Raise you’re hand if you’re like me and don’t want to cook in the summer. The kids have it off of school, don’t moms and dads get to take off cooking dinner too? I wish! But a bowl of cereal for dinner 7 days a week is probably not the best thing all summer long. For some reason in the summer I feel especially lazy about cooking dinner. I am all about those types of recipes that have shortcuts, few ingredients and are dump and go. I’ve compiled 7 especially easy Instant Pot recipes. I think you’ll like these!

    Occasional Pasta?

    I thoroughly enjoy my Electric pressure cooker, and frequently use Guinness Stout in place of water or broth.

    Karen, every time I look at your recipes, a pop-up comes onto the screen regarding Free Mail Bonus, Five Secrets to Master Your IP. I have filled it out in hopes that it would go away, but it pops up EVERY SINGLE TIME! Is there any was to stop this?

    I use Karen’s recipes (sometimes tweaked to my taste) for 90% of my Instant Pot cooking. I particularly like the all in one pot recipes as I’m lazy! The Cheater Lasagne is one of my favorites. Today I plan on making the Ground Beef Stroganoff. Has anyone tried to make it with the noodles cooked at the same time? If so, would love to know how much additional liquid for how many ounces of noodles.

      Noodles don’t do too well in the IP. They turn to mush SOOOO fast. Don’t do it.

    Mix 2 tablespoons cornstarch with 1/2 cup milk, cream or half n half (slurry) and add at end to make it creamy! A little shredded cheese and deliciousness!
