Neiman Marcus Sausage Casserole–a creamy, cheesy one-pot dinner made with sausage, Arborio rice, bacon, green onions and crunchy almonds for an easy family-friendly meal.

Neiman Marcus Sausage Casserole

Neiman Marcus Sausage Casserole

If you’re familiar with Neiman Marcus Dip, this casserole is inspired by those same flavors. The Arborio rice creates a creamy risotto-like texture without requiring constant stirring. It’s a great way to stretch a pound of sausage into a hearty meal that can feed the whole family. We loved this dish so much that we kept going back for more until the pan was empty! It is quite rich so a smaller portion paired with a salad or vegetable makes it a perfect meal. Next time I make it, I think I’ll add mushrooms and celery for even more flavor and texture. Enjoy!

Ingredients/Substitution Ideas

  • Ground sausage–I used Jimmy Dean brand
  • Water–or low sodium chicken broth for more flavor
  • Arborio rice–I buy this in the bulk section at Winco.
  • Cream of chicken soup–or cream of mushroom
  • Onion powder
  • Garlic powder
  • Hot sauce
  • Sour cream
  • Green onions
  • Sliced almonds
  • Bacon crumbles–or you can leave this out
  • Shredded cheddar cheese–or Monterey Jack or Colby Jack

Steps

Turn Instant Pot to sauté setting. When display says HOT add in the sausage and break it up. Brown for 5 minutes. Drain off excess grease.

Pour in the water and scrape bottom of pot so that nothing is sticking. Turn off Instant Pot. 

Sprinkle in the rice. Then add in the cream of chicken soup, onion powder, garlic powder and hot sauce.

Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set manual/pressure cook button to 5 minutes. When time is up let pot sit for 5-10 minutes and then move valve to venting. Remove the lid.

Stir in the sour cream, green onions, sliced almonds, bacon and cheddar.

Serve and enjoy!

Notes/Tips

  • Serve with a green salad, steamed broccoli, roasted asparagus or fresh fruit.
  • Arborio rice creates a creamy, risotto-like texture without requiring constant stirring. I buy my arborio rice in the bulk section at Winco. Other recipes you can make with arborio rice are Luscious Casserole and Instant Pot Pesto Chicken Risotto.
  • Freshly shred your cheese for the smoothest melting results.
  • I served my portion with extra hot sauce on top.
  • This recipe can be gluten free if you use gluten free cream of chicken soup (now available by Campbells).
  • I used my 4 quart Instant Pot*. You can also make this in a 6 or 8 quart pot.
  • Store leftovers in an airtight container* in the refrigerator for up to 4 days or in the freezer for up to 3 months.

Description

Ingredients

  • 16 oz ground sausage
  • 2 1/2 cups water
  • 1 cup arborio rice
  • 1 (10.5 oz) can cream of chicken soup
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1 Tbsp hot sauce
  • 1/2 cup sour cream
  • 4 green onions, sliced
  • 1/2 cup sliced almonds
  • 1/2 cup bacon crumbles
  • 1 cup shredded cheddar cheese

Instructions
