Hill Country Casserole–an Instant Pot noodle dish with ground beef, sour cream, cheese and red sauce. A delicious, easy and fast dinner.

Hill Country Casserole

Today’s recipe is a weeknight favorite! It is a noodle casserole that has lots of flavor from seasonings such as chili powder, cumin and garlic. The noodles are covered in a sour cream and marinara sauce. Plus there is melty cheese on top. It might sound like an odd combination but it is so yummy! This recipe has been adapted from Broken Arrow Ranch. The author said, “This recipe is a favorite at the ranch. Our kids just can’t seem to get enough.” I agree 🙂

Ingredients/Substitution Ideas

  • Lean ground beef–I used 93/7
  • Onion–yellow or white
  • Kosher salt
  • Black pepper
  • Chili powder
  • Cumin
  • Garlic powder
  • Beef broth–or water and Better than Bouillon beef base
  • Egg noodles
  • Marinara sauce–I used Bertolli’s tomato and basil sauce. Mezzetta and Rao’s brand are also good.
  • Sour cream
  • Cheddar cheese–or another cheese like colby

Steps

Turn Instant Pot to saute setting. When display says HOT add in the beef and break it up. Add in the onion. Brown for about 5 minutes. Drain off excess grease. Stir in the salt, pepper, chili powder, cumin and garlic powder.

Pour in the broth and scrape bottom of pot so that nothing is sticking. Turn off Instant Pot.

Sprinkle in the egg noodles evenly. Dump the marinara sauce evenly over the top of the noodles. 

Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 1 minute. When time is up, move the valve to venting and remove the lid.

Temper the sour cream by stirring a cup of the hot mixture into the sour cream. Stir the mixture into the pot.

Sprinkle the cheese on top and let it melt. 

Serve and enjoy!

Notes/Tips

  • Serve with a green salad and a side of garlic bread.
  • I used my 6 quart Instant Pot*. You can also make this in a 3 or 8 quart pot.
  • Store leftovers in an airtight container* in the refrigerator for up to 5 days or in the freezer for up to 3 months.
  • If you use another type of pasta you may need to adjust the cooking time. Here is the formula: look at the back of the box of pasta and see how many minutes it says to boil the pasta. If it’s 10 minutes you divide that number by 2 (=5) and then subtract 2 minutes. So you would pressure cook for 3 minutes. I usually use a 5-10 minute natural pressure release for pasta.
  • Other recipes you can make with sour cream are Mexican Sour Cream Rice and Sour Cream Pork Chops.

Description

Ingredients

  • 1 pound lean ground beef
  • 1 cup diced onion
  • 1 tsp kosher salt
  • 1 tsp black pepper

  • 3 cups beef broth
  • 1 (12 oz) package egg noodles
  • 1 (24 oz) jar marinara sauce
  • 1 cup sour cream
  • 1 cup shredded cheddar cheese

    I liked this, although I got the dreaded burn notice after the valve sealed, but before the timer came on. I used the single batch recipe in a 6 quart I.P. Not sure why I got the burn notice, nothing seemed to be stuck to the bottom.
    I will try using my 8 quart I.P. next time. It was edible although the noodles were a bit tough.I liked the taste enough to try it again soon.

    Why do you look on this site which is for InstantPot recipes? Try A slow cooker site. Karen sometimes includes slow cooker methods but THIS IS AN INSTANT POT site.

      I would try it in crock pot cuz I don’t have a instant pot either and it’s supposed to be for both. I sign for crockpot recipe and I get these

    It would be nice if you included a slow cooker recipe along with the Instant Pot like some of the recipes. I don’t have an Instant Pot and I’m not going to go out and buy one.
