BBQ Mississippi Mud Chicken–an easy oven-baked chicken thigh recipe with barbecue sauce, ranch dressing and melted cheddar cheese for a family-friendly dinner that’s packed with flavor.

BBQ Mississippi Mud Chicken

I made two pans of this chicken for Skyler and his friends and it was all eaten in no time! The chicken thighs were tender and moist. The seasonings, bbq sauce, ranch and cheddar flavored each piece perfectly. Everything cooks on one pan, making cleanup easy on busy nights (especially if you line your pan with foil or parchment!). We served this alongside baked potatoes, corn and rolls. It was a perfect summer time dinner. Enjoy!

Ingredients/Substitution Ideas

  • Boneless skinless chicken thighs–or boneless skinless chicken breasts
  • Kosher salt–or sea salt
  • Black pepper
  • Garlic powder–or granulated garlic
  • Onion powder
  • Paprika
  • Barbecue sauce–your favorite barbecue sauce variety
  • Ranch dressing
  • Shredded cheddar cheese–or Colby Jack or Monterey Jack cheese

Steps

Heat oven to 400° F. Spray a baking sheet with non-stick cooking spray. 

Place the chicken pieces on the sheet. 

In a small bowl stir the salt, pepper, garlic powder, onion powder and paprika together. Sprinkle the seasoning evenly over each chicken thigh.

Use a baster brush to brush the barbecue sauce evenly over each piece of chicken.

Bake for 30 minutes. 

Drizzle a tablespoon of ranch over each chicken thigh. Then sprinkle each thigh with 2 Tbsp of shredded cheddar. Bake for 3 more minutes. 

Serve and enjoy!

Notes/Tips

  • Serve with baked potatoes and corn.
  • Consider lining the baking sheet with foil or parchment paper for easier cleanup.
  • For a low carb option use low carb bbq sauce.
  • Chicken thighs are forgiving and stay juicy, making them ideal for baking at higher temperatures. If your chicken thighs are particularly large, they may need an additional 5–10 minutes of cooking time. Check that the chicken reaches an internal temperature of 165°F before serving.
  • For a prettier presentation, drizzle the ranch in thin zig-zag lines over the barbecue sauce before adding the cheese.
  • This can be gluten free. Just make sure your ranch dressing and bbq sauce are gluten free.
  • I used my 6 quart Instant Pot*. You can also make this in a 3 or 8 quart pot.
  • Store leftovers in an airtight container* in the refrigerator for up to 4 days. Freeze cooked chicken in a freezer-safe container for up to 3 months. Thaw overnight in the refrigerator before reheating.

  • 2 1/2 pounds boneless skinless chicken thighs, trimmed of excess fats (this was 8 chicken thighs for me)
  • 1 tsp kosher salt
  • 1 tsp black pepper
