Dumb Casserole–an easy Instant Pot meal with smoked sausage, Spanish rice, tomatoes, mushrooms and zucchini.

Dumb Casserole
This is the type of recipe that’s so easy to make it is dumb easy! This dinner was well loved at my house and there were no leftovers. The use of Rice-A-Roni makes everything comes together quickly because you have the rice and seasonings all together in one box. I loved the addition of some veggies (zucchini and mushrooms) for some extra flavor and nutrition. This is your new go-to recipe for busy weeknights. Enjoy!
Ingredients/Substitution Ideas
- Olive oil–or canola, vegetable
- Beef smoked sausage–or kielbasa, andouille
- Onion–yellow or white
- Mushrooms
- Chicken broth–or beef broth
- Rice-a-Roni Spanish Rice
- Crushed tomatoes
- Zucchini
Steps
Turn Instant Pot to saute setting. When display says HOT add in the oil and swirl it around. Add in the smoked sausage and brown for about 3 minutes. Add in the onions and mushrooms and saute for 3 minutes.

Pour in the broth and scrape bottom of pot so that nothing is sticking. Turn off Instant Pot.

Sprinkle in the Rice-A-Roni. Dump tomatoes over the top. Sprinkle the seasoning packet over the top of the tomatoes.


Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set manual/pressure cook button to 5 minutes. When time is up let pot sit for 10 minutes and then move valve to venting. Remove the lid.

Stir in the zucchini. Serve and enjoy.


Notes/Tips
- Serve with black beans and corn.
- If you don’t like mushrooms or zucchini you can leave them out.
- Add a pinch of smoked paprika or cayenne for some heat.
- I used my 6 quart Instant Pot*. You can also make this in a 3 or 8 quart pot.
- Store leftovers in an airtight container* in the refrigerator for up to 4 days or in the freezer for up to 3 months.
