Natalie’s Potatoes–an easy Instant Pot recipe of cubed red potatoes in a sour cream sauce with cheese. A perfect side dish!

Natalie’s Instant Pot Potatoes

If you’re looking for a delicious potato side dish for your grilled meats I suggest these flavorful and easy to make red potatoes! The sautéed shallot plus the sour cream and seasonings just really coat the potatoes in a lot of flavor. If you’re serving a crowd I suggest doubling or tripling the recipe.

This recipe is my Instant Pot take on a recipe I found on Food.com. The original author said, “Good for a home cooked gathering or holiday side dish. Southern fare from the cookbook Turnip Greens in the Bathtub.” I significantly decreased the amount of butter, sour cream and cheese in my version. Even with these changes my version is still creamy and indulgent.

Ingredients/Substitution Ideas

  • Red potatoes
  • Shallot–or ¼ cup diced onion
  • Butter
  • Sour cream
  • Salt
  • Pepper
  • Garlic powder
  • Dried parsley
  • Cheddar cheese–or another type of cheese like colby jack, monterey jack, etc.

Steps

Wash the potatoes and cut them into half inch cubes. Place the cubed potatoes into a steamer basket*.

Pour 1 ½ cups water into bottom of Instant Pot. Drop the steamer basket into the Instant Pot.

Cover the Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 3 minutes. When time is up move valve to venting to remove pressure. Remove the lid. Move the potatoes out of the pot. Discard the water.

Turn Instant Pot to saute (normal) setting and melt the butter. Add in the shallot. Saute until soft and translucent. 

Stir in the sour cream, salt, pepper, garlic powder, parsley. Turn off Instant Pot.

Fold in the potatoes

…and cheese.

Serve and enjoy!

Notes/Tips

  • Serve these potatoes as a side dish to any grilled meats (steak, pork chops, hamburgers, chicken, etc.).
  • These potatoes are gluten-free.
  • You can also make these potatoes with peeled Russet potatoes or some Yukon gold potatoes.
  • I used my 6 quart Instant Pot*. You can also make this in a 3 or 8 quart pot.
  • Store leftovers in an airtight container* in the refrigerator for up to 5 days.
  • Other recipes you can make with red potatoes are Instant Pot Campfire Hash and Farmer’s Breakfast.
  • Make this a meal by stirring in a can of corn and some rotisserie chicken.

Description

Ingredients

  • 6 small to medium red potatoes
  • 1 shallot, minced
  • 2 Tbsp butter
  • 1 cup sour cream
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1/2 tsp garlic powder

    Hi Karen. all your recipes I’ve tried have been really great! what I’m looking for is a potato recipe with pepperoni and maybe dill? like a potato salad maybe? Do you have one like that? Thank you!

    This looks lovely, but is it designed to be eaten hot, or meant to be left to cool and eat as a potato salad on a warm day!
