Instant Pot Millionaire Potatoes
I know I have a lot of potato recipes on this site but in my opinion there is always room for more potatoes in life! These potatoes are another hit! You will love the creamy decadent potatoes that have a cheese crust on top. You’re going to love how easy they are to make. You just pressure cook the potatoes whole and then mash them up and then melt the cheese on top.
If you’d like to make these ahead of time I suggest just going through step 2 and then do the final steps right before eating. Once they are mashed they are ready to be eaten!
Ingredients/Substitution Ideas
- Red or russet potatoes
- Butter
- Heavy cream or half and half
- Garlic powder or 3 cloves of minced garlic
- Kosher salt
- Black pepper
- Grated gruyere or fontina cheese
- Chives or green onions
Steps
Wash potatoes and, if desired, peel them (I kept my peels on). Add 1 ½ cups of water into bottom of Instant Pot. Place a trivet in the bottom of the pot. Place potatoes on top of trivet.

Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 20 minutes. When time is up move valve to venting. Remove the lid.

Add the hot potatoes to a mixing bowl. Add in the butter, cream, garlic powder, salt and pepper.

Use a hand mixer to mix the potatoes until creamy.

Spread the potatoes into the bottom of the Instant Pot. Sprinkle the cheese on top.

Use an air fryer lid to bake at 350° F for 7 minutes until cheese starts to brown.
Garnish with chives and serve.

Notes/Tips
- Millionaire potatoes make a great side dish to a steak dinner. You can also serve with pork chops, chicken, roast beef, etc.
- I used my Duo Crisp 6 quart Instant Pot*. You can also make this in a 3 or 8 quart pot. My Instant Pot came with a metal trivet* which I used. If you don’t have an air fryer lid you can just let the cheese melt using the “keep warm” setting.
- You can easily double this recipe. Double ingredients but keep same cooking time. You do not need to double the amount of water underneath the trivet.
- This recipe is gluten-free.
- To make this low carb you can use 2 pounds of cauliflower florets in the place of potatoes (use a steamer basket if you have one). You only need to pressure cook for 3 minutes.
- Store leftovers in an airtight container* in the refrigerator for up to 5 days or in the freezer for up to 3 months.

- 5–6 medium red or russet potatoes
- 1/4 cup butter
- 1/2 cup heavy cream
- 1 tsp garlic powder
- 1 tsp kosher salt
- 1/2 tsp black pepper
- 1/2 cup grated gruyere or fontina cheese
- Chives, for garnish
