Skyler’s Perfect Potatoes

My son Skyler loves these potatoes! He said, “they are absolutely delicious!” With only 5 ingredients they are a super fast and an easy side dish. The hardest part of this recipe is peeling and cubing the potatoes. But after that it’s all smooth sailing! Try serving these potatoes alongside your grilled meats this summer.

Ingredients/Substitution Ideas

  • Russet potatoes–or red potatoes
  • Sour cream
  • Onion soup mix–I used Lipton’s brand
  • Shredded cheddar–I like medium or sharp
  • Milk

Steps

Pour 1 ½ cups water into bottom of Instant Pot. Place potatoes into a steamer basket and drop the steamer basket into the Instant Pot.

Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 3 minutes. When time is up move valve to venting and remove the lid. 

Remove the steamer basket and set aside. Discard the water. Add sour cream, onion soup mix, cheese and milk into Instant Pot. Stir well, until combined. Fold in the potatoes until they are covered with the sauce.

Cover the Instant Pot with an air fryer lid and air fry at 400 degrees for 5 minutes. (If you don’t have an air fryer lid you can skip this step).

Serve and enjoy!

Notes/Tips

  • Serve as a side dish to ham, turkey, chicken, pork chops, steak, etc.
  • I like this silicone steamer basket* for cooking potatoes.
  • I used my Duo Crisp 6 quart Instant Pot*. You can also make this in a 3 or 8 quart pot.
  • If you don’t have an air fryer lid you can skip the browning step 3. Or you can scrape the potatoes into a 9×9 inch pan and bake at 425° F for 5-10 minutes in your oven.
  • This recipe can be gluten-free if you use a gluten-free onion soup mix.
  • Store leftovers in an airtight container* in the refrigerator for up to 5 days.

Description

Cubed potatoes in a cheesy sour cream and onion sauce made fast in your Instant Pot. With only 5 ingredients this recipe comes together in a snap.


Ingredients

Scale
  • 6 medium Russet potatoes, peeled and cut into 1/2 inch cubes
  • 1 cup sour cream
  • 1 (1 oz) packet onion soup mix
  • 1 cup shredded cheddar
  • 2 Tbsp milk

Instructions

    if I want to make this in the oven how long to bake and what temp?

      I would boil the potatoes on the stove in some water first until fork tender. Drain. Then stir the potatoes together with sour cream, onion soup mix, cheese and milk. Add the potatoes to a baking dish and bake at 350 for 25 minutes.

      Hi Jan, sorry you aren’t getting what you asked for. I just checked your subscription to make sure it was correct. Some of the recipe I make do have slow cooker instructions listed in the recipe card but this one unfortunately does not.

    A Quick Question Really….PLEASE HELP- I Follow Your Instant Pot Recipes Religiously- and ABSOLUTELY LOVE them!
    When You Say – IN a Recipe- Put on an Air Fryer Lid – to my Instant Pot? I’m not sure what that means? I have one of the Newest Models of Instant Pots – I have the Steamer basket and my Instant Pot has every setting imaginable… Can you help me on this please?

      Or, you can dump your finished dish into an ovenproof dish and stick it under the broiler.

      Hey Tracy, if you don’t have two lids for your Instant Pot it’s okay…you can still make the recipe. If you had an air fryer lid you would know it. They are something that is placed on top of the Instant Pot (instead of the regular lid) that serves as almost a broiler of sorts.
