Colorblind Love Casserole

This casserole comes from Color Blind Love on Amish 365. I changed it up to make it in the Instant Pot and my version was soooooo great! I loved it and wanted to eat the whole pot by myself. It’s creamy orzo with bites of flavorful sausage and some green beans (I used frozen). With only a handful of ingredients and a few minutes you can get a delicious dinner that kids and adults both love. Try this one out soon, you’ll love it.

Ingredients/Substitution Ideas

  • Butter–or oil
  • Smoked sausage–I like beef smoked sausage
  • Chicken broth–or beef broth
  • Orzo–I buy orzo in the bulk bins at Winco
  • Fresh green beans–or frozen green beans
  • Milk–or cream
  • Sharp shredded cheddar–or another type of cheese you like
  • Dijon mustard

Steps

Turn Instant Pot to saute setting. When display says HOT add in the butter and let it melt. Add in the sausage and brown for a couple minutes.

Pour in the broth and scrape bottom of pot so that nothing is sticking. Turn off Instant Pot. 

Sprinkle in the orzo and green beans. 

Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 1 minute. When time is up let pot sit for 5-10 minutes and then move the valve to venting. Remove the lid.

Stir in the milk and cheddar and dijon. 

Serve and enjoy!

Notes/Tips

  • Serve with a green salad, fresh fruit and a dinner roll.
  • I used my 3 quart Instant Pot*. You can also make this in a 6 or 8 quart pot.
  • Store leftovers in an airtight container* in the refrigerator for up to 5 days or in the freezer for up to 3 months.

Description

Cheesy orzo with smoked sausage and green beans made fast in the Instant Pot. 


Ingredients

Scale
  • 1 Tbsp butter
  • 6 ounces smoked sausage, sliced
  • 1 cup chicken broth
  • 4 ounces orzo (about 3/4 cup)
  • 1 cup fresh or frozen green beans
  • 1/4 cup milk
  • 2 oz sharp shredded cheddar
  • 1/2 tsp dijon mustard

Instructions

    Made this and family loved it. My 6yr granddaughter wants me ro make it again with broccoli instead. she’s not a fan of green beans.

    I doubled the recipe as I had about 12 ounces of sausage. I substituted leftover roasted asparagus for the green beans. It turned out delicious.

    Could you substitute rice for the orzo? What changes would need to be made to the broth or cooking time?

      Yes! I would cook for 5 minutes with a 10 minute natural pressure release. Use 1.5 cups broth and 1 cup of white rice.

    Made this dish tonight, July 9th and it turned out yummy. It was super easy to make and I added green onions and mushrooms to mine because I needed to use them up. I did use 6oz. of orzo and a 12oz beef kielbasa as well, since I had a few more mouths to feed. Very good dish Karen, especially when you don’t have a lot of time on your hands!

      yes kielbasa will work. I like to use beef smoked sausage which is sold next to the kielbasa.

    Looking for salmon casserole with canned salmon. also has peas & carrots, butter,, milk, bread crumbs, eggs, dill, onion powder, garlic powder,, onions, grern peppers, cream of mushroom doup and grated cheddar cheese in it. it is baked in 375 oven for about 45 minutres, I think. i csnnot find recipe. will someone help me?

      Look at (I’m hungry for that) (website) the casserole there should match your ingredients that you want to use. I might make that gift a pot luck yoo.

      Treat canned salmon like canned tuna, look for tuna casseroles, ,1 jar of canned salmon is usually double the tuna, so look for a recipe that calls for two cans of tuna. Good luck
