Instant Pot Texas Cowboy Soup–an easy soup with hamburger, smoked sausage, corn, beans, potatoes and more! This soup has lots of flavor and will fill up your little cowgirls and cowboys!

Instant Pot Texas Cowboy Soup
You may have had cowboy soup but have you tried TEXAS cowboy soup? It is similar but with a couple of flavor-enhancing additions. The addition of smoked rope sausage and green chilies just brings this already awesome soup to a whole level.
This soup is chock full of goodness…it starts with ground beef and sausage and then you add in all the things…corn, tomatoes, green beans, pinto beans, green chilies, potatoes and onions. This is a thick and chunky soup with goodness in each bite.
Ingredients/Substitution Ideas
- 1 pound lean ground beef–I used 85/15. You can also use ground turkey.
- 1 cup diced onion–yellow or white. Try diced frozen onions for convenience. No crying while cutting!
- 2 cups chicken broth–or beef broth. Try using 2 cups water with 2 teaspoons of Better than Bouillon Chicken Base.
- 1 (14 oz) package smoked sausage, sliced into quarter inch rounds–you can use beef or pork. Other types of sausages you can use are kielbasa, polish sausage, andouille sausage etc.
- 2 medium Russet potatoes, cut into cubes–peeled or unpeeled. You can also use other types of potatoes.
- 1 (14. 5 oz) can diced tomatoes, with liquid–crushed or stewed tomatoes are also an option
- 1 (14.5 oz) can pinto beans, with liquid–or ranch style beans or chili beans
- 1 cup frozen corn–or a can of corn that has been drained
- 1 (4 oz) can diced green chilies–I like mild but if you like more heat you can use normal
- 1 (14.5 oz) can green beans, drained–you can also use frozen green beans
- 1 Tbsp chili powder
- 1 Tbsp cumin
How to make the soup
Instant Pot Instructions:
- Brown the beef: Turn Instant Pot to saute setting. When displays says HOT add in the beef and break it up. Add in the onions. Saute for about 5 minutes. Pour in the broth and scrape bottom of pot so that nothing is sticking (this will help prevent the burn error message).
- Layer in the ingredients: Layer in the following ingredients without stirring: sausage, potatoes, tomatoes, pinto beans, corn, green chilies, green beans, chili powder and cumin.
- Pressure cook: Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the SOUP button to 4 minutes. When time is up let the pot sit for 10 minutes and then move valve to venting. Remove the lid.
- Serve: Stir well. Taste test and adjust seasoning as needed. Ladle into bowls and serve.
Slow Cooker Instructions:
- Brown the beef: Heat a pan over medium high heat. Add in the beef and break it up. Add in the onions. Saute for about 5 minutes. Add to the slow cooker. (If you have a slow cooker with a stovetop or saute function you can do this step right in the crock).
- Add in ingredients: Add in the broth, sausage, potatoes, tomatoes, pinto beans, corn, green chilies, green beans, chili powder and cumin. Stir.
- Slow cook: Cover and cook on low for 6-8 hours. (if you’re using the slow cook function on the Instant Pot then use the “more” setting).
- Serve: Stir well. Taste test and adjust seasoning as needed. Ladle into bowls and serve.
What to serve with Texas Cowboy Soup
We served our soup with homemade rolls. Actually they were these homemade hamburger buns that don’t need proofing time. They are my go to when I want a homemade bread but don’t have time for letting the dough rise. I make about 24 small rolls (instead of the 12 suggested). I also use half whole wheat flour and half white to make them a little more healthy. Another choice is to make homemade cornbread and serve it with butter and honey. You can’t get much better than that!

How to store leftovers
Store leftovers in an airtight container* in the refrigerator for up to 5 days. You can also freeze leftovers for up to 3 months.
Freezer Meal
If you’d like this also makes a good candidate for a freezer meal. Add browned hamburger and all other ingredients EXCEPT the broth and potatoes to a gallon size zipper bag. Freeze until ready to cook. Thaw overnight in the refrigerator. Add to the Instant Pot along with the broth and potatoes. Cook according to directions in the recipe card.

If I could give this more stars in would, I made this back in November with my son and grandson came down to split wood… my grandson 12yrs old had 3 servings needless to say he loved it!

I have the instant pot pro. there is no soup setting. How long do in cook it and what temperature? It goes to 30 miniutes if I use pressure cook and it comes to soup.
Just use the pressure cook setting on high pressure instead of soup button and use a 4 minute pressure cook time.
Karen: can this be made also as a prep soup o r4-45 days stored in the fridge?

Yes I believe that would be okay. I would not cut up the potatoes until you are ready to cook.
