Hog Maw Casserole–a sausage and potato dinner made with browned ground sausage, smoked sausage slices, tender potatoes and simple seasonings. It’s all cooked together in the Instant Pot or slow cooker and finished off with a light gravy that pulls everything together.

Hog Maw Casserole
Today’s recipe is adapted from Amish 365. Traditional hog maw is “a staple at Pennsylvania Dutch and Amish tables for generations, particularly popular as a New Year’s Day dish – many families believe it brings good luck if you eat at least a small piece on January 1st.” This version is made as a one pot meal made in the Instant Pot or slow cooker. The Amish like to serve hog maw with sauerkraut or applesauce on the side. Because this is sausage on sausage my boys, of course, loved it. It’s hearty and flavorful.
Ingredients/Substitution Ideas
- Ground Sausage–I used Jimmy Dean
- Diced Onion–fresh or frozen
- Beef Smoked Sausage–or turkey smoked sausage
- Chicken Broth–or water and Better Than Bouillon chicken base
- Russet Potatoes–or red potatoes
- Dried Parsley
- Kosher Salt
- Black Pepper
- Garlic Powder
- Dried Thyme–or poultry seasoning
- Cornstarch
Steps
Turn Instant Pot to sauté setting. When display says HOT add in the ground sausage and break it up. Add in the onions. Brown for 5 minutes. Stir in the smoked sausage.

Pour in the broth and scrape bottom of pot so that nothing is sticking. Turn off Instant Pot.
Peel the potatoes and cut into 1 inch pieces. Add them evenly into the Instant Pot.
Sprinkle the potatoes with the parsley, salt, pepper, garlic powder and thyme.

Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set manual/pressure cook button to 3 minutes. When time is up let pot sit for 5 minutes and then move valve to venting. Remove the lid.

If desired, make a cornstarch slurry. Stir together 1 Tbsp of cornstarch with 1 Tbsp of water. Turn Instant Pot to sauté setting. Stir the slurry into the pot to thicken the sauce. Once thickened turn off Instant Pot.

Serve and enjoy!

Notes/Tips
- Serve with steamed broccoli or green beans.
- This recipe is gluten free and dairy free.
- Try adding baby carrots in when you add in the potatoes for some extra color and nutrition.
- I used my 6 quart Instant Pot*. You can also make this in a 4 or 8 quart pot.
