Instant Pot Angela’s Potatoes
If you are a fan or au gratin and scalloped potatoes but don’t want to wait for an hour for them to cook in the oven you’re going to love this easy recipe for sliced potatoes in a creamy sauce. The secret to this recipe that sets it apart from other potatoes is the use of ranch dressing mix. The mix gives it a boost of fun flavor that you’re going to love. These potatoes are a perfect side dish to so many dinners. Try making these potatoes as a side to ham, steak or chicken breasts.
Ingredients/Substitution Ideas
- Russet potatoes–or red potatoes or yellow potatoes
- Butter
- Flour
- Milk
- Dry ranch dressing mix–I used Hidden Valley brand
- Cheddar cheese–I like sharp for more flavor
Steps
Pour 1 ½ cups of water into bottom of Instant Pot.

Add potatoes into a steamer basket. Drop the steamer basket into the bottom of the Instant Pot.

Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 2 minutes for al dente potatoes or 3 minutes for soft potatoes.

When time is up move valve to venting and remove the lid. Set aside steamer basket for later. Dump out the water in bottom of pot and dry out the pot.
Turn Instant Pot to saute setting. When display says HOT add in the butter and let it melt. Add in the flour, a tablespoon at a time, stirring well with a whisk. Let the mixture get bubbly.

Slowly add in milk, a little bit at a time, whisking as you go. Whisk in the ranch dressing mix. When the sauce gets thickened turn off the pot.

Fold in the potatoes and cheese. Cheese will get melty.

Keep the Instant Pot on keep warm setting until ready to serve.

Notes/Tips
- Serve as a side dish to any dinner. For example these cheesy potatoes goes well with ham, corned beef, steak, pork chops, chicken breast, pot roast, etc. You can also serve it alongside some vegetables like spinach, broccoli or asparagus.
- I used my 6 quart Instant Pot*. You can also make this in an 8 quart pot. This recipe can easily be doubled or halved. Adjust ingredients accordingly but keep the same amount of water (1.5 cups) underneath the steamer basket.
- I used my Avokado silicone steamer basket* to cook the potatoes in.
- I literally took a measuring tape to my potatoes to see how thick I cut them. My potatoes were cut into quarter inch rounds. If yours are thicker or thinner than that the cooking time will probably vary.
- Store leftovers in an airtight container* in the refrigerator for up to 5 days or in the freezer for up to 3 months.
- I started with 3 tablespoons of ranch dressing mix but I wanted a bit more flavor so added about 1 more tablespoon.

Karen, If halving the recipe could/should I use half the amount of water specified?
Keep the same amount of water listed below the steamer basket so that it can come to pressure correctly.
I made this tonight. The sauce got Really Thick very fast. I added a little bit more milk but still thick while mixing in the taters. I could have added more but I was tending to other parts of the meal. Really quick and easy potato dish. End result was very tasty. Hey it’s potatoes. I used my homemade ranch seasoning

I use a collapsible metal strainer instead of the steamer basket (I don’t have one either).
I was wondering if you are able to make this same recipe but in a crockpot? If so what would change besides the obvious that it would take a lot longer.

yes you can leave it out but it won’t have much flavor so you’ll want to add in some seasonings and salt and pepper
