Today’s recipe is inspired by the Sooner State, Oklahoma. In 1889, the land was opened to settlers in what became known as the “Oklahoma Land Rush.” On the first opening day on April 22, 1889, 50,000 people swarmed into the area. Those who tried to beat the noon starting gun were called Sooners. Hence the state’s nickname.
When I think of Oklahoma I think, of course, of the play Oklahoma and the song “Oklahoma” booms in my head. And now it will be in your head all day long. You’re welcome. I also think of Garth Brooks and Reba McEntire (who were born in OK) and tornadoes (OK has the most tornadoes in the U.S.).
According to awesomeamerica.com, the official State Meal of Oklahoma is chicken fried steak, fried okra, squash, cornbread, barbecue pork, biscuits, sausage and gravy, grits, corn, strawberries, black eyed peas and pecan pie. Sounds like an amazing meal to me! And one that would keep you full for a long time. I decided to pick biscuits and gravy for my states project to represent Oklahoma. My biscuits aren’t made in the IP (wouldn’t work, not the right texture) but the sausage gravy is and boy is it good!

Instant Pot Sausage Gravy
One of my husband’s favorite comfort foods and most often requested dinners is biscuits and gravy. Sometimes I make homemade biscuits (I usually use this recipe) and sometimes I buy a can of refrigerated biscuits at the grocery store. But every time I make it every ounce gets gobbled up.
I decided to try and make the gravy portion of “biscuits and gravy” in the Instant Pot. I combined the recipe from Completely Delicious and a few others that I’ve seen around the internet. The results were a thick country style sausage gravy that tasted absolutely amazing. I liked how deep the Instant Pot inner pot was to stir and make the gravy. Usually when I make it in a frying pan on the stove it doesn’t work as well to make a large batch.
The addition of 2 slices of bacon to the gravy made it so flavorful and by pressure cooking for just a few minutes it infused all the flavors for an amazing gravy that had us licking our plates.
You can easily double this recipe if you’re serving a crowd for brunch and keep your Instant Pot on the Keep Warm setting until you’re ready to serve it.
I made this recipe this morning and it was so delicious! My kids said it was the best gravy ever. I loved how it tasted and a bonus was doing it all in one pot! No more splattering of the sausage cooking or gauging if I’d added enough flour/milk/fat ratio. This was PERFECT!

What Pressure Cooker Did You Use?
To make Instant Pot Sausage Gravy I used my 6 quart Instant Pot Duo 60 7 in 1*. I also own the 6 quart Instant Pot IP-LUX60 V3 Programmable Electric Pressure Cooker.* They are both great pressure cookers! The first one I mentioned has a yogurt making function and I do believe it is an overall better choice in pressure cookers. The price difference between the two is about $20.

Description
Country style gravy made with ground sausage and diced bacon is infused with flavors as it is quickly pressure cooked. When served over freshly baked biscuits (homemade or from a can) it tastes like a good old fashioned southern breakfast (although we eat this often for dinner).
Ingredients
- 1 pound ground sausage
- 2 slices uncooked bacon, diced
- 1/2 cup chicken broth
- 1/2 cup all purpose flour
- 3 cups milk
- 1/2 tsp salt
- 1/2 tsp black pepper
- Homemade or canned biscuits
Instructions
- Prepare your biscuits and turn the oven on to bake them.
- Turn your Instant Pot to the saute setting, adjust it to “more.” Add the sausage and bacon to the pot. Break up the sausage with a wooden spoon. Brown the sausage for about 5 minutes. Do not drain the grease. Add in the chicken broth.
- Cover the Instant Pot and secure the lid. Make sure valve is set to “sealing.” Set the manual button (pressure cook button) to 5 minutes.
- Bake your biscuits.
- While the timer is counting down on your Instant Pot get out a medium bowl. Whisk together the flour and milk.
- When the timer beeps indicating that the 5 minutes are up move the valve to “venting.” Open the pot when you are able.
- Turn your Instant Pot to the saute setting on “more.” Pour in the milk mixture. Add in the salt and pepper. Stir until the gravy is thick and bubbly. Turn the Instant Pot to the Keep Warm setting.
- Serve the gravy over the biscuits.
Notes
I used my 6 quart Instant Pot Duo 60 7 in 1*.
This recipe came to pressure very quickly for me and the pressure release didn’t take hardly any time either. Win!

Easy and delicious. I double the recipe & keep warm in IP for the wkd. Sometimes I don’t even whisk milk and flour together in a separate bowl, I just sprinkle flour over cooked meat in IP after pressure eases and stir in milk.

I just made this recipe again this morning for probably the 5th or 6th time. I now double it and then freeze the leftovers in 3 or 4 bags for a quick breakfast. Even my 2 year old loves it. Since I double it, I use one regular roll of sausage and one spicy. It’s fantastic. Definitely a winner!!!

This was perfection! I’ve tried a few stovetop recipes but we could never quite get it where we wanted it. I was so excited to find this recipe and make it in the ease of the Instapot. I will never go back and this is going into rotation! I had leftover cooked bacon so I just diced it up and added it in when I added in the milk & flour. I made this for my son and father. Based on other comments, I sauteed the flour with the sausage for one minute before adding in the milk. I doubled the salt and pepper and added in 6-7 splashes of Worcester sauce. Both gave it a huge thumbs up! Thanks for a great recipe!

This is the best tasting and easiest recipe. I no longer have to go to Bob Evans restaurant for my sausage biscuits and gravy. However, I do buy their sausage to make this recipe. I have used regular, hot and Italian sausage for this recipe. Each time a hit.
Only change is I omitted the bacon. The first couple of times I did use bacon and I don’t think it added any flavor so I leave it out now.

Hi, I grew up in Tennessee, and this is almost identical to the way I was “taught” to make it here in the South (minus the chicken broth and use 4 cups milk). I now lower the fat by draining it off of the sausage, and paper towel blotting it to remove as much grease as possible, then I add extra virgin olive oil to replace the high cholesterol / high saturated fat grease – thus making this old Southern favorite into a “heart healthy” version. I am going to try your ideas with the broth and adding lean bacon for the flavor. Thanks – I love using your recipes. We think alike.

Biggest complaint is lack of flavor and soggy bacon even after sauteing longer than suggested. who wants wet noodle bacon bits. adding two chicken bullion and omitting salt helped . gravy best done on stove

I’ve never used bacon in my biscuits and gravy. The first time I made this recipe, it came out pretty bland and not as flavorful as I like. I tweaked the recipe a bit and it came out AMAZING!! I used the roll of Jimmy Dean brand ground Sage Sausage instead of original. I also didn’t add chicken broth, just milk but added a few splashes of Worcestershire Sauce and a few splashes of hot sauce, and added some nutmeg (I use nutmeg in any white sauce/gravy). It came out SO SO GOOD! Almost as good as my dads!

Excellent base recipe. I added a lot of seasoning. I was really impressed at how creamy it turned out, even when tripling the recipe – which doesn’t always work out so well with other recipes! I skipped the bacon, only because I didn’t have any. I added nutmeg, allspice, onion powder, rubbed sage, basil, paprika and a few dashes of hot sauce. We did packaged and homemade biscuits, I recommend the homemade. Definitely going to make again, next time I think I will use a flavored sausage instead of plain.

This was super easy and really good. One reviewer complained that the gravy had a raw flour taste. Instead of mixing the flour and milk, I added the flour first on sauté to the sausage mixture (after pressure cooking was complete) and fried it a bit. Then I added the milk. Worked perfectly!

In order to not have your gravy have a raw flour taste I always do what my mom taught me. Add the flour directly to the Instant Pot after frying the sausage and bacon and stirring constantly fry until it’s golden brown. This makes a world of difference.
I like to use hot sausage and I add onion powder. If like me you like color in your food, I sometimes add dried parsley flakes, it adds a little color but no flavor.
Other than those minor changes I followed your recipe and both my husband and I loved every last drop.
Oh yes, let me add…tomatoes are my favorite food ever I never make biscuits and gravy without having a platter of sliced tomatoes with it. My husband doesn’t want tomatoes he likes eggs with his.

I made that mistake years ago when making a different recipe. You need to make sure you “cook” the flour for at least a minute or two. That has always fixed that problem for me 🙂 Hope that helps.

Delicious! I made it as written for dinner tonight, tasting before adding salt and pepper, which weren’t needed. It’s easier than my stovetop version, and stirring the gravy every minute prevented sticking. Great flavor, easy cleanup – my kind of meal! We both felt there was a lot of meat for the amount of gravy, so next time I might increase the milk to 4 cups. More delicious gravy!

I haven’t made this yet, but plan to. I normally cook the flour in with sausage after it gets brown, when preparing in a skillet. I do this in order to reduce the raw flour taste in the gravy. Can I do the same in the IP, or will it affect how it cooks?

The trouble is that the instant pot will give you the burn message because the flour will probably stick to the bottom and not allow the pot to come to pressure. thickeners have to be added after the pressure cooking process. It’s annoying but true!

Louise, if you have the nonstick pot, try it! I fried pork chops in it, then added the flour and cooked it until golden and bubbly and it worked with no burn message! Can’t wait to give this recipe a try!

Kimberly, wouldn’t that much flour be a problem? ½ cup flour with only ½ cup liquid doesn’t sound right for pressure cooking, even with the nonstick liner. Maybe supplement the broth with 12 ounces (1 can) evaporated milk, then finish it with another 2 cups of milk?

I’m DYING to try this. Am also Keto… if using arrowroot flour I would suggest using AT LEAST half the amount of normal flour, Arrow root and xantham gum will solidify LOTS more than flour.

My husband is a huge fan of biscuits and gravy, and I was able to have this dish on the table within 30 minutes of arriving home from work and beginning to prepare it. This one came to pressure quickly and released the pressure quickly. I bet you could have this done start to finish in less than 30 minutes.

I don’t have an 8 quart so I’m not totally sure. I have read that you need more liquid for the 8 quart to come to pressure. You may want to add 1 cup of broth instead of 1/2 cup.

I made this in my 8 qt instant pot. To address the concern of using 1/2 cup chicken broth when our 8 qt. pot calls for one cup liquid to come to pressure I did the following. I put one cup broth (instead of 1/2 cup) with the sausage to do the pressure cooking stage. When it came time to add the milk, I used 2 1/2 cups milk (1/2 cup less to make up for the extra 1/2 cup broth I used earlier) and it came out beautifully! I didn’t add the bacon and it was still great! This recipe was so easy and full of flavor explosion! Thanks for sharing! Definitely a keeper!!😊😊😊

I too added and extra 1/2 cup chicken broth to make it 1 cup chicken broth and still added the 3 cups milk with 1/2 cup flower. After releasing pressure valve I then added the 3 cups milk and flour and for some reason my sautéed button would not heat up so I set to pressure for 5 more min. It turned out perfect !
