Instant Pot Pumpkin Pie Steel Cut Oatmeal

If you’re not familiar with steel cut oatmeal you need to be! It is my favorite and I don’t make it near enough. This type of oatmeal is processed by cutting the whole oat groat into pieces instead of rolling it (like rolled oats). It almost looks like a grain of rice that’s been cut into pieces. Because it’s cylindrical in shape it takes a while to cook, much longer than rolled oats. It has a chewy texture that retains much of its shape even after cooking.

Why use the Instant Pot to make steel cut oatmeal? You can cook steel cut oatmeal on the stove in about the same amount of time as the Instant Pot (once you figure in the time that the pot takes to build and release pressure). However, I love using the IP to make steel cut oats because I just throw everything in the pot and walk away. Whereas, if you make it on the stove you’ll have to wait for the water to boil, stir it, make sure it doesn’t get burned on the bottom, etc. I usually throw the oatmeal into the Instant Pot and then go jump in the shower. After I’m ready for the day I have a delicious bowl of hearty oatmeal to eat for breakfast.

Pumpkin spice lovers will rejoice to add another pumpkin recipe to their repertoire. And you can feel good about that fact that this oatmeal will stick to your ribs and keep you full until lunch. My kids and my husband were skeptical to try this oatmeal but ended up loving it.

What Pressure Cooker Did You Use?

To make Instant Pot Pumpkin Pie Steel Cut Oatmeal I used my 6 quart Instant Pot Duo 60 7 in 1*. I love this Instant Pot because it has the yogurt making function which I use almost weekly.  It has two pressure settings (high and low), and there are also little slots in the handles so that you can rest the lid there instead of putting it down on your counter-top.

Description

Hearty steel cut oats are cooked with pumpkin puree and pumpkin pie spice quickly in your electric pressure cooker to make a comforting breakfast perfect for a chilly fall morning.


Ingredients

Scale
  • 1 cup steel cut oatmeal
  • 2 cups water
  • 1/3 cup pumpkin puree
  • 1 1/2 tsp pumpkin pie spice
  • 1/4 tsp salt
  • 3 Tbsp brown sugar
  • 1 tsp vanilla

Instructions

  1. Add all ingredients into your Instant Pot.
  2. Cover and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 4 minutes.
  3. When 4 minutes is up then let the pot sit there for an additional 15 minutes and then move the valve to venting.
  4. Stir the oatmeal and scoop into serving bowls. Top with milk or cream.

Notes

I used my 6 quart Instant Pot Duo 60 7 in 1*.

This keeps well in the fridge for at least 3-4 days. Store in an airtight container.

To make gluten free: Oats do not naturally contain gluten but are often cross contaminated in the fields they’re grown in. Be sure to use certified gluten-free steel cut oats. Bobs Red Mill is a common brand.

    Thanks for this idea for steel cut oats. They have been my standby recipe for awhile. I make a big batch in the instant pot and then divide it up for about a weeks worth. I reheat them in the microwave. I am missing the peaches I had been adding for a burst of flavor. I am wondering about a 1/3 cup of pumpkin puree since that would leave a lot in the can. Do you think you could use a small winter squash somehow?

      I like to freeze the leftover pumpkin in 1/4 cup increments. I am not sure on the winter squash. I think it would work but I’d have to experiment

    Karen, thank you for a wonderful recipe! Have made 4 times so far. I tweaked only adding 1 T brown sugar and added a diced apple! We have to watch our sugar intake. It is sweet enough for us. Also, the apple added a bit more fiber. I have found that this recipe tends to stick in the bottom and since we like creamy oatmeal, I learned to be sure and spray PAM in the pot first!! A bowl of this, plus whole grain toast, leaves you feeling healthy and full for a long time!! An A+ recipe all the way! Ty!

    Delicious! I used one diced apple instead of the banana because that is what I had on hand. I also used a ceramic bowl sprayed with non-stick spray on the trivet with 1 cup water in the bottom of the pot.

    I made this recipe twice in my 8qt. The first time I got the burn message. The 2nd time I added a 1/2 cup of water and it came out perfect. I had to add just a little more sugar. But other than that, great recipe. My kids who normally do not like oatmeal, especially steel cut because of the texture, gobbled it up.

    I’ve made this recipe twice, and had no IP issues, but I would recommend using less pumpkin pie spice than is called for until you see if you like it. It was too strong for our taste with the full amount. I used about 3/4 teaspoon the second time. Thanks for this recipe!

      I’ve made this several times. I always add 2 teaspoons of Pumpkin Pie Spice. Those spices are really good for you so I add it to anything I can. This amount is just right for us Seniors. In fact, next time I’ll double it so we can have some the next day too.

    I plan to make this in my 3 quart ultra and will use the non-stick liner to hopefully help avoid a burn error. Should I increase the cooking time as it will definitely come to pressure quicker in the smaller pot? I am thinking I should add 1 minute but what do you recommend?

      Yeah, 1-3 minutes probably would help a bit. Depending on soft you like your oats.

        Thanks. I am going to try 2 minutes as I don’t really want them to be too soft. I have found that when I take a recipe that is normally done in a 6 quart pot and use the 3 quart instead that the time needs to be tweaked to accommodate the quicker time to reach pressure.

          yes that’s right. It cooks at a lower pressure per square inch and it comes to pressure faster and releases pressure faster too.

    I made this today according to your instructions except I used coconut palm sugar same measure and 1 Tbs of homemade Hawaiian vanilla and it was superb! I have a Crock Pot Express and I always have to figure out what settings to use and fiddle with the timer be ause they have defaults that I’m not happy with but it was cheaper when I bought it so I live with it.

    I increased the liquid to 3 cups (half milk) looked like it would be a bit runny, but it set up very well when it cooled. I top it with a splash of real maple syrup and either walnuts or pecans. Love it.

    So strangely, the first time I made this I had no issue. The subsequent two times I’ve had burn warnings. I make it work by just scraping the bottom and then putting it back to pressure just for one minute, since I know it’s alrwsdy cooked some. But strange that the first time was fine. I have 6qt Duo.

    Just finished making this. It is SO DELICIOUS and so easy to make, will definitely made again! I finished mine off with some almond milk, pecans, flax seeds, and chia seeds just to give it even more texture but it is fine on its own.

        My 8 qt burned also, got an error message. I tried with a pot in pot, but that didn’t cook enough. Some other recipes call for a lot more water, that will be my next try.

        Frustrating, the size of the instant pot definitely makes a difference in some recipes. Also takes longer to come to pressure.

          I use the 8 qt electric pressure cooker. This sticker to the bottom. Second time, I sprayed with Pam, added the water and 1 T butter. Set on saute so the butter could melt, while dicing up an apple. Much better this time but think I will follow another fan’s pot-in-pot method. Lovely recipe and so healthy and hearty! Ty Karen

    Can you substitute quinoa flakes for the oats? I’m not allowed oats of any kind. Would the liquid amounts change or the cooking times?

      Hi Lee Ann, I am not familiar with quinoa flakes. If you mean quinoa then it’s a 1 to 2 ratio or quinoa to liquid and the cooking time would be 1 minute plus a 10 minute NPR.

      I bet you could and it would work fine! Use 2 to 1 ration on water to oatmeal. 3 minutes cooking time with natural pressure release.

    I have seen this recipe in two places, one says 2 cups of water and one says 4 cups of water–to the one cup of steel cut oats. Which is it? I want to make it and don’t want to get the wrong amount! Thank you so much!

      In the slow cooker it is 4 cups and in the Instant Pot it is 2 cups.
