Instant Pot Amish Chicken Casserole
If you’re a fan of chicken and stuffing you’ll love this casserole. Greg said, “this is like Thanksgiving dinner all in one!” He loved it and said we should make it for Thanksgiving along with mashed potatoes, corn and rolls. I don’t know if I’d actually do that but I liked his enthusiasm!
I liked the addition of the carrots, celery and onions and you could totally add more, if you’d like. You can use whatever type of stuffing you like and whatever type of “cream of” soup you have on hand. Personally I like the turkey stuffing and the cream of chicken best.
Ingredients/Substitution Ideas
- Butter
- Carrots
- Celery
- Onion
- Kosher salt
- Black pepper
- Garlic powder
- Dried thyme
- Poultry seasoning
- Cooked, chopped chicken or turkey–I used rotisserie chicken. You can also cook your own.
- Chicken broth–or water and Better than Bouillon Chicken Base
- Box of turkey or chicken stuffing–I used Stovetop Stuffing brand
- Cream of chicken soup–you can also use cream of mushroom or cream of celery. If you want you can make your own from scratch.
Steps
- Sauté vegetables: Turn Instant Pot to sauté setting. When display says HOT add in the butter and let it melt. Add in the carrots, celery and onion and sauté for about 5 minutes. Stir in the salt, pepper, garlic powder, thyme and poultry seasoning. Turn off Instant Pot.
- Deglaze pot: Pour in the broth and scrape bottom of pot so that nothing is sticking.
- Layer in ingredients: Evenly add in the chicken. Sprinkle the stuffing over the top of the chicken. Spoon the cream of chicken over the stuffing mix. Don’t stir.
- Pressure cook: Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 1 minute. When time is up let pot sit for 5 minutes and then move valve to venting. Remove the lid.
- Serve: Gently stir. Scoop onto plates and serve.
Notes/Tips
- Serve with a green vegetable like broccoli, asparagus or brussels sprouts.
- I used my 6 quart Instant Pot*. You can also make this in a 3 or 8 quart pot.
- Store leftovers in an airtight container* in the refrigerator for up to 5 days.

Ingredients
- 1 Tbsp butter
- 1 cup chopped carrots
- 1/2 cup chopped celery
- 1 cup diced onion

I used the amount of chicken broth it said but my instapot kept alarming that I needed to add water. I added broth twice more with the same results. I ended up stopping it and the bottom was burnt. I had scraped the bottom when I added the broth the first time. What did I do wrong?

I too had the same problem. Followed the recipe exactly and got the dreaded burn message! I had to add another 1/2 cups of broth to it and stir it to scrape it off the bottom. Then I finished cooking it in a fry pan. That all made it edible but mushy. Would npt try it again. I think it needed more broth to begin with but I really don’t know what I did wrong either.

I wonder if you do not want to use cream soup would gravy work? making an envelope of gravy mix and putting that on top?

What if you you don’t use canned cream soup? What are my options? I can’t have gluten, MSG, or dairy and many canned cream soups contain gluten or msg.

I think I may already know the answer to this but I want to make sure. When adding the stuffing is it uncooked or cooked ? If it is uncooked do you just add the breadcrumbs and sprinkle the seasoning packet over the breadcrumbs?

Not my recipe but I think you could. Given the broth in there it will end up cooking just like it would in a pot or in the oven. Sounds delish and I want to try it!
