Instant Pot White House Casserole

White House Casserole

Today’s recipe is a chicken rice casserole that has onion, celery, bell pepper and cabbage. With a creamy sauce with a bit of lemon juice and dijon it has plenty of flavor. Then the topping is a fun, random combination of potato chips, cheese and almonds 🤷‍♀️. This recipe is adapted from White House Chicken Casserole on Buen provecho. The author stated, “Not sure where this came from, but it has been in my books for quite some time.”

Ingredients/Substitution Ideas

  • Butter
  • Onion–white, yellow
  • Celery
  • Red bell pepper–or yellow, orange
  • Chicken broth–or water and Better than Bouillon chicken base
  • Converted rice–or long grain white, basmati, jasmine
  • Cabbage–green cabbage is what I like and use
  • Lemon juice–fresh or bottled
  • Dijon mustard
  • Pepper
  • Cream of chicken soup–or cream of celery
  • Chopped cooked chicken–I used rotisserie chicken
  • Mayonnaise
  • Cheddar cheese–I used sharp
  • Sliced almonds
  • Potato chips–like Lay’s potato chips

Steps

Turn Instant Pot to saute setting. When display says HOT add in the butter and let it melt. Add in the onion and celery and saute for 4 minutes. Stir in the bell pepper and saute for 1 more minute. 

Pour in the broth and scrape bottom of pot so that nothing is sticking. Turn off Instant Pot.

Sprinkle in the rice evenly. Add in the cabbage evenly over the top of the rice. Add in the lemon juice, mustard, pepper and cream of chicken soup. Don’t stir.

Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 3 minutes. When time is up let pot sit for 10 minutes. Move valve to venting and remove the lid. 

Stir in the chicken and mayo. 

Sprinkle the cheese, almonds and chips on top.

If you have an air fryer lid bake for 7 minutes at 300 degrees. If you don’t have an air fryer lid place instant pot liner in the oven and bake at 350 for 15 minutes.  

Serve and enjoy!

Notes/Tips

  • Serve with roasted broccoli or asparagus.
  • Can I use uncooked chicken? Yes you can. Cut up 1 ½ pounds of chicken breasts or thighs into bite size pieces and place it on top of the rice before you place the cabbage on top. Then pressure cook as stated.
  • I used my Duo Crisp 6 quart Instant Pot*. You can also make this in a 3 or 8 quart pot.
  • Store leftovers in an airtight container* in the refrigerator for up to 5 days or in the freezer for up to 3 months. The topping is best on the first day but the other portion of the casserole is great as leftovers.
  • What is converted/parboiled rice? Don’t confuse converted rice (or sometimes it is called parboiled rice) with pre-cooked or minute rice. Parboiled rice has been processed in its husk by soaking, steaming, and drying. As a result, all the nutrients from the husk are absorbed into the grain before it’s removed. The starch content alters in the process, making cooked parboiled rice less sticky than regular white rice. The rice kernels aren’t clumpy and glued together instead they are more separated. I found a bag of parboiled rice at Walmart next to the normal long grain white rice. Sometimes I buy it at Winco in the bulk section. I have also found it in the orange box (Ben’s brand) next to other rices.
  • Other recipes you can make with converted rice are Grand Canyon Casserole, Texas King Ranch Chicken Casserole and Smoky Mountain Casserole.

Description

An Instant Pot chicken and rice casserole with a cheddar, potato chip and almond topping.


Ingredients

Scale
  • 2 Tbsp butter
  • 1 cup diced onion
  • 2 ribs of celery, sliced or diced
  • 1/2 cup diced red bell pepper
  • 1 cup chicken broth
  • 1 cup converted rice
  • 2 cups chopped cabbage
  • 3 Tbsp lemon juice
  • 1 Tbsp Dijon mustard
  • 1 tsp pepper
  • 1 (10.5 oz) can cream of chicken soup
  • 3–4 cups chopped, cooked chicken
  • 1 Tbsp mayonnaise
  • 1/4 cup shredded cheese
  • 1/4 cup sliced almonds
  • 1/2 cup crushed potato chips

    Can you create a version for people with small kitchens who don’t have instant pots? it sounds delicious and I would like to be able to make it in the oven for a potluck dinner.
