have not made this yet, but definitely will be. I can tell it is another of your 5*s recipes just by reading it!!!
Question: I read that you strongly do not recommend using canned green beans that would obviously turn to mush…but what are your thoughts on using frozen if fresh green beans are not available???
My apologies if someone has already asked that,. I read many of the comments, but wasn’t about to read all 400 plus to find out 😉😀
Karen says
Yes that would be great!
Veronica says
This is a bi-weekly go-to for me, depending on sales at Publix, Target or Winn-Dixie. I had some Andouille Brand chicken sausage in the freezer so grabbed the rest and set off to make this. I keep Penzey’s Cajun spice handy since I love spicy so I was quite liberal with it. Sausage has jalapeños in it so yeehaw! Made a batch and boy howdy it was good! Now I may add a bit more mushrooms or green beans and lately I add some Tabasco to kick it up a notch. Also have used Yukon Gold when I saw my reds were bad. All good and no mushy! I cut the potatoes to bite size because when it’s done I want to dive in NOW! Learned the hard way you’ll burn your mouth doing that…..
Now I have been known to add some dried shallots to it for a bit of a kick and I use Better than Bullion Vegetable rather than chicken broth. Gives a nice flavor to the veggies in it. My daughter and my friend make it too but my friend in a slow cooker. Both add a lot more broth to make it into a soup. My daughter does 2 cups of broth and a half cup of rice to stretch it for the week. I pretty much stick to the original recipe and use my IP to make it. Lasts the better part of a week if I freeze half of it. Great for work lunch too.
The possibilities are endless with this recipe and I love it!
Karen says
Thanks for all these awesome ideas Veronica!
Kevin says
I’m far removed from LA here in the oil fields of N.D. The version of andoullie sausage from MN is not quite close enough. Johnsonville should be sued over their version. I used smoke sausage and browned it almost black. This is delicious. I cut back on the Cajun seasoning so I can add it to taste after. I work nights so the IP is most times my go to appliance. I just need an air fryer lid now. Thanks Karen.
Karen says
Good tips Kevin! Thank you for the 5 stars! Stay warm 🙂
Christy Favazza says
Hi, you may have already answered this somewhere that I didn’t see (sorry if so!). Do you use Cajun seasoning that has salt in it or salt free? I have a couple brands but they all have salt already added and seems like adding salt, plus salty Cajun seasoning might be too much, but maybe I’m wrong. Which brand did you use?
Karen says
I use a brand that has salt. But if you’re worried I would leave out the salt and then add it to taste!
Sara says
For anyone who thought it was bland.. you totally didn’t use the right Cajun seasoning cause this was the opposite of bland. Was not much to look at, I probably should have done just one extra minute instead of 2 for my peeled russet potatoes as they were a touch mushy but this was overall surprisingly tasty! Have a feeling this one would also be tasty in the air frier if the potatoes were cut small enough or maybe cooked in stages.
Thanks for the super fast recipe!!
Karen says
So glad you liked it Sara! Thanks for the 5 stars 🙂
Wanda says
My husband and I love this recipe. I made two changes. I use Johnsonville Jalapeno and Cheddar sausages and also used Creol seasoning instead of Cajun (because I didn’t have any) and it was very flavorful. This is definitely one of my favorite Insta Pot recipes and so easy, too!
Karen says
Both those changes sound great!
Heather says
This was so easy to throw together and I had dinner on the table so quickly tonight! I added a couple cloves of garlic just because I had them on hand (and my family is garlic-crazy). My husband was impressed with the flavor and asked me to pull this one out the next time we have company!
Karen says
Nice! That is a great compliment from your husband!
Kim B. says
Ha! I truly DID mean it as a compliment. So grateful for all your recipes, but this one is outstanding.
Karen says
I know!! I know. You are the best Kim
Logan says
This was so easy and SO good! Our children don’t like things *too* spicy, so we used a smoked sausage that had bourbon bacon and black pepper in it instead of andouille. Instead of the Cajun seasoning, we used McCormick’s Montreal Steak Seasoning. It turned out perfect…everyone gobbled it up! I had to set aside some to take with me for lunch the next day before it was all gone!
Karen says
I love those ideas of changes!
Jonathan says
I made this with my parents a few weeks ago because we all like Cajun spice. The four main ingredients – chicken sausage, bagged green beans, white mushrooms, and red potatoes came from Target. We found that it was lacking some in flavor so added extra Cajun seasoning at the dinner table. The green beans were a little soft but all of the other ingredients had nice texture – especially the potatoes. I think we will try 2 minutes next time and up the spices. I ate all of the leftovers!
Karen says
Thanks for the 5 stars Jonathan!
Jennifer says
I don’t do spicy, but I took a chance. I used the Cajun seasoning and the spicy sausage. Wow. This was fantastic! My husband and teenagers loved it as well.
Karen, I hate cooking. I have no patience and zero creativity. My mom got me an IP 2 Christmases ago and then sent me your web site. I have forwarded your recipes to my other ip friends. I use my ip 6 or 7 times a week. 🤣You have NO idea how much you save me. I would say 98% of the stuff I make is a “Karen recipe”. Thank you so much. You are very appreciated in this house.
Karen says
This is seriously so nice. I am crying now.
Chris D. says
I made this last night and it was great. No leftovers. The only change I made was to quarter a white onion and throw it in.
I’m considering throwing in some chunks of cabbage the next time I make it. Shrimp would be good, too, but I’m not sure how I’d cook it. Maybe throw the shrimp in after the IP was done and let the shrimp cook by the heat of the prepared food.
Karen says
I love the idea of cabbage!
Sharon says
Put the shrimp in at the end. I do this making jambalaya.
Chris D. says
Thanks Sharon !
Elizabeth says
I made this tonight. Instead of using the Cajun seasoning, I used lemon and pepper seasoning. It was very good and everyone liked it. Will be making this again. The other night I made your Spanish Rice with Beef. Also excellent meal. Thank you.
Karen says
Good idea on the lemon pepper!
Gia says
I followed the recipe exactly and this was so bland!! Potatoes were mushy. Zero stars if possible. Be warned
Karen says
This has consistently gotten great reviews so I’m not sure what when wrong for you.
Linda says
I love this recipe and have made it 4 times. It’s far from bland with andouille sausage and cajun spice seasoning. I’ve used different types of potatoes and they all turned out great.
Alicia says
I plan on making this tonight, I have a 2 & 4 year old that can’t handle too much spice. Do you suggest using half the called for amount of Chili Powder or substituting it all together? Thank you!!
Alicia says
Sorry! I meant Cajun seasoning!
Karen says
I would use half the amount. It really depends on the brand you buy. I buy the Smith’s brand (Smidge and Spoon) and it is mild.
Kelly says
I was gifted an instant pot/air fryer for which I’ve been hesitant and skeptical about owning. I am still exploring whether or not I want to keep it, and am trying to find maybe 10 or so recipes that would help me justify owning this larger-than-life appliance in my small kitchen. This is one of those recipes! It checked a lot of boxes for me (quick, easy, healthy). I love that it’s truly a dump recipe, other than some chopping, dump the ingredients in. I can prep it and have someone at home hit a button while I’m running around and then dinner is served. It’s healthy and we’ve actually made something similar in the oven (quicker, easier, and cooked to perfection in the instant pot in my opinion). Our oven recipe didn’t have mushrooms, which I think are a nice addition. We used turkey kielbasa and it was delicious. So if you could point me in the direction of 10 more recipes like this…maybe I’ll hang on to this thing! Thank you so much!
Karen says
KEEP IT!!! You’ll love it! Here are my other dump and go recipes: https://www.365daysofcrockpot.com/recipes/?fwp_other=dump-and-go
Alex says
This is a nice recipe with a tiny bit of kick. I have it on right now for lunch with my wife today!
I personally have two tweaks that I do. I brown the sausage in the instant pot and then deglaze with the chicken stock and I sub in yukon golds for reds.
My family will be rolling through some more of your recipes soon, thank you!
Karen says
Sounds like a terrific version!! Thanks for being here Alex!
Debbie Rogowski says
I made this last night and it was delicious! I did get a burn notice, and I panicked, I shook the pot for second. I guess since it’s only a 1 min cook time it stopped and then went into count down. I waited 3 minutes and did a quick release. After opening the pot I just stirred and served. (I used frozen green beans and they were cooked as I would have expected)
Karen says
Oh good!
Lisa says
A.M.A.Z.I.N.G. That’s how I would describe this recipe! I made it exactly the way it’s written and it is definitely going to be a “regular” around here! So simple yet beyond delicious. I can’t wait for leftovers tomorrow night 😉‼️
Karen says
WOOHOO!!
Mary, Niceville Fl says
A favorite of our family. The first time I made it I used Tony Cachere Spicy Seasoning. Whoa!! Too spicy but we still loved it. Subsequent times I followed the recipe with Regular Tony and it was delicious Just enough spiciness. Love love it!!
Karen says
So glad to hear you loved it!
Rachelle says
Just bought one going to look up on u tube but I’m wanting to cook green beans potatoes and kabalsa but wanting to cook like in crockpot for a couple hrs I will be home all day so really no hurry want to make sure I have right setting
Lori says
My family loves this recipe, and it is on a regular rotation. (Kids are 12 and 9)
Only change we make is removing the mushrooms because of an allergy, and I add garlic.
GREAT RECIPE!!!!
Karen says
Garlic is a good idea!
Golfgmama says
Excellent pressure cooker meal! Very easy, fast and tons of flavor. I decreased the amount of Cajun seasoning but otherwise followed the recipe as written.
Karen says
Thanks so much for the 5 stars!
Cindy B. says
I made this tonight and it was good. I only used half the amount of Cajun Creole seasoning and it was plenty and next time I’ll leave the kosher salt out. It was a little salty for us. We used chicken sausage and it was spicy enough. I’ll be making this again.
Joyandrandy says
Tryed this recipe and it was a major major hit tyvm will definetly make this again
Karen says
So glad to hear it!
Heather says
Love this recipe! Have made it a few times as is and both my husband and I just love it!
Making it this week, but the green beans weren’t available so I got broccoli. Any tips on cooking with broccoli?
Karen says
Broccoli will get really soft. If you don’t like it that way I would steam the broccoli separately and stir in after it has pressure cooked.
Kim B. says
2 funny! This is cooking in my IP right now AS WE SPEAK, while I’m catching up on emails. I cook this at least twice a month. The only thing I change on it is once in awhile I’ll do 1 tsp of cajun seasoning & 3 tsp of Montreal Steak seasoning instead of 4 tsp of cajun seasoning. We absolutely LOVE this recipe!!! Can’t get enough of this funky stuff!!
Karen says
I really like montreal steak seasoning! I will try that next time!
Kim B. says
A “side” you may want to try. We love it. Just snap some fresh green beans in half & stir-fry/saute in avocado oil with only salt, pepper & Montreal Steak seasoning, til the beans are cooked like you like them. (Won’t be any leftovers!) Yum!
Judy Hamernik says
This is definitely one of our favorites! When I have them in the house, I use “little” potatoes – no peeling and no need to cut up unless there are some extra large ones.
Karen says
I love those little potatoes! So perfect for a dish like this!
Terri Willis says
This recipe has become a regular meal for us, my hubby loves it!! I love how easy it is to make and clean up is a breeze. I’ve used the Andouille sausage as well as one called 4 Pepper Sausage from Eckrich, both work great. My hubby loves spicy food so I use Slap Your Mama hot cajun seasoning and it is amazing!!
Karen says
I need to get some of that Slap your Mama seasoning! Sounds amazing!
Bill Mcdermott says
Can I use Just a Crock Pot? If so how long would you Cook?
Karen says
here’s the slow cooker version: https://www.365daysofcrockpot.com/slow-cooker-cajun-sausage-potatoes-and-green-beans/
Ellyn says
What do you think about using a bone on pork chop?
What would be the cooking time?
Karen says
I think it would be good. I would use the same cooking time. Pork cooks quickly.
Gail says
I have made this dish in the crockpot before, but never in the IP. My question is can I double the sausage (my boys love sausage) if so do I have to slice or can I put it in the IP in 2 ” pieces. Love your recipes. Thanking you in advance.
Karen says
Yes you can double the sausage. and you can do 2 inch pieces. No problem!
Gail says
This was wonderful. I doubled sausage and cut into 2 inch pieces. This is going to be a keeper in our house. Love your recipes and your cookbook.
Karen says
Thank you Gail ☺️
John M. says
Just made this today and it was excellent! The only substitution I used was baby carrots for the mushrooms per a previous suggestion. Using an Instant Pot Mini (3 qt.) I halved the ingredients and pressure cooked for two minutes with a quick release. Perfection! Thanks so much, Karen.
P.S. When you recently posted the index page for your recipe book, I was sold. Ordering soon!
Karen says
Thanks John!!
David Puckett says
Can I use canned green beans but add them at the end?
Karen says
Yes for sure!
Heidi Maus says
This is a great recipe. I sprinkled in louisiana cajun seasoning and it was plenty spicy. I didn’t use 4 tsp. I’m sure it depends what brand of seasoning you use. Added is small onion cut in 1 in pieces
Really good.
Karen says
Glad you liked it Heidi!
Christina Raby says
So I absolutely hate Cajun seasoning but I use the McCormick brand in this. I cut it down to 2 tsp instead of 4 and it is honestly one of our favorite meals. It is made at least once a month in our house and with the 2 tsp of McCormick it is not spicy at all, and is a way different flavor than other Cajun seasonings.
Karen says
I will have to try McCormick’s! Thanks for the info!
Brittany Vaughn says
This is one of the FAVORITES in our house. Even the kids love it.
We aren’t mushroom fans though, so we take out the mushrooms and add in baby carrots.
It is absolutely perfect.
I will be making this as a side at our Thanksgiving Dinner tomorrow.
Thanks for sharing!
Karen says
I like the idea of carrots!
Cathy Williams says
Perfect day to have this for supper….rain with attitude (either sleet or hail), cold and very windy. We added a package for frozen half ears of corn to the pot and didn’t change anything else. Came out great!
Karen says
Good idea on the corn!
Courtney says
Could you use stew meat instead? Would it have to cook too long for the other ingredients?
Margaret Gardner says
You could just brown the stew meat first then it would be fine. But sausage has so much flavor, it would ve quite a different recipe with just plain beef.
george says
Karen: one of the photos shows this could possibly be a meal perp meal. If so, how many days would it hold up in the fridge. On Sunday, I usually make my lunches for Mon to Fri. Technically, while part of t his meal I should not have I will use it as one of those splurges.
Karen says
I would think if you made this on Sunday it would last in the fridge for up to a week.
Sonya says
Can I use frozen green beans?
Karen says
Yep!
Jaymie says
I do this as a meal prep item and it keeps about a week. Tips: I have found using small red potatoes that don’t need cut stay fresh longer and use the freshest green beans possible. Some sausages don’t keep fresh very well after they’ve been cut, so I prefer to used beef smoked sausage in meal prep kits.
So awesome to have such an easy dump dinner that tastes great and that my whole family will eat.
george says
Jaymie: Thanks for the tip on the beef smoked sausage/ I am fighting a lot of Agent Orange issues, one being diabetes. Beef will provide protein plus be healthier than sausage. I will use also carrots and I love red potatoes. I usually get the small ones.
Terry Taylor says
my grandmother (born 1899) made a version of this using smoked sausage which has since evolved to little cocktail smokie sausages. There’s enough fat in the sausage to really flavor the potatoes and gr beans nicely. It’s a mainstay in the winter with little red potatoes and either fresh, canned OR frozen green beans depending what’s on hand. We just add more potatoes and green beans depending on how many people are there! We call it a Nanie dinner. Been doing it in a crockpot for sometime (30 yrs?) but instant pot is even better yet! thank you!
Karen says
I love hearing this! 1899! Wow! How cool!
Peggy Robberts says
I’m curious why the instructions for this recipe are to cook for 3 minutes, while the smoked sausage version of the same recipe say to cook for just 1 minute.

I’m curious about this also hope we get an answer
Diane Freeman says
Love it! Only change I made was to reduce the amount of Tony Chacheres creole seasoning that it called for by half…and then if a particular family member likes more spicy they can add it themselves when it’s on their plate without it being too overpowering for everyone else. I also cook it a few minutes longer (like 6 minutes) as we like our beans and potatoes well done.
Karen says
Good plan! I like it.
Patricia Morris says
I made this as written, however I forgot the difference between Tony Chachere’s & Tony Chachere’s BOLD and used the full amount of Bold…
It was edible but very salty and a little too IN YOUR FACE.. 🌶️😧
I now use half the amount and we like it so much that it’s on the regular meal rotation.
Karen says
Oh shoot! I’m glad you were brave enough to try again with a lesser amount. Thanks for sharing your experience.
Debbie Cuno says
Fast, easy, and delicious meal! I normally never make a recipe as written (cooks always think they can add a little something else to improve it or sub things when we don’t have what is called for ;~) HOWEVER, I made this as written and it was perfect (maybe added a little more Cajun seasoning, as we like spice). Fresh homegrown garden potatoes and green beans made this a perfect meal when it is too hot to cook or grill (or you are just too busy). Thanks for the recipe. It has been one of our favorites!
Karen says
The sound of fresh homegrown garden potatoes sound so good to me!!
Patty says
I’m using turkey kielbasa. What spice do you recommend.
Karen says
I would use the cajun spice as indicated in the recipe. It’s so tasty!
Sherry Miller says
My husband said last night that this was the best meal I made in a long time!
Karen says
I love that feeling! So glad he liked it!
Sandi Clark says
What a great recipe for something quick and easy! The first time making this recipe I used Beef Polish Kilbasa because it’s what I had on hand. Last night I tried it with a pound of lean ground beef and that was yummy also! I add onion, a scant tablespoon of Better Than Bouillon and reduced the Cajun seasoning to 3t. (I use Tony Chachere’s spice n’ herbs Creole Seasoning which is great for so many things.) We loved the flavored “juice” so much I think next time I’ll increase the broth a bit. Also want to try it with other seasonings. Thanks, Karen, for such a versatile, quick and easy recipe!
Karen says
You are very welcome! Your versions sound amazing! 😊
Sandra says
If i were to use regular sausage (not precooked) do the time change?
Karen says
I would brown the sausage first, deglaze the pot and then cook according to directions.
Karin says
Hi Karen. I made this tonight for dinner and the family loved it. I made it in an 8 qt IP so I put 2 cups of chicken stock in it and doubled the meat and mushrooms. However, I agree with a couple of folks above. If you add Cajun seasoning, ( I used Tony Cacchiere’s) then I would omit the salt. My family loved it but thought it was a little salty. Could just be the Cajun seasoning had salt in it. Thanks for the recipe!
Karen says
Glad you liked it Karin!
Cat says
One of my favorite instapot recipes! Made with a side of cornbread. Delicious!
Karen says
Cornbread is my fave! Good idea!
Christina says
If I want to double this do I double all ingredients? And would the time be the same or longer? Oh and my son and husband say this is their new favorite meal! Absolutely delicious! Thank you!
Karen says
Yes double all ingredients except the liquid. And the same cooking time should be great.
Colleen says
Great recipe! I use Trader Joes’s 21 Seasoning Salute for the Cajun seasoning, omitted the mushrooms, used 1/2 pound of green beans instead of 1 1/2 pounds, and used kielbasa instead of andouille sausage. Even my picky 7 year old gobbles it up! I’ve also done it with lemon pepper seasoning.
Karen says
Love those ideas!
Kim B. says
oops! forgot to do the stars!
Karen says
thank you!
Kim B. says
Amazing. Just amazing. Followed recipe “to the T” and it was perfect. I think my husband had thirds, not sure, wasn’t watching him close enough, but he did yell “dibs” on the left-overs! Definitely a keeper. Super easy prep & hardly any cook time, yet SOOOO delicious. Mercy! Thank you SO much.
Karen says
So glad you both loved it!
John K says
I made this with sweet potato instead and it was terrific.
Karen says
Love that idea!
Jennifer says
That’s a fantastic idea, I’m also thinking about adding some of those little corn cobs to it! This is one of our all time favorite recipes!
mizegg says
I grew up with the recipe using Kielbasa and just made it in my InstaPot…great childhood memories as we licked our bowls clean!
Karen says
😊
Janie says
This is one of ;my favorite meals. So easy and so good.
Karen says
Me too! Thanks so much!
Jennifer says
One of our all time favorites as well!
Karen says
This is one of our favorite meals.
I have to watch my salt so only use 1 tsp of season-all. Eliminate the kosher salt. There is plenty of salt in the sausage and broth. Just perfect.
Your website is my go to!
Karen says
Thank you Karen! I will have to try the season-all. Do you find it next to the other seasonings?
Cherie Burton says
Hi Karen,
I use a stove top pressure cooker. I’ve had it for years and only cooked one recipe in it. But now with the popularity of the Instant Pot, there are so many more recipes available. I tried this last night. I used cajun smoked sausage since I live in Louisiana. I’m not a big fan of andouille. Left out the mushrooms. I browned the sausage first in the pot and then scraped up the bits with the chicken broth. I let the pressure drop naturally for 2 minutes then did the quick release just to make sure potatoes were cooked. I couldn’t have been any better. Hubby and I both enjoyed. I have subscribed to your blog so keep the recipes coming.
Karen says
Awesome Cherie! Glad you are here 😊
Anna says
My contents are currently cooking. I just wanted to note that the amount of sodium (sausage, creole seasoning, chicken broth, and plus 3/4 tsp salt) adds up to a number that would make any cardiologist faint. I cut out the seasoning and salt and used a low sodium broth.
Dennis says
Hi Anna. I am making it today and I am using low sodium Chicken broth as well as salt free Cajun creole seasoning made by Spice Hunter and omitting the regular salt. I think it’ll still have plenty of flavor and for my recipe, it brought it down to 754 mg sodium but I also made it 4 servings instead of 6
Sabrina says
Thank you for this recipe! It is really good and so easy to make. I especially like that everything in it is so fresh and that you can get your vegetables, carbs, and meat in just one pot! I cooked it about five minutes because I like my green beans a bit softer. It also came out a bit too spicy for me so I’ll cut back on the cajun seasoning and pepper the next time I make it. Other than that, I loved it! It is going in my regular rotation.
I really appreciate your 5 or less ingredient recipes!!
Karen says
I love 5 ingredients or less too! They makes me so happy!
Juliee says
This was fantastic! It was very summery and a refreshing change from the dinner rut we’ve been in. I just looooooove my instant pot! Thank you for making it so delicious to use!
Karen says
You’re welcome! Glad you liked it!
Aubrey says
I don’t care for Cajun seasoning so I used lemon pepper seasoning and left out the mushrooms. Everyone in my house asked for seconds! It was delicious!
Karen says
I love lemon pepper! that sounds amazing!
Mel says
Can I use frozen green beans for this?
Karen says
Yes you can!
Patsy says
Can this be done in a slow cooker? Looks delicious!
Karen says
Yes it can! https://www.365daysofcrockpot.com/slow-cooker-cajun-sausage-potatoes-and-green-beans/
Patsy says
Can this be done in a slow cooker?
Karen says
yes! https://www.365daysofcrockpot.com/slow-cooker-cajun-sausage-potatoes-and-green-beans/
Courtney says
If I wanted to cut this in half would cook time and liquid be the same? Thank you!
Karen says
Yes to both!
Linda says
could you use raw, uncooked sausage such as Italian or Honey Garlic for this recipe and how long would you cook in the Instant Pot with the Potatoes??
Karen says
Yes you can. I would brown the sausage first using the saute setting then follow the recipe as written. Use the liquid to scrape the bottom of the pot of any browned bits from the sausage.
Haylee says
has anyone ever prepped this for a freezer meal? did it work ok?
Mari says
I dont live frozen potatoes in “homemade” meals. It’s a texture thing for me.
JJ says
Did you try freezing it?
Adam says
Fantastic! Made it exactly as the recipe said to and we loved it! It heated up really well for lunches the next day too… may have even been better. I look forward to trying more of your recipes.
Karen says
So glad you liked it and lucky that you had leftovers…we never do! lol
Laura says
This was so yummy! Approved by my husband and 13 yr old son. Easy and quick to fix-took linger to cut everything yo than it did to cook 😊. Served it with corn bread and it was Yum-o! Adding to my go to recipes for sure!
Karen says
Yep it is the best isn’t it?!
Mary Heidt says
I made this recipe a couple of days ago. I used polish sausage and lemon, oregano, and a few pinches of red pepper. I have a family member who does not like very much spice. With those changes this was such a good dish. I will rate it on the way I made it. It was a wonderful adaptable recipe. It will be one of my go to recipes. I used the green beans, mushrooms, and I added a little onion. My family really liked it. I use homemade chicken stock. It was delightful.
Karen says
Sounds like a great version Mary!
Julie says
Hi. If I want to double the recipe, do I double the broth and butter?
Karen says
You don’t need to double the broth. And you can double butter or keep it the same. It’s up to you!
Li says
Hello, I’ve been slowly making my way through your IP recipes and I’m quite fond of this one in particular. I was thinking of replacing the mushrooms with ground turkey or beef in my 6 qt. Should I keep the same cook time?
Karen says
Hi Li, I would brown the ground meat before you pressure cook with the rest of the ingredients. You can use the saute setting to do that.
Richard Criswell says
When you mentioned foil packets, it rang a bell One of my favorites is small red potatoes halved, sliced onions, sliced sausage and cabbage, dotted with butter S and P(425-35 min) wrapped in foil. I have been thinking how to adapt this to my instant pot Should I try this with pot in pot method rather than steamer basket(butter problem?) foil wrapped Short cooking time? 2-3 min in IP?I enjoy your recipes and videos and use them a lot
Karen says
Richard, I really like this idea! I like it so much that I want to try it this week. I have a cabbage that needs to be used up! So this is how I’m going to try it. 1 cup broth, sliced sausage and onions in bottom. Then potatoes and chunks of cabbage on top of that. Butter on top. Then I’ll try a 2 minute cooking time. It will have liquid in it a bit (unlike your foil version) but I bet it would be good. did you put any seasonings in yours?
Richard Criswell says
Karen: I followed your recommendation and fixed this recipe today and it turned out very well.I used andouille sausage, qtr red potatoes, sliced onion, cabbage, Cajun seasoning, alittle butter on top and one cup of broth. The amount of broth was plenty as the cabbage furnished a lot of liquid. The IP time of 2 min was plenty. I was worried about the time with the potatoes but it was spot on. So goodbye to the foil packets.
but the only regret I had was that I didn’t put in any green beans
Karen says
I made my own version of your cabbage dish and will post it soon! Yours sounds great and yes about the green beans!
Janelle says
Do I have to use baby red potatoes?
Karen says
Nope you just use whatever you like! Make sure they are uniform pieces and cut into chunks.
Jennifer says
My husband and I just demolished this! It was meant to be dinner and lunch, but I was all gone and we wanted to lick our plates! I added a minute because I was worried the green beans wouldn’t be cooked enough for our liking, but I shouldn’t have because they were fine and the potatoes got a little mushy. Despite my fiddling it was delicious! It’s going in the weekly rotation! Thank you. 😍😍😍
Karen says
Haha! That is great that you liked it so much. Yep it’s crazy how fast things cook in the IP!
Penny says
Amazing!!! My uber picky husband had two helpings! Thank you for making dinner stress free for me 😊
Karen says
You’re so welcome Penny! Thanks for being here 🙂
Emily says
Made this tonight, exactly as specified, with turkey andouille sausage… And sure enough, just like everyone said, it was absolutely delicious!!! Thanks for an easy, healthy, tasty, quick winner!
Karen says
Nice! Glad you all liked it Emily!
Dodie Van Vleet says
Thank you for the recipe – it was a HUGE hit, especially with a picky eater hubby. I did make only a few slight changes: I sauteed the sausage prior to adding all ingredients. I added a red onion that I quartered. I didn’t have cajun seasoning so I used creole seasoning – I guess it is the same 🙂 I have a 6 qt CPE and my pot was full to the brim – took 15 minutes to come to pressure and used the “steam setting” for 3 minutes. Everything came out perfect !!!! Easy and delish – will be added to my rotation of meals.
Karen says
Yum! I’m glad you liked it Dodie!
Anna sawyer says
Amazing recipe. Came out great. I will def try sautéing the sausage first adding more mushrooms!! A lowering potato time. Beyond perfect easy an fast!!
Karen says
So glad you liked it Anna!
Tracy says
This was a surprising success. We don’t love Cajun, so we used regular sausage and Montreal Chicken seasoning. We also left out the mushrooms. The taste was delicious. The potatoes were a little too soft for me, so I might even try 2 minutes on the IP next time. But all six of us loved this. “Mom, you should make this again!” It came together fast and easy, and it made a minimal mess in the kitchen. This is going into our regular rotation. Thanks!
Karen says
You’re welcome Tracy! I’m glad you like and your kids liked it!
Kaitlyn says
This recipe is delicious! One of our go-to meals. Just curious, has anyone made it without the butter? Is the butter a staple for the recipe or could it be left out/replaced?
Karen says
It can be left out but it sure is good!
Nycole says
Can you make this without the chicken broth? If so do i put water?
Karen says
Yes you can use water instead of broth if you want!
Tracey says
OMG! What a fast and delicious recipe! I did not believe it would only take 3 minutes to cook, but that is all that was needed. This is a keeper, especially on busy nights. Thanks for sharing!
Karen says
You’re welcome Tracey!
Kim says
Made this tonight — It was fantastic! Thanks so much!!
Karen says
You’re welcome Kim!
Melissa Mandujano says
Do you think making 3x the amount would fit in my 8QT pot?? I’m making this for Thanksgiving and need to make a lot of it! Thanks!
Karen says
I don’t think it would fit. I think you could probably 2X it though.
Sue says
This is a go to recipe for us. Quick and easy! Best in summer when fresh green beans are abundant. Tried it with chicken sausages and others. No matter, they’re all fantastic! Love this dish!
Karen says
We do too Sue!
Margaret says
This is supper easy to make and delicious. I use no salt broth, skip the Kosher salt, and use 1 tsp less of the Cajun seasoning than called for. I have used both frozen and fresh green beans and have had no issues with either type being mushy. I’ve used turkey sausage, chicken and garlic sausage, green onion chicken sausage, etc., all with great results Three minutes is the perfect time as well. Tonight, I will add the a couple of frozen nibblet ears of corn for kicks.
Karen says
All good ideas! Thanks Margaret!
Beth says
Hi – I’d love to try this, but happen to have frozen chicken sausages – made by a local butcher and sold frozen. Any ideas of how to best incorporate them? They’re quite large. Of course I’d thaw them in the frig. Maybe just sauté them in the IP first, scrape the bottom to make sure there are no stuck bits and continue? Also, how do you think asparagus might work instead of green beans for a second go-round for something a bit different? Thanks much.
Beth says
I ended up getting some precooked sausage (Cajun andouille organic chicken) to be on the safe side for this first go-round, since I’m an IP newbie and have made a dozen meals since getting my first IP – a Duo Evo Plus – three weeks ago. Absolutely delicious. The only change was two+ teaspoons of Cajun seasoning instead of four. I would have liked the green beans a bit less cooked, though they weren’t mushy, but I think two minutes wouldn’t be enough, so we’ll keep it as is. Thank you so much!
Karen says
I think that your idea about the sausages would work great. The asparagus would get way too done and be mushy. You could always add it in after pressure cooking though.
Beth says
Thank you. Your dish is in the top two dinners since purchasing the IP about a month ago, having made about 15 dinners. Definitely on the “very frequent rotation” list!
The chicken sausage (that I have not yet used) that the butcher made turned out to be sage flavored. Do you think the Cajun seasoning would work, or better something else? I’m not a huge sage fan so don’t want to enhance it, but also don’t want to fight with it! Or maybe find a different recipe with turkey?
Karen says
Yum you could do this recipe instead: https://www.365daysofcrockpot.com/instant-pot-smoked-sausage-green-beans-and-potatoes/
Beth says
Thank you! Terrific to have a same-but-different version! I’ll make one or the other this week again.
Desiree says
This is absolutely delicious!!! My favorite meal to cook in the IP by far 💜
Karen says
Thanks Desiree! I’m glad you like it!
Christina says
I would like to add ground beef to mine, do you think that would ruin it? My bf just likes a lot of meat in his food. And if so, would I just pre coolly the meat then add in with everything else?
Christina says
Cook*
Karen says
I would brown the beef with the saute button before you add in the rest of the stuff. Then add everything in and follow the recipe! Good luck!
Arunee says
I would like to try to make this recipe, if I double my sausages amount. Do I have to also double my liquid amount?
Karen says
You don’t need to double the liquid.
Kris says
Same question. If I double my sausage do I need to double anything else? Seasoning? Time?
Karen says
Nope you can just double the sausage 🙂
Andrea in Texas says
We make our own sausage, so it’s uncooked. Should I cook ahead of time, or if I cut into small slices, will it cook completely with the potatoes and green beans?
Karen says
I may just brown for a couple minutes and then pressure cook.
Linda says
So Wednesday made this recipe (12 servings) for our Pool Night. there are 8 people that shoot so thought make a little more – only 5 people actually ate that night BUT there was NOTHING left. I got so many compliments on this and asked for the recipe by 3 of them. I will definitely make this again with a slight variation for myself and the hubby – I will add a couple of corn cobbettes and some shrimp (added when done) otherwise AWESOME
Karen says
How fun! Thanks for sharing.
Toni says
Do you think you could use frozen green beans? My grocery store was out of fresh ones (well they had some but they were yucky)
Karen says
I think you could
Kevin says
I would like to try this, however I do not have an Insta pot. Can a slow cooker be used?
Karen says
yes here is the recipe: https://www.365daysofcrockpot.com/slow-cooker-cajun-sausage-potatoes-and-green-beans/
RichV says
This is now one of our favorite meals of all time. Substituted Polish pre-cooked sausage and paprika instead of cayenne to suit wife’s preferences. Very delicious and not soft vegetables. I wonder whether different brands and sizes of instant pressure cookers produce differing results of the same recipe?
Ksenia says
Does 3 min work? It seems that potatoes will not be ready.
Karen says
Yes it works!
Karen says
Yes I imagine that is the case. Different PSIs.
Jess says
Could you use little potato company potato’s? Would the timing be the same?
Karen says
I think that would work great with the little potatoes, same time.
Julie says
I just bought my Ninja Foodie, and chose this recipe to be my first. 🙂
I really had a hard time getting my head around the fact that within 3 minutes it would all be cooked!
I just could not see this as possible, but I followed the directions and many comments in this regard.
I too added onions and stir fried it with the sliced sausage and garlic for a few minutes first. I don’t have Cajun spice so I used 1 tsp of chipotle instead.
After it was done, I made a cornstarch slurry and added it to the chicken broth and stirred well. The dish was so hot, that I didn’t need to put it on saute to thicken the sauce.
It turned out absolutely delicious.
A real comfort food with lots of flavor and tender vegetables.
I will make this again and again!
Thank you, very much!
Karen says
Yay! good job!
Sherri says
Made this recipe once al ready, making again tonight! Very easy and very good, hubby said that they could possibly be the best green beans he’s ever had!
Karen says
yessssssss
Jenna says
Made this tonight and it was quick, easy and delicious! Used kielbasa instead of andouille and no Cajun seasoning so not spicy but still sooo good.
Karen says
Good! I’m glad you figured out how to make it work for you and your family!
Lynn Hughes says
This was yummy! Husband had 3 helpings, I had two. I took some advice from other reviews and cut the salt and seasonings a bit. It was perfect and so easy!
Karen says
So glad you both enjoyed it!
Katie says
I made this for my husband and I for dinner. I was hesitant with the short cooking time but it was perfect. The potatoes and green beans were soft and since we used a precooked sausage ring that’s all the time the meat needed. It was a little too spicy but we also used a Cajun sausage ring. I’d maybe cut back on the spice next time or go with a smoked sausage.
Karen says
Good plan!
Lee says
I read the comments on cooked and uncooked sausage. Can you clarify that in the recipe. I just started this in my pot figured if it had time to cook the potatoes, it would cook the sausage. But now I am wondering.
Joyce says
There was 2-3 ads inside the black recipe rectangle. Is there anyway to stop that? It’s irritating!
There are always ads along the right side of the recipe outside the rectangle, but that ‘s OK, just not inside the recipe space.
Hope you can get it fixed. Joyce Pruhs
Karen says
Hi Joyce next time will you email me a screen shot so I can share with my ad company? Thank you.
Lynn says
I didn’t feel like cooking or going to the store, I wanted something easy, with ingredients that I had on hand. I goggled Instant Pot Kielbasa and Potatoes, and up popped this recipe. I always try to follow a recipe exactly as written the first time, unless I don’t have all of the ingredients. Needless to say, I didn’t have andouille sausage (my favorite), mushrooms, fresh green beans or chicken broth. I did have kielbasa (not a fan), frozen green beans and Better Than Bouillon (tasty but VERY salty.) I also added a sweet onion, a large garlic clove and omitted the salt. Other than those substitutions, I followed the recipe to a tee. The sausage and potatoes were cooked perfectly and the amount of Cajun seasoning was just right! The frozen beans were overcooked, but that’s how I like them; “cooked to death green beans”. This meal was so easy, fast and delicious; I ate the kielbasa and loved it! My son loved it too! I can’t wait to make it again with the andouille sausage, fresh green beans and mushrooms! Thank you, Karen, for this great recipe!!
Karen says
Glad your version worked! It sounds great!
Alisa says
Do you think frozen green beans would work?
Karen says
yes probably
Nori says
Too mushy. I like my beans crisp. I should have known.
Stevie says
I never reply to recipes but this one is so good I have to.
What I did was double the sausage (2 packs of chicken andouille sausage from Trader Joe’s) and brown it first.
I cut the cajun seasoning in half since the sausage already has so much spice.
Everything else I followed to the T.
After everything was in the IP I place a couple halved ears of corn on top and cooked it all up.
Everything came out perfect.
Karen says
Thanks for your comment!! Glad it came out perfect for you 🙂
Maddie says
Hi! I’m dying to make this recipe but I don’t have a instant pot and I wanted to make it without using a crock pot as well. Is there a good recipe for just a stove top? Thank you!
Karen says
You could experiment! I bet you could also roast everything.
Donna M. says
I made this and it is a great recipe but my husband thought it needed a sauce or something. Would anyone have any suggestions for some kind of a sauce? Even something I could make on the stove while the food was in the Instant pot. Thanks.
Karen says
You could use the drippings in the pot and thicken with cornstarch for a gravy type of sauce.
Donna M. says
I served it right out of the pot the first time and I think that’s why he didn’t get any broth. I guess next time I’ll put it in a serving bowl and have more broth. It’s definitely something I’ll make again!
nancy says
This is much like a recipe I used to help an older neighbor make when I was a child . She did not use any pressure cooker/instant pot but the biggest pot in the kitchen. She also used corn on the cob across the top at the last few minutes and cut up smoked pork shoulder in the bottom and then put the green beans and the potatoes. I use a slow cooker,, cajun sausage, frozen green beans, water or chicken broth as well as potatoes. So glad to see the IP directions,,,Now can add the potatoes with no worries!!!
Karen says
How cool! Thanks for sharing.
Judy says
Can you add the corn on the cob as well on the top with the same amount of time?
Karen says
Yes I believe that would work!
Keith Moran says
Your recipe doesn’t state – before you cut the andouille sausage into 1/4” slices, is it raw or cooked? I can’t imagine 3 minutes in the pressure cooker is enough to cook the sausage?
Jordan Merkel says
Sausage is usually cooked already, just needs to be heated. I’m making this today and night the sausage last night.
Karen says
Yes it’s just the pre-cooked smoked sausage stuff.
Gaylene says
I just made this today with beef smoked sausage and everything else according to the recipe and it is amazing!
Karen says
Glad you liked it!
Jackie Pash says
If I make 1/2 of this recipe, would I use the same amount of chicken broth?
Karen says
I would just to ensure that the pot comes to pressure.
Mindy says
Super quick, delicious dish! I used kielbasa instead of andouille and forgot to purchase mushrooms but otherwise followed recipe as written. Perfect cooking time and tons of flavor. Next time I think I’ll brown the sausage a little first, but otherwise this recipe is perfect! We had fresh picked green beans and small new potatoes for the dish and I served it with sliced garden fresh tomatoes and cucumbers. Such a nice, no fuss summer meal an no heating up the kitchen to cook it!!!!
Karen says
It does sounds like the perfect summer meal to me 🙂
Gwynne says
This was so easy to make and tastes awesome. I halved the cajun seasoning after reading comments but followed everything else. Thickened the juice with cornstarch. I prepped all the veggies the day before so just dumped it all in and hot start. Very impressed!!
Karen says
GREAT! Thanks for sharing your experience.
Gina says
We loved this! I mad e a few adaptations using kielbasa in lieu of andouille and Greek seasoning for the Cajun. I also added 1/2 onion chunked and a package of real bacon pieces I had for salads. I used about 1 TBSP of bacon grease to sauté onions and sausage prior to cooking and left my potatoes in halves since they were small. Truly a great recipe I will be using again!!
Karen says
your version sounds great!
Henri L. Geier says
My wife loves this recipe and I have gastroparesis so I have to be very careful about what I eat. I made this exactly as written with Kielbasa sausage and Montreal Chicken seasoning. The green beans (which I am not supposed to eat.) were easily digestible and the meal was delicious.
Karen says
Oh how great! Thanks for sharing Henri.
Katie says
Help! I have this on my recipe list for this week, but was just told to eliminate dairy from my diet to see if it helps my son who is exclusively breastfeeding. Could I replace the butter with something? Maybe coconut oil?
Karen says
You could just use olive oil.
Cassaundra says
Oh my WOW! I made this tonight. I’m always looking for new things to make in my instapot. My husband just picked a ton of green beans from the garden. I didn’t add the mushrooms because I’m not a huge mushroom fan. I think next time I will use less Cajun seasoning because I’m a wimp with spicy stuff, but this was great! This will definitely be a staple when our fresh green beans come in! Thank you!!
Karen says
I bet fresh green beans from the garden would taste so great!
Matt says
awesome! we (my wife) wondered if potatoes would be done, but everything was fantastic. next time we will use low sodium broth.
Kim says
Made this last night- soooooo good! I doubled the sausage and used baby portobello mushrooms and kept everything else the same. Next time I will cook it for only 2 minutes as 3 minutes had the potatoes and green beans a little too soft for me but it was still yummy! Will definitely make it again.
Karen says
I love the idea of mushrooms!
Lauren says
So delicious! My husband was skeptical about the instant pot being able to cook potatoes in a short amount of time…. he went back for seconds
Karen says
So glad you liked it!
Laura says
Made this about a month ago. Didn’t have Cajun spice so used red pepper flakes and my own blend of seasonings. Used asparagus instead of green beans. Turned out delicious!! Asparagus was a little too soft so when I make this tonight, I’ll use maybe a minute less of time. Can’t wait to dig in to it again!!
Karen says
I love those ideas!
Cassie says
Can you use frozen green beans? If so, do I need to change the cooking time?
Karen says
I believe you can. I haven’t tried it myself. Keep the same cooking time.
Lorraine says
I did this with frozen green beans (and also frozen corn/ carrots) I just stirred them in as apart of step 5 right after I open the lid. This way the veggies don’t get soggy
Ed says
I bought my IP about 6 months ago and have only cooked soups. I made this today for lunch and it turned out great. A little spicy for my wife put perfect for me. Who would have thought something so simple and quick would taste so good. Thanks. 🙂
Karen says
So glad to hear this Ed! Thanks for sharing.
Evita says
Im about to try this right now! Im headed to the store for the ingredients and will brb with my results@@@
Karen says
hope you liked it!
Crystal says
How did it turn out? I’m thinking this is dinner tomorrow night
Sharon Mulcahy says
My fourth meal in my new pot…and by far the best! Delicious! Thank you!
(I’ve done a roast, boiled dinner, ribs…all were good but this was fantastic!)
Karen says
Nice!! Thanks for sharing.
John says
Low pressure or high pressure?
Karen says
high
Teresa Marcher says
This was fantastic!!! So easy & delicious!!
Karen says
Glad you liked it Teresa!
Lisa says
Fantastic recipe!!! Thanks for sharing!
Karen says
You’re welcome!! 🙂
Kelly says
I am doubling JUST the sausage (not potatoes or beans – and not doing mushrooms). How do I go from there? Do I need to double broth? And what about cooking time? Thanks
Karen says
Use the same amount of broth. Keep the cooking time the same.
Katie says
Does the sausage have to be pre cooked or can you use fresh, uncooked sausage
Karen says
You could but you’d need to brown it first.
Amy says
So why was browning the sausage off FIRST NOT in the recipe??? It’s my first time using it and I hope it turns out!!!!!
Karen says
I used a smoked sausage, that was already cooked. If you use an uncooked version you’ll probably want to brown it first for color and depth of flavor. If you don’t brown it it will still get cooked through.
Karen says
Hi Karen. I just made this great recipe. I came out perfect. I did leave out the salt and used crimini mushrooms instead of white mushrooms. Everything was as per your recipe. Thank you so very much for this recipe and all the other ones you post. Your site is my go-to site for recipes and information on IPs.
Karen says
Thanks Karen! So nice to hear this 🙂
Susan says
I have cooked this three times now. Delicious! Simple and so fast! Thanks for sharing!
Karen says
So glad you like it Susan! We love this one too 🙂
Kasey says
Hi wondering if I have to triple recipe (big family) will it have to cook longer? And do I still ad the water? New to this sorry
Karen says
Glad you are here! No not a longer cooking time. Please read this article it will help you understand so much for a big family. https://www.365daysofcrockpot.com/how-to-double-instant-pot-recipes/
Kathleen says
All the textures were great. I have a 8 quart and I used 1-1/2 cups of broth. But…… I found out that we don’t care for the Cajun flavor. Any suggestions on other seasonings? Thanks!!!!!
Karen says
What about lemon pepper or montreal chicken seasoning or maybe even ranch dressing mix?
Elizabeth says
Forgot to cook saugage not say cook it first..is it to late
Karen says
the sausage doesn’t need to be cooked, if it’s smoked sausage it’s already cooked.
Al Penaluna says
Ok I have and been using my insta pot since last year. I’ve made at lest a dozen recipes, many with potatoes. Even cut into chunks they always take seven to eight minutes to cook to soft. So why do you and most others suggest only three to four minutes. If I do that they are still rock hard. I use a Lux 6 qt insta pot and I saw only one comment that went seven minutes, i usually go eight. So how does that work? Because of a surgery my wife cannot eat spicy things and she don’t like mushrooms so when I make this tonight I’ll omit the shrooms and use all beef hot dogs. The recipe looks good though and can’t wait to try it. Also I’ll use Grill Masters seasoning, about as spicy as I can get for her. Thank you much, home Chef Al 🙂👍😉🤠
Karen says
For this particular recipe the pot is fairly full so it takes a while to come to pressure so the potatoes are cooking that entire time. I’m not sure about other recipes you’ve made. What type of potatoes do you use?
Re says
How can you cut down on the sodium?
Karen says
You could. Eliminate the kosher salt. Use low sodium broth. Perhaps low sodium sausage too.
Wanda Gibson says
I fixed this quick meal for my 91 year old dad. He loved it, heard him brag to my nephew on the phone. I felt I needed more flavor since dad cant eat the spices, so I used one small pork flavored gravey mix sprinkled on top of all the ingredients before I put the lid on to cook. Everything tasted great. Will make again.
Karen says
Oh this is so sweet. Thanks for sharing!
Austin says
Easy, fast, delicious as is! Definitely a keeper!
Karen says
Glad you liked it!
Brandy D says
I’ve made this twice now! Love it! So simple but delicious and pretty healthy overall!
Karen says
So glad you liked it Brandy!
Freida Miller says
My family loved this recipe asked me to make it again. Just one question can I add shrimp to it and would the time be the same?
Karen says
Shrimp cooks so quickly. I might cook without the shrimp. Quick release. Then add the shrimp in the pot and put the lid back on. the heat in the pot will cook the shrimp in maybe 5-10 minutes, just on the warm setting.
Sue says
I have a shrimp recipe that cooks the shrimp under pressure in 4 minutes. They need to be large and frozen.
Lori says
I really enjoyed this recipe. It was so easy! I accidentally bought sliced mushrooms, but still came out great.
Anybody searching for sausage.. I used Johnsonville Andouille sausage.
Karen says
Sounds great thanks for sharing your experience.
Sharon says
Delicious. Used less salt and used 2 tsp. of salt free cajun seasoning and 2 tsp. regular cajun seasoning. Only had beef smoked sausage on hand, but it was still very good. Also used less butter to save on calories. As other reviewers indicated, sauteed some onion with the sausage and added some minced garlic before adding the rest of the ingredients. Three minutes was the perfect amount of time. A definite do-again recipe.
Karen says
Thanks for sharing your experience. You are making my mouth water! sounds delish.
Kristina says
I made this tonight and it was AWESOME! I used sweet potato (not yam) and left out the Cajun seasoning. I added some garlic and onion instead. It was a hit. Thanks for this simple, but delicious recipe.
Karen says
Sounds good with the sweet potatoes!
Cris says
Do you have any idea how you would cook this in a crock pot? I want to share the recipe with my cousin but she doesn’t have an instant pot. 🙁
Karen says
Here is the cp version: https://www.365daysofcrockpot.com/slow-cooker-cajun-sausage-potatoes-and-green-beans/
Cris says
YES! What a delicious tasting dinner. I followed your recipe using Boar’s Head smoked uncured kielbasa and reduced the Cajun spice to 2 tps (my husband doesn’t like a lot of spice). Cooked to perfection. I saw a few posts that the green beans were a bit mushy, I used regular fresh beans and they were tender but in no way overcooked. Thanks so much for sharing your recipe and making life a little easier at dinner time.
Karen says
NICE!!! Thanks for sharing Cris.
Debbie says
This was delicious! I added some onion and couple cloves of garlic. Big hit in my house and will definitely make again!
Karen says
Sounds so great Debbie!
DeDe says
Wonderful!! So flavorful and great on the tastebuds! Will definitely make over and over!
Karen says
Thanks! Glad you liked it 🙂
Jeremy says
Could I add cubed chicken to this or is the cooking time to short?
Karen says
Yes you could and I think they’d totally be fine. The only thing is that the sausage adds a lot of flavor so you may want to season your chicken a bit.
Robin says
Should you cook the cubed chicken on saute or from raw?
Karen says
If they’re in small bite size pieces 3 minutes of pressure cook time will be enough to cook them from raw.
Carol D says
Great recipe. I sauteed my sausage and onions in some olive oil and part of the butter called for for 2 minutes; add crushed garlic and sauteed for a minute more. Add the potatoes and green beans and 2 1/4 cups of home made chicken stock and lemon pepper seasoning and rest of the butter. Since I had been cooking in my pot it came to pressure very quickly and my husband said the potatoes and green beans needed another minute. Served this with corn bread and it was a hit.
Carol D says
I have an 8 qt pressure cooker is why I had to add 2 1/4 cups of water. This left alot of wonderful broth that went well with the home made corn bread.
Donna says
I made this tonight in the 3 quart instant pot. I used frozen green beans and onion in place of the mushrooms. Perfect size for 2 people. I kept the sausage the same, but cut down on the veggies.
Lisa Mendoza says
This was amazing. My husband said it is his favorite Instant Pot recipe I have made so far! I should’ve read the comments before starting because i doubled the recipe and the 3 min cook time made the potatoes and green beens a little mushy. But we love them that way anyway!! Glad we have some leftovers for the next few days!!
Karen says
so glad you enjoyed it!
Jan says
Made this tonight….added too much Cajun spice but still OM Goodness delicious!!
Windy Harrison says
I just made this recipe and thought it turned out really good. Unfortunately I didn’t have any fresh green beans so I tried my luck with the canned green beans. Although fresh may be better, I thought the canned was pretty good myself. I used Old Bay seasoning. Delish.
Karen says
Did you pressure cook the beans?
Jess Curtis says
Made tonight!! This is delicious!!! I followed the recipe except used can green bean with 0 pressure at the end. Perfect!! I never finish my meal but going for 2nds. Yum!!!!
Karen says
Nice!!
Ness says
I didn’t have some of the ingredients, so used turkey kielbasa, 1/4 onion, russet potatoes, minced garlic and a can of original rotel. Salt, pepper and lemon pepper and used water instead. 5 minutes was perfect! Still very yummy! Can’t wait to try as written next time!
Karen says
Your version sounds great!
Pam Barber says
OMG! YUM!
Still licking my chops as I write this. Made as written, using Aidells Cajun Style Andouille, but used a tsp less Cajun seasoning and just a pinch of salt.
Husband and I both loved it. Definitely a keeper! I can’t wait to try it with different sausage and seasoning combinations. Thank you so much for an awesome quick IP recipe.
Jessica says
Made this yesterday! Was such a great one pot meal and very flavorful! I used a pack of fully cooked chicken sausages (pear and Gouda flavored from Sam’s) and followed the instructions exactly as written. Since the pot was pretty full It did take awhile to come to pressure which was perfect for me to grab a quick shower while it was cooking! My picky husband really like it too and he normally is strictly a pasta guy, (anti potatoes) but he loved the flavorful broth. I loved that it had all the components of a balanced meal and super easy to make after work. Thank you for sharing 🙂
Tara says
Flavors were good, but I’ll cut down on the salt next time. Sauteed the sausage then the mushrooms in some of the butter noted in the recipe to give some more depth of flavor-so good! However, the 3 minutes cook time was too much. Beans and potatoes were overcooked…especially the potatoes. I’ll try the 0 cook time option next time.
Julie says
Can I add squash and zucchini?
Karen says
yes but after it has pressure cooked. Otherwise they will get too mushy.
Nancy says
Can I make this with bratwurst instead of the sausage?
Karen says
yes that would be really tasty
Gabrielle Barto says
I have a 6 quart IP. Can I double this recipe and still cook it for the same amount of time of 3 minutes???
Karen says
As long as it doesn’t go over the max fill line it should be good. I’d reduce the cooking time to 2 minutes since it will take longer to come to pressure.
Ashley says
I did sweet potatoes instead of regular and add bell peppers…. delicious.
Karen says
That sounds really good!
Tiffany says
I’m confused on this. I just bought the 8qt Instant pot and it says you must always have at least 18 oz water to pressure cook. So how could I make this? Even if i double the recipe it won’t be enough.
Karen says
You can add 18 ounces of broth and then make the rest of the recipe as stated. You’ll just have a lot of liquid in the bottom. But you can drain it off if you want!
isobel says
I made this for supper & I sautéed an onion & garlic & the mushrooms.I then followed the recipe I have an 8 quart instant pot so I doubled the broth & added an extra minute for the cooking! When I make this again I would leave it at 3 minutes like the recipe said! It was delicious!!
Karen says
YUM!!
Michele says
I used my 8 quart and only did a little over a cup of broth. No issues coming to pressure at all. I will reduce the salt next time. I’m so glad someone asked about shrimp because that is what I came here looking for. Will try adding frozen shrimp as well next time and maybe reduce the time to 2 minutes. Very good recipe. Both hubby and teenage son loved it.
Jennifer says
I’m new to the insta pot, if I have canned green beans and add them at the end like others says, what does the 0 pressure mean?? Sorry to ask such a dumb question.
Karen says
Oh the 0 pressure cook time just means you set the timer all the way down to zero. That means the pot will build pressure and then as soon as it reaches pressure it will beep and turn off. So it heats the beans up but doesn’t overcook them.
Lisa says
Do you cook the sausage first?
Or does it go in uncooked?
Karen says
I left mine uncooked. You could brown it if you like.
Julie says
Do you set the pressure cooker to low or high pressure?
Karen says
high pressure!
Julie says
Thanks! Could you also use precooked turkey sausage? I’m
Karen says
yes I think that would be great!
Lacey says
This is such a simple, easy recipe and yet so good. I want to eat the entire pot’s worth in one sitting!
Karen says
Haha Lacey!! me too!
Karen says
I tried this today with a few minor changes since I didn’t have all of the same ingredients. OMG it was so delicious even my picky teenage son loved it. It was so quick which is nice on a busy work night! Will definitely be making again. Thank you!
Karen says
picky kid eating it=winning!
Eva Lee says
I made this with Beyond Sausage and Emril Legasse’s Cajun Spice. Soooooo good!!!
Karen says
Good call!
Sarah says
I have made this quite a few times for fellowship gatherings. People love it! I love it! So good, so easy. I’ve doubled it because I have an 8 quart IP.
Thank you!
Becca says
I used Portuguese sausage (chourico) and subbed the mushrooms for 1 large white onion. Yummy!
Julie says
Made this with turkey kielbasa and Montreal chicken seasoning. I used a cup of broth. It came out great! My family really liked it. I will definitely make this recipe again.
Karen says
I really need to try this with the Montreal seasoning!!
Rick C says
Made tonight, fresh green beans, red potatoes and mushrooms, set for 4 minutes and everything was awesome.
Karen says
YUM!! I love the idea of mushrooms in this 🙂
Stacie says
Can I use frozen green beans if fresh ones are not available?
Karen says
yes i believe that would work. they may get a little mushy.
SandyToes says
Hi Karen,
I’m making this tomorrow with chicken andoulle sausage. Will the timing be the same, or less?
Karen says
It should be exactly the same! I hope you like it!
Sheryl says
I made this in my crockpot. 4-5hours on low. Green beans we re a touch al Dente but I like them that way. The potatoes were perfect. My husband loved it. Next time I will use more Cajun spice.
Gail says
It’s so funny to me (well,, not really) that some say 3 minutes and the green beans turned to mush; others say the 3 minutes was perfect, and for me, I actually had to do 7 minutes (!!) and everything was perfect, and I had even cut my potatoes into really small pieces!
Regardless of the time – and folks need to realize that time is just an average estimate – RMV (results may vary), this was a very quick, easy, and inexpensive, awesomely satisfying meal! Yet another successful, delicious meal from “365”!
Karen says
Good point!
Karen Johnson says
I only have frozen green beans. Should I could the other items 2 minutes then release and add my green beans and cook for 0 minutes?
Karen says
That would probably work!
stacey says
can fresh asaparagus be used instead of green beans? would the timing be the same? wanted to try it this week..looks so yummy thank you for sharing!
Karen says
asparagus will get totally mushy. I would add it later after everything else has cooked. and just let it kind of heat through with the hot food.
Kristan says
I made this for dinner and it turned out great! Will be putting this into my rotation. I can’t wait to eat leftovers tomorrow.
Karen says
I love leftovers!
Sandy says
Could I substitute sliced carrots for the green beans?
Karen says
yes or baby carrots would work
Pat says
Would sweet green pepper work instead of the beans? If so, would i have to change the time?
Karen says
Green pepper would turn to mush. Peppers are just too tender.
Suzy says
This was AWESOME and so easy! We used beef polska kielbasa (I used the Saute function first using a teensy bit of light olive oil because that’s how we like it when we make another sausage and potato dish; may add an onion next time while sauteing just for fun although the flavor is already so good); and omitted the mushrooms because they’re not my thing. Tried it with frozen green beans the 2nd time and yeah, they came out too mushy (but still tasty!) so will try cooking separately next time or adding at the end under pressure for 0 minutes as one reviewer suggested.
Thank you so much for this recipe!
Brittany says
So I tried this recipe tonight (first instant pot use). Is it normal to take 20 minutes to build pressure or am I doing something wrong. I followed the recipe to a T.
Karen says
That seems quite long. The fuller the pot the longer it will take to build pressure. One way you can speed up this process is by warming up any liquid you add to the pot.
Terry S. says
I’ve made this twice as written and my whole family loves it. I used the prewashed bags of green beans and pre sliced mushrooms. Very easy to make after work. Thank you!
Karen says
GREAT idea! That would make prep super fast.
Kim Wylie says
I used pre-bagged fresh green beans and the 3 minutes turned them to mush. I didn’t add potatoes because I didn’t have any. Would either of these things change the cook time?
Karen says
Were they super skinny beans?
Kim says
No. But made it again and cooked the sausage and potatoes for 2 minutes. Then added the green beans for 0 minutes under pressure. Was perfect! No mushy green beans.
Jeri says
So delicious and easy—3 minutes and it’s ready is crazy… I used turkey kielbasa as andouille and Cajun spices are too spicy for me.
Brittany de Los Angeles says
super yummy. a little salty though. perhaps it was the seasoning I used. I omitted the salt because I had a feeling it would be salty enough with the sausage. Instead for the butter I added 2 tbs of unsalted 2 of salted. I think I could have gone with all unsalted, no salt. I used the Louisiana Cajon seasoning brand. Any suggestions for a less spicy sausage? My boyfriend can’t do spicy. 🙁
Beth says
Would it be bad to not use the butter? Or is there something you could sub for it?
Karen says
You could substitute with olive oil.
ken says
Just made this dish. I used kielbasa and the Montreal seasoning and it was delish.
Ken
Karen says
Sounds fantastic!
Linda LaRocca says
I just made this recipe using kielbasa and Perfect Pinch Italian seasonings. It was delicious! It is definitely a keeper! This seems to be a wonderful winter dish–warm and tasty on a cold night, and everything in the same pot!
Karen says
Glad you like it Linda!
Stephanie says
Made this tonight, and it was great! Loved that it was such a quick meal.
Karen says
So glad you liked it!!
Linda O says
We really liked this dish. I used what I had at home so we had Aidell’s Italian sausage with Italian seasonings subbed for those you used. Will try it again using other sausage flavors. Loved how quick it went together and used little electricity- we are on power restrictions because of the high heat in N. California. Perfect meal for the evening. Thanks!
Karen says
Oh interesting about the power! I hope it cools down for you 🙂
