Freshman Rainbow Casserole–an easy sheet pan meal recipe with sweet potatoes, zucchini, peppers, tomatoes and smoky sausage roasted together for a colorful meal.

Freshman Rainbow Casserole

This one was a really fun one to make and to eat! I love how colorful this dinner turns out on the sheet pan. You’ve got orange sweet potatoes, yellow peppers, red tomatoes and green zucchini…it’s basically a rainbow dinner. If you want to add a purple color too you could throw in some chopped eggplant. This is such a great meal for a freshman or anyone cooking for themselves because you can just buy one carrot, one pepper, one zucchini and one package of sausage and make a full meal without a bunch of extra ingredients left sitting in the fridge. Everything cooks together on one pan which keeps cleanup easy too. The tomatoes burst a little while roasting and create extra flavor for everything on the pan. All the vegetables balance each other out really nicely. Make it once and you’ve got lunches ready to go for the week! (This idea for this recipe comes from Eat Like a Freshman: Rainbow Casserole).

Ingredients/Substitution Ideas

  • Sweet potatoes–or red potatoes
  • Carrot–or parsnip
  • Zucchini–or yellow squash
  • Yellow bell pepper–or red or orange bell pepper
  • Grape tomatoes–or cherry tomatoes
  • Olive oil–or avocado oil
  • Kosher salt
  • Dash seasoning–or another no salt seasoning mix
  • Beef smoked sausage–or turkey smoked sausage, chicken sausage or kielbasa
  • Parmesan cheese–or romano cheese

Steps

Heat oven to 400° F. Prepare all the vegetables and place them on a sheet pan.

Drizzle with the oil and season the veggies with a couple pinches of kosher salt.

Add in the sausage and then sprinkle on the Dash seasoning and toss well.

Cook in the oven for 30 minutes, tossing everything half way through. 

Serve topped with parmesan cheese and enjoy!

Notes/Tips

  • This was a one pan meal for us but it would be really good with cornbread and honey butter or dinner rolls. I love this recipe for cornbread…it’s the only one I use.
  • I used my awesome USA pan to cook this meal on. I love these baking sheets*…they are the best for cookies because you don’t use any spray or parchment paper and the cookies don’t stick or spread out.
  • Store leftovers in an airtight container* in the refrigerator for up to 4 days. This recipe does not freeze well.
  • This recipe works great for meal prep because the leftovers reheat really well. It makes a perfect healthy lunch!
  • Turkey smoked sausage works well if you want to lighten it up a bit.
  • Make sure the vegetables are spread out in a single layer on the sheet pan so they roast instead of steam. If the pan feels crowded, use two sheet pans for better browning.
  • This recipe is gluten free and can be dairy free if you leave out the parmesan cheese.

Ingredients

Scale
  • 16 oz sweet potatoes, peeled and cut into 1 inch chunks
  • 1 large carrot, peeled and cut into 1/4 inch rounds
  • 1 medium zucchini, sliced in half lengthwise and cut into 1 inch pieces
  • 1 yellow bell pepper, cored and sliced into strips
  • 1 cup grape tomatoes, halved
  • 2 Tbsp olive oil
  • Pinch of kosher salt
  • 2 tsp Dash seasoning
  • 12 oz beef smoked sausage, sliced into quarter inch rounds
  • Parmesan cheese, for topping

Instructions

  1. Heat oven to 400° F.
