Redneck Casserole

This is ooey-gooey comfort food! Franks and beans with a tater tot topping is a family favorite! I found this recipe on Food.com and adapted it to the Instant Pot. The original author stated, “My brother and I cook up this quick and easy recipe every Friday night when my mom is out with her friends/family. It’s yummy yummy and has the potential to evolve into much more…but we like it just the way it is. I hope you enjoy!!”

Ingredients/Substitution Ideas

  • Olive oil–or canola oil, vegetable oil
  • Smoked sausage–I used beef smoked sausage
  • Baked beans–whatever brand you like best
  • Bacon crumbles–or fry up a few strips of bacon
  • Sharp cheddar cheese–I like to shred it off the block
  • Tater tots–ore-ida brand is best

Steps

Turn Instant Pot to saute setting (“more”). When display says HOT add in the oil and sausage. Brown for about 3 minutes. 

Stir in the baked beans, bacon and cheese. 

Sprinkle the tots on top in one layer.

Place air fryer lid on top of Instant Pot. Air fry for 10 minutes at 400 degrees, or until tots are crispy and browned on top.

Serve and enjoy!

Notes/Tips

  • Serve with green salad, steamed vegetables, cole slaw, corn on the cob or fruit salad.
  • I used my Duo Crisp 6 quart Instant Pot*.
  • This recipe can be gluten free if you use gluten-free tater tots and baked beans.
  • Variation idea: try using chili instead of baked beans.
  • Store leftovers in an airtight container* in the refrigerator for up to 5 days or in the freezer for up to 3 months. This casserole is best the first day because of the crispy tater tots but you can pick the tots off and store the rest in the fridge.

Description

Baked beans and smoked sausage with cheese, bacon and crispy tater tots.


Ingredients

Scale
  • 1 tsp olive oil
  • 6 ounces smoked sausage, sliced
  • 1 (28 oz) can baked beans
  • 1/4 cup bacon crumbles
  • 1/2 cup shredded sharp cheddar cheese
  • 3 1/2 cups (13 ounces) tater tots

Instructions

Instant Pot with Air Fryer Lid Instructions:

  1. Turn Instant Pot to saute setting (“more”). When display says HOT add in the oil and sausage. Brown for about 3 minutes. 
  2. Stir in the baked beans, bacon and cheese. 
  3. Sprinkle the tots on top in one layer. Place air fryer lid on top of Instant Pot. Air fry for 10 minutes at 400 degrees, or until tots are crispy and browned on top.
  4. Serve and enjoy!

Stove/Oven Instructions:

  1. Preheat oven to 450 degrees F.
  2. Heat an oven safe pan over medium high heat on the stove. Add in the oil and sausage. Brown for about 3 minutes. 
  3. Stir in the baked beans, bacon and cheese. 
  4. Sprinkle the tots on top in one layer. Place pan in the oven. Bake for 30 minutes.
  5. Serve and enjoy!
  • Method: Instant Pot with Air Fryer Lid or Stove/Oven

    I made this almost “as is” but wanted a heartier meal as I was feeding teenage boys, so I added in 1 and 1/2 lbs. of lean ground beef that was sautéed and seasoned with S&P and 3 tsp. of chili powder…served with corn on the cob and cornbread muffins, it was a huge hit! 😋
