Swamp Potato Casserole–an easy Instant Pot or slow cooker dinner made with smoked sausage, tender potatoes, green beans, and savory onion soup mix for a one-pot meal.

Swamp Potato Casserole
Some people call these swamp potatoes, I’m not exactly sure why, but I do know they’re delicious. This is one of those recipes that only takes a few minutes to throw together, yet tastes like you put in way more effort. Using onion soup mix keeps the ingredient list short while adding tons of flavor, and it melts right into the potatoes as everything cooks. The fresh green beans add a nice pop of color and a little extra nutrition, making this an easy, no-fuss dish you’ll want to make again and again. Enjoy!
Ingredients/Substitution Ideas
- Olive oil–or canola, vegetable, avocado oil or butter
- Beef smoked sausage–or turkey smoked sausage
- Onion–or shallot
- Garlic–or 1 tsp garlic powder
- Chicken broth–or water and Better than Bouillon chicken base
- Russet potatoes–or Yukon Gold potatoes
- Onion soup mix
- Fresh green beans–or frozen green beans
Steps
Turn Instant Pot to sauté setting. When display says HOT add in the oil and swirl around. Add in the sausage and brown on each side. Add in the onion and sauté for 3 minutes. Stir in the garlic.

Pour in the broth and scrape bottom of pot so that nothing is sticking. Turn off Instant Pot.
Add in the potatoes and sprinkle the potatoes with the onion soup mix. Add the green beans on top.


Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set manual/pressure cook button to 2 minutes. When time is up let pot sit for 5 minutes and then move valve to venting. Remove the lid.

Gently stir. Serve and enjoy!

Notes/Tips
- Serve with cornbread and a side salad.
- This recipe can be gluten free if you use gluten-free onion soup mix.
- Want a little kick? Add a pinch of Cajun seasoning or crushed red pepper flakes.
- Feel free to add other vegetables like bell peppers, carrots, or even a handful of spinach stirred in at the end.
- I used my 4 quart Instant Pot*. You can also make this in a 3, 6 or 8 quart pot.
- Store leftovers in an airtight container* in the refrigerator for up to 4 days. This dish can be frozen, but the potatoes will be softer once thawed.

Slow Cooker Instructions:
- Heat a pan over medium high heat. Add in the oil and swirl around. Add in the sausage and brown on each side. Add in the onion and sauté for 3 minutes. Stir in the garlic. Transfer to the slow cooker.
- Stir in the broth, potatoes, onion soup mix and green beans.
- Cover and cook on low for 3-4 hours.
- Gently stir. Serve and enjoy!

Wow, super delicious! This was a big hit with my two guys and myself…..the smokiness from the sausage plus the onion soup mix added such great flavor to the potatoes and beans. Even though snipping the ends from the fresh green beans and cutting them up isn’t my favorite thing to do (I buy a big bag for multiple uses) the yumminess of the end results made it worthwhile. Great recipe!

Not a comment, but a question. My husband is gluten-free, what can I use in place of the dry onion soup mix?
I would look for GF dry onion mix, make homemade version. She has a similar recipe called Cajun sausage- potatoes and green beans which is GF.
