Bussin Bussin Potatoes

Bussin Bussin Potatoes

A few years ago when I first heard my son say the word “bussin” I was confused. I soon learned that bussin is slang for something tasty and when you say bussin bussin it’s even better. Whenever I make something that he likes he says it’s bussin. Today’s recipe earned the compliment of bussin bussin. Ha!

I do have to agree with him though. These potatoes are better than good. They are excellent. With the addition of a bit of sour cream and cream cheese you’re going to be sneaking bites right out of the pot. You’ll probably want to double the recipe!

Ingredients/Substitution Ideas

  • Russet potatoes–or Yukon gold potatoes (skins on is fine)
  • Butter
  • Sour cream–or plain yogurt
  • Cream cheese
  • Milk
  • Kosher salt
  • Black pepper
  • Garlic powder
  • Smoked paprika–or regular paprika

Steps

Peel and cube the potatoes into 1 inch cubes. Place into a steamer basket.

Pour 1 ½ cups of water into bottom of Instant Pot. Drop the steamer basket into the pot. Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 8 minutes. When time is up move valve to venting and remove the lid.

Discard the liquid in the Instant Pot. Pour the potatoes into the bottom of the Instant Pot liner. Add in the butter and let it melt in the hot potatoes.

Mash the potatoes. Stir in the sour cream, cream cheese, milk, salt, pepper and garlic powder.

Spread the potatoes out evenly and sprinkle with the smoked paprika.

You can serve immediately or you can get a “baked” casserole taste by placing the air fryer lid on top and baking at 350 for 10 minutes.

Notes/Tips

  • This recipe is easy to double for a crowd. Just double all the ingredients (still only 1.5 cups water underneath steamer basket) and keep the cooking time the same. It is so good you might want to double it even if you only are serving a few people!
  • Serve with any meat entree like steak, pork chops, barbecue chicken, etc. This also pairs well with corn on the cob and green salad and vinaigrette dressing.
  • I used my 6 quart Instant Pot*. You can also make this in a 3 or 8 quart pot.
  • Store leftovers in an airtight container* in the refrigerator for up to 5 days or in the freezer for up to 3 months.
  • Other recipes you can make with smoked paprika are Instant Pot Scalloped Potatoes And Ham and Instant Pot Smoky Sausage, Potato And Kale Soup.

Hi Sarah, aren’t these kids so fun? What I meant was it will be more like a baked oven casserole if you put the air fryer lid on. Both ways are delish!

You could boil the potatoes on the stove and then mash them. Stir in the ingredients and bake at 350 for 25 minutes. Should be great!

I’m not the cook, but I recommend, if you’ll b using it a lot, getting a steamer with legs so you can just sit it in there.

I have two steamer baskets one is metal and one is silicone and both sit up a little because they have legs. I think most steamer baskets are like this.
