2-Week Summer Instant Pot Meal Plan
The hardest part of cooking, for me, is coming up with a meal plan and figuring out what I want to make for dinner. I’m sure there are some of you that love this process but for the rest of us I’ve got a useful tool for you today. Here is a menu plan with dinners that you can make in the Instant Pot and slow cooker. Put your time-saving counter appliances to good use this summer. It won’t heat up your kitchen and they’ll give you extra time to play.
I’ve used theme nights to make it easy to plan. You can easily switch these days around as per your preferences and what you have going on that week.
- Monday: Asian Flare
- Tuesday: Mexican foods
- Wednesday: Pasta
- Thursday: Seafood
- Friday: Beef
- Saturday: Grill night with an Instant Pot side
- Sunday: Comfort Foods
Week One:
Monday: Teriyaki Chicken Bowls in the Instant Pot or Slow Cooker. Teriyaki chicken, rice, pineapple chunks, shredded cabbage.

Tuesday: Mexican Pulled Pork in the Instant Pot or Slow Cooker. Serve the pork over salad greens with grated cheddar, salsa, avocados and tortilla chips (like a taco salad).

Wednesday: Greek spaghetti in the Instant Pot. This is an all in one meal but if you wanted you could serve a side salad with it.

Thursday: Smoked Sausage Country Boil in the Instant Pot or Slow Cooker. This is an all in one pot meal. You can add shrimp to it to make it for “seafood night.”

Friday: BBQ Beef Sandwiches in the Instant Pot or Slow Cooker. Serve with corn on the cob and green salad or fruit salad.

Saturday: Grill Night with Instant Pot Pasta Salad. Grill your favorite marinated meats and veggies and serve with Instant Pot Dill Pickle Pasta Salad.

Sunday: Ground Beef Stroganoff in the Instant Pot. Serve the stroganoff over egg noodles or mashed potatoes. Serve with a side of steamed broccoli.

Week Two:
Monday: Chicken Lettuce Wraps in the Instant Pot or Slow Cooker. Serve with eggs rolls or egg drop soup.

Tuesday: Mexican Stuffed Peppers in the Instant Pot or Slow Cooker. This is an all-in-one meal.

Wednesday: Homemade Spaghetti Sauce in the Instant Pot or Slow Cooker with pasta of your choice or spaghetti squash. Serve with a green salad.

Thursday: Tomato Basil Tilapia in the Instant Pot. Serve with quinoa or rice pilaf.

Friday: Grill night with Potato Salad. Grill your favorite marinated meats and veggies and serve with Instant Pot Potato Salad.

Saturday: Shredded Beef Street Tacos in the Instant Pot or Slow Cooker. Serve tacos with sliced avocados, lettuce, sour cream and diced tomatoes.

Sunday: Meatballs and Red Potatoes with Creamy Parmesan Sauce in the Instant Pot. This is an all-in-one-pot meal. You could add a side of cornbread or rolls.

What Pressure Cooker Do You Use?
I use a 6 quart Instant Pot Duo 60 7 in 1*. I love this Instant Pot because it has the yogurt making function which I use almost weekly. It has two pressure settings (high and low), and there are also little slots in the handles so that you can rest the lid there instead of putting it down on your counter-top.

Hi Karen. I am new to instapot and have used 3 of your recipes. They each turned out great. I have an 8 quart pot. So I just add an additional 3/4 of a cup of liquid. Thanks for the recipes. Please keep them coming.

Your recipes and plan seem like a great idea, especially during these very hot summer days. The Instant Pot & summer cooking are a great way to keep the heat down in the kitchen. Is there a way to download the meal plan and recipes to my computer? Maybe I’m getting old, but I could find a “button”. I did see it could be shared on FB, Pintrest, and by tweeting, but that doesn’t get them into my computer. Thank you.
