Instant Pot Garlic Butter Corn on the Cob

I am so happy to have discovered that you can make corn on the cob in the Instant Pot. And it is SO fast and easy! This is a complete game changer for me. I never know how long to boil corn and it always seems to get overdone. Now I can get perfect corn every single time.

Plus with a teeny tiny bit of extra effort you can make that corn go from good to great by whipping up some garlic butter. My family inhaled this corn they loved it so much.

The only “special” equipment you need to make this instant pot garlic butter corn on the cob is a trivet. The corn is steamed, not boiled, so it’s good to lift it out of the water in the bottom of the pot. My Instant Pot came with a trivet. You can also order one on Amazon*.

I challenge you to use your Instant Pot to make corn this week. I don’t think you’ll regret it.

What Pressure Cooker Did You Use?

To make Instant Pot Garlic Butter Corn on the Cob I used my 6 quart Instant Pot Duo 60 7 in 1*. I love this Instant Pot because it has the yogurt making function which I use almost weekly.  It has two pressure settings (high and low), and there are also little slots in the handles so that you can rest the lid there instead of putting it down on your counter-top.

Description

Sweet corn is slathered with garlic, butter, salt and pepper. The easiest and tastiest corn on the cob! You’ll never go back boiling corn on the stove again. 


Ingredients

Scale
  • 4–6 ears of corn, husked
  • 1 cup water
  • 2 Tbsp soft, melty butter
  • 1 tsp minced garlic
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp dried parsley

Instructions

  1. Pour water into the bottom of the Instant Pot. Place trivet in the Instant Pot.
  2. Place corn on top of the trivet. Lay it on top of each other crosswise.
  3. Cover the pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 2 minutes on high pressure. When the time is up perform a quick release by moving the valve to venting. Remove the lid.
  4. Make the garlic butter by stirring together the butter, garlic, salt, pepper and parsley until smooth. Slather the butter on the corn on the cob and enjoy.  

Notes

I used my 6 quart Instant Pot. If you use an 8 quart pot change the water to 1 ½ cups. 

To make in the slow cooker: Place corn in slow cooker and pour in 1/2 cup water. Cook on high for 2 to 3 hours or on low for 5 to 6 hours, until the corn is tender. Use a pair of tongs to transfer the corn onto a plate. Make the garlic butter by stirring together the butter, garlic, salt, pepper and parsley until smooth. Slather the butter on the corn on the cob and enjoy.

    The first time I made this, I used 2 minutes, but the corn wasn’t done. Last night I cooked it for 3 minutes and it was just right. I live in high altitude state so that was probably the issue.

    Karen, do you think you could use the frozen corn on the cob (half ears), without defrosting them? If so, would that change the pressure cooker time? I would think not, but it would just take longer to come to pressure…Or do you think I would need to add time?

    Karen, I’ve wondered a lot about this: When using products that have been in the refrigerator, such as meats, eggs, or … whole heads of cauliflower, cabbage…CORN ON THE COB, etc. …does this affect the times in the Instant Pot? Does the food item need to be a room temp to achieve the best results? Thanks for your reply. : )

      This is a good question and I haven’t really considered it. I would say it doesn’t matter much. The room temp items would come to pressure quicker. The colder the foods the longer it would take to come to pressure.

          It is raw garlic. If that’s too strong for you you could use a little garlic powder.
