Texas Roadhouse Roadkill–Seasoned ground beef, mushrooms and onions with monterey jack cheese. An easy Instant Pot deconstructed version of the steakhouse favorite.

Instant Pot Texas Roadhouse Roadkill
If you’ve been to Texas Roadhouse you know there is something called Texas Roadkill on the menu. It is chopped steak smothered with sautéed onions, sautéed mushrooms and jack cheese. Despite the unappetizing name, it’s a tasty favorite. My at-home, easy Instant Pot version uses ground beef but still has all the flavor of the restaurant favorite. If you’re a fan of beef and mushrooms you’ll really love this dinner.
You can easily double this recipe! You may want to so you can have some leftovers the next day. This dinner tastes good served over a piece of toast or some mashed potatoes. If you want to keep the dinner lower carb then try serving over mashed cauliflower.
Ingredients/Substitution Ideas
- Lean ground beef–or any other ground meat that you like
- Onion–or shallot
- Beef or Chicken Broth–or water and Better than Bouillon
- Mushrooms
- Lawry’s seasoned salt–or another brand of seasoning salt
- Worcestershire sauce
- Liquid smoke
- Black pepper
- Butter
- Monterey jack cheese–or provolone or mozzarella
Steps
Turn Instant Pot to saute setting. When display says HOT add in the ground beef and break it up. Add in the onions. Brown the beef for about 5 minutes. Drain off excess grease.

Pour in the broth and scrape bottom of pot so that nothing is sticking. Turn off Instant Pot.
Dump in the mushrooms. Dump in the seasoned salt, Worcestershire, liquid smoke, pepper and butter.

Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 3 minutes. When time is up move valve to venting and remove the lid.

Stir in the cheese.

Scoop onto plates and serve. We like to serve over toast or mashed potatoes.

Notes/Tips
- Serve over toast or mashed potatoes. Serve with some green beans or another vegetable.
- This recipe can be gluten free if you use gluten free Worcestershire sauce.
- This recipe is fairly low carb.
- How can this come to pressure with only ¼ cup of broth? The mushrooms put off a lot of liquid that helps bring the pot to pressure.
- I used my 6 quart Instant Pot*. You can also make this in a 3 or 8 quart pot.
- Store leftovers in an airtight container* in the refrigerator for up to 5 days or in the freezer for up to 3 months.

I regularly get this at Texas Roadhouse when I have the patience to wait for a table, even with call ahead. This was just as good. I had to cook the mushrooms separately because my wife of 50 years doesn’t like mushrooms (yea, I don’t know how our marriage has lasted this long)..
