Kentucky Potatoes–o’brien potatoes in a creamy sauce with cheese. These easy 6-ingredient potatoes can be made in the Instant Pot, Crockpot or the oven.

Kentucky Potatoes

Wow-eee! These potatoes are so tasty! Plus they only take a handful of ingredients and about 5 minutes of prep time. These potatoes are perfect side dish to a ham, turkey or grilled meat dinner. They can also be served as a breakfast casserole at a brunch.

I found the idea for these recipes at Happy Home Fairy. The original recipe called for a ton more sour cream and cream of potato soup. Honestly I think my version was plenty creamy and I didn’t miss the extra stuff at all.

You can make this recipe however you’d like…in the Instant Pot, Crockpot or oven. I made mine in the Instant Pot with an air fryer lid.

Ingredients/Substitution Ideas

  • Frozen o’brien potatoes with onions and peppers–you can also use plain frozen hashbrowns
  • Campbells cream of potato soup–or cream of chicken
  • Garlic powder
  • Pepper
  • Kosher salt
  • Sour cream
  • Shredded sharp cheddar cheese–or another cheese of your choice

Steps

Add potatoes, cream of potato soup, garlic powder, pepper, salt and sour cream into Instant Pot. Stir well.

If you have an air fryer lid: use the bake button at 350 for 20 minutes. Then stir in the cheese and bake for 10 more minutes. If you don’t have an air fryer lid: turn Instant Pot to the slow cook “more” or “high” setting and set it to 2 hours. Stir in the cheese and slow cook for another 30 minutes. 

Serve and enjoy!

Notes/Tips

  • Serve as a side dish to dinner or as a brunch side dish. These potatoes taste good with grilled meats or ham and a side of roasted broccoli.
  • I used my Duo Crisp 6 quart Instant Pot*. You can also make this in a 3 or 8 quart pot.
  • Store leftovers in an airtight container* in the refrigerator for up to 5 days or in the freezer for up to 3 months.
  • Other recipes you can make with sour cream are Instant Pot Monterey Spaghetti and Rodeo Casserole.

Description

O’brien potatoes in a creamy sauce with cheese. These easy 6-ingredient potatoes can be made in the Instant Pot, Crockpot or the oven.


Ingredients

Scale
  • 1 (26 oz) bag frozen o’brien potatoes with onions and peppers
  • 1 (10.5 oz) can Campbells cream of potato soup
  • 1 tsp garlic powder
  • 1 tsp pepper
  • 1 tsp kosher salt
  • 1/2 cup sour cream
  • 1 cup shredded sharp cheddar cheese

Instructions

Instant Pot Instructions:

  1. Add potatoes, cream of potato soup, garlic powder, pepper, salt and sour cream into Instant Pot. Stir well.
  2. If you have an air fryer lid: use the bake button at 350 for 20 minutes. Then stir in the cheese and bake for 10 more minutes. If you don’t have an air fryer lid: turn Instant Pot to the slow cook “more” or “high” setting and set it to 2 hours. Stir in the cheese and slow cook for another 30 minutes. 
  3. Serve and enjoy!

Slow Cooker Instructions:

  1. Add all ingredients into slow cooker and stir.
  2. Cover and cook on high for 2-3 hours, or until hot and bubbly.
  3. Serve and enjoy!

Oven Instructions:

  1. In a large bowl stir all ingredients together.
  2. Add to a greased 9×9 inch baking dish.
  3. Bake at 325 for 1 hour. Serve and enjoy!

    Making Instant Pot Greek Yogurt for the 1st time in YEARS. I have the Instant Pot Duo Nova. It doesn’t have an adjust button….. I found out after sautéing the milk to 180 deg. That when I added the starter to the milk at 92 deg. I accidentally hit the yogurt button twice and BINGO….. it said ‘Boil’ …now I know for next time. Your recipes are the BEST and I have looked for yours for years. I just wanted you to know this quirk too.

      weigh out 26 oz of a mixture of cubed potatoes, onions and peppers.. just like a bag of O’Brien potatoes

    Made tonight in oven in 8 x 8 at 325. did not thaw potatoes and were a bit crisp in finished dish. Flavors amazing though. Would be better to partially thaw I’m guessing. My top crust never browned like in photo. Will try it again though as I can see it has potential — bacon?!?

          The oven should be the same cooking time. Just cook it in a 9×13 inch pan instead of a square pan. The crockpot you’ll probably need the full 3 hours, maybe a half hour longer.

    I use Cream of Chicken soup in mine not the potato soup, since the recipe already has potatoes in it. I don’t use the O’Brien potatoes with the onions and peppers, just the regular frozen ones. I just cut up an onion for it. also it is better to thaw the potatoes than try and stir the frozen. Stirring frozen with everything else is too difficult. I mix in the cheese with everything else and then top it off with crumbled Corn Flakes. Delicious!!!!

    My husband and I teach a young adult class at our church (we are in our 50’s) and we love to have some of the single men come over for game night. We live beside an Army base so we always have young men who are far away from home. I love to cook good, stick to your ribs meals for them. This one was a winner!! One of the men is from Iowa so I thought he might like a potato casserole if some sort. I think he ate 3 helpings of this recipe! Thank you so much for your recipes. They are giving some young men a taste of home away from home. : )

      In my opinion it’s far better to thaw the potatoes first. It’s way too hard to stir the other ingredients with frozen potatoes. They don’t get covered like they should.
