Easter Potatoes (Instant Pot or Crockpot Recipe)

Everyone loves the cheesy potatoes that go along with an Easter ham dinner! This version is suuuuper easy and has really great flavor with the addition of a special ingredient–onion dip mix. This is a great recipe to prep ahead of time and let cook slow and low in your Instant Pot on the slow cook setting or you can cook it in your crockpot. They stay good on the keep warm setting for several hours.

Ingredients/Substitution Ideas

  • Frozen southern style hashbrown diced potatoes–you can also use grated hashbrowns
  • Onion dip mix–don’t confuse with onion soup mix
  • Cream of chicken soup–or cream of mushroom or cream of celery soup or you can make your own
  • Sour cream–or plain yogurt
  • Flour–to stabilize the sour cream
  • Shredded cheddar cheese–or colby jack

Steps

In a small bowl stir together the sour cream and flour (this will help stabilize the sour cream). In your Instant Pot or Crockpot add the potatoes (no need to thaw the potatoes)…

and the onion dip mix…

and the cream of chicken soup and sour cream mixture.

Stir well until potatoes are coated.

Cover Instant Pot or Crockpot. Set Instant Pot to slow cooker setting on high for 4 hours (or your Crockpot to low for 4 hours).

Sprinkle the cheese on top and let it melt (I used an air fryer lid to speed up this process).

Serve and enjoy!

Notes/Tips

  • Serve with ham, roasted chicken or turkey, pork chops, steak, etc and any sides of veggies you like. We always love serving asparagus for Easter dinner.
  • I used my 6 quart Instant Pot*. You can also make this in a 3 or 8 quart pot, or any size of Crockpot.
  • Store leftovers in an airtight container* in the refrigerator for up to 5 days. These do not freeze too well because of the sour cream.
  • Other recipes you can make with sour cream are Instant Pot Ranch Chicken and Instant Pot French Onion Potato Bake.

Would you happen to have an idea for a flour replacement to make these gluten free? I know there’s gluten free flour and cornstarch, but wasn’t sure if either of those act as a stabilizer.

I would use 1 Tbsp of cornstarch in the place of the flour.

Karen, I’m confused. Does this mean that these potatoes cannot be made with the Instant Pot – only with a crock Pot? I use one of your recipes at least 3 times a week and usually more, not that this one would be used that much but it looks like it will be great if I know how to make it properly!!

    Thanks in advance for clarification.

Hi Janet, you can make it in the Instant Pot but you’ll use the slow cook setting on the Instant Pot. Does that make sense?

Would have been nice to get this recipe a couple of days before Easter Sunday instead of at 1:30 PM on Easter Sunday.

Love your site and have made many recipes… Question about this one…
You have the IP cooking time at 4 hours on the slow cooker setting. Is there a setting and adjusted time that we can use if we don’t have a slow cooker setting?

    Thanks!

Oh shoot! Does your Instant Pot not have a slow cook setting on it? You’ll have to use a slow cooker/crockpot instead. If you don’t have that you could bake in the oven. Stir the mixture together in a mixing bowl and then scrape into a 9×13 inch baking dish. Bake at 350 for 45 minutes. Add cheese and bake for 5 more minutes.
