The Instant Pot is a great tool to make vegetarian soups and pasta dishes. In addition there’s not a better tool than the Instant Pot to cook dried beans, peas, lentils, wheat berries, barley, quinoa and other grains. If you’re looking to incorporate more vegetarian Instant pot dishes into your diet I’ve got several ideas to get you started!
Note: Some cheeses are not vegetarian, including Parmesan cheese. You can buy supermarket versions of vegetarian Italian-style hard cheeses. Just check the label to be sure it is vegetarian.

What Pressure Cooker Do You Use?
I used a 6 quart Instant Pot Duo 60 7 in 1*. I love this Instant Pot because it has the yogurt making function which I use almost weekly. It has two pressure settings (high and low), and there are also little slots in the handles so that you can rest the lid there instead of putting it down on your counter-top.

Sorry, but certain Italian cheeses have animal rennet, including, parmesan,which makes it not vegetarian.
I just wanted to let you know. I’m not vegetarian, but my daughter is & I found this out after serving it to her. 😔
This is true but not all Vegetarians give up all animal products like eggs, cheese and milk. Vegans do not eat any animal products

You are referring to Vegan – give up all animal products. Vegetarians usually give up deceased animal products.
Looking every day for new ideas. Have done chili, beef stew, chicken and dumplings, and pot roa.st so far.
All came out great. My grand daughter made egg bites which also was good. I am a bit obsessed with findind new things to do with this pot. Anxious to try desserts too. I do not see where you have to poke a hole in the eggs though. My egg cooker requires it so they do not break. Is this not really necessary? Thanks. Love your site.
