Slow Cooker Cajun Sausage, Potatoes and Green Beans
I saw a recipe for foil packets that had sausage, potatoes and beans in it. I thought it sounded good but in all reality I would probably never make them since I don’t really camp or use my grill that often. I decided to transform the recipe into a one pot slow cooker meal. It worked out perfectly and the flavors were so scrumptious.
I don’t like cajun seasoning. If you’re not a fan of cajun seasoning your could use kielbasa sausage instead of andouille and use a different seasoning like montreal chicken seasoning or lemon pepper seasoning.
Where did you find your sausage? There are all sorts of types of sausage. For example chicken sausage with apples or kielbasa sausage. They look like plump hot dogs and come in a 12 ounce package. Really you could use any kind of sausage that you want. I chose an andouille cajun style sausage. I found mine in the grocery store by the bacon and other cured meats.
Can I use canned green beans? No. Don’t do it! Fresh green beans taste so great in this meal so use fresh. Plus canned green beans would get really mushy.
I don’t like mushrooms. It’s fine. You don’t have to add mushrooms in. You can definitely leave them out.
Can I use another type of potato besides red potatoes? You can. Yellow potatoes will cook at the same rate as red potatoes. Russet potatoes will take a bit longer and I would peel the russet potatoes if I were you. Add 1 hour to the cooking time for russet potatoes.

To make Slow Cooker Cajun Sausage, Potatoes and Green Beans I used my 6 quart oval Kitchenaid slow cooker.* I love this slow cooker. It cooks low and evenly. I love the medium heat choice because most slow cookers that I’ve seen only have the option of cooking on low or high. If you’re going to buy just one slow cooker, this is the one that I recommend.

Description
An easy one pot meal of cajun-style andouille sausage, quartered red potatoes, fresh green beans and sliced mushrooms. Drizzle the buttery broth over the potatoes for maximum flavor.
Ingredients
- 1/2 cup chicken broth
- 1 (12 oz) package cajun style andouille sausage
- 1 1/2 pounds (24 oz) red potatoes
- 1 1/2 pounds (24 oz) green beans
- 1/2 pound (8 oz) white mushrooms
- 4 tsp cajun seasoning
- 3/4 tsp kosher salt
- 1/2 tsp black pepper
- 4 Tbsp butter
Instructions
- Pour chicken broth into slow cooker.
- Cut sausage into thin quarter inch slices. Cut red potatoes into 1 inch cubes or chunks. Wash and trim the ends of the green beans. Quarter the mushrooms. Add the sausage, potatoes, green beans and mushrooms into the slow cooker.
- Sprinkle the cajun seasoning, salt and pepper into the pot. Toss with a spoon. Cut the butter into 8 pieces and toss them into the slow cooker.
- Cover and cook on low for 4 hours, or until potatoes are tender.
- Gently stir the contents of the pot. Scoop onto serving plates or bowls and enjoy.

I love this recipe. Simple and tasty!! Made it a couple of years ago. Really liked it and forgot about it. I made it again and was mad I forgot about it. Make it quite often now. I don’t put the (fresh green beans) in until about an hour before it’s done. Beans are a little crunchy seems to bring out the flavor of the beans.

I think it would be just okay frozen. The potatoes might be a weird texture when reheated.

This is a good, easy, flavorful recipe. I used Emeril’s Cajun seasoning and that’s really all you need. Add some cayenne for heat and a chopped onion for extra flavor. Love a good crockpot recipe!

This is a delicious recipe and I make it all the time. Very easy to change out the type of sausage and the seasonings and sometimes I add carrots.
The only thing I do different is to cook it in my pressure cooker and it cooks in 5 minutes. Really, 5 minutes

I made this tonight using kielbasa. It was very good. I cooked on low for 4 hours and then on high for an additional hour (potatoes weren’t quite done after 4 hours on low).

Can I add shrimp…?
Yum yes. But add it after you pressure cook and just use the saute button to cook the shrimp. It cooks so quickly.
If I’m using a high low crockpot how long do I cook it on low or on high?
low 4 hours high 3 hours or until potatoes are done. All crockpots cook differently so it’s hard to give an exact time.
I made a ½ recipe of this in my Instant Pot Mini, using chicken andouille sausage from Costco and halved baby gold potatoes. I sliced the beans into 2″ pieces and omitted the mushrooms because I didn’t have any. It took longer than 4 hours (green beans and potatoes were still undercooked) and the clock was pushing 8pm, so I stuck the pot in the fridge for tonight. I reheated it on Sauté and after 20 minutes it was ready. Potatoes, sausage and beans were all tender, just perfect.
This was my first time cooking sausage (other than breakfast type), because I hate how fatty the various kinds of links are, so never buy them. We tasted the chicken andouille at Costco last week and what a revelation! They were wonderful, and not fatty at all! It was also my first time cooking with cajun seasoning, so I was a little worried on several fronts.
Well, the finished meal was delicious, if a bit too hot for me to handle. We both loved the combination of sausage, potatoes and green beans, and it couldn’t be simpler to make. This has earned a repeat, with half the cajun seasoning.

This is one of my favorite recipes. I have made it several times. I use kielbasa and 3 tsp of Montreal Seasoning. Plus making it is easy and I don’t destroy my kitchen with food residue all over the place.

Yes you could add in other vegetables. Maybe bell peppers or brussels sprouts and carrots. You can cook on high for about 2-3 hours.
