Instant Pot Spinach and Ravioli Lasagna—an easy 5 ingredient dinner! Cheese ravioli, spinach, pesto, mozzarella cheese and alfredo sauce layered in a dish and cooked until hot and bubbly.

Instant Pot Spinach and Ravioli Lasagna

This is such an easy 5-ingredient dinner that everyone absolutely loves. It uses shortcuts like jarred alfredo sauce and frozen raviolis. It’s perfect for a busy night when you want a hot meal but don’t want to spend a lot of effort.

Can I use red sauce instead of alfredo sauce? Yes, for sure. Use any jarred pasta sauce that you like.

Does it matter what type of ravioli I use? I used Kroger mini frozen cheese raviolis. You can use any type of frozen ravioli that you like.

Can I add chicken? Yes you can. Use cooked, seasoned, cubed chicken (rotisserie works well) in this recipe. Just layer about 1-2 cups in with the alfredo sauce.

Can I use frozen spinach? Yes, thaw the spinach and drain out excess water. then layer as directed in the recipe.

Why can’t I make it directly in the Instant Pot? Because this recipe doesn’t have enough liquid the pot won’t be able to come to pressure and the pasta and white sauce will burn on the bottom of the pot. By using the pot-in-pot (PIP) method you are able to PIP allows you to pressure cook desserts, casseroles and other foods that don’t contain much liquid. PIP allows you to cook dishes that tend to burn and scorch (see my Instant Pot Burn article).

What equipment did you use? I used my 6 quart Instant Pot Duo 60 7 in 1*, a 3 quart IP liner* inside my 6 quart pot and the OXO trivet/sling*. These 3 items are my go to accessories for pot-in-pot Instant Pot casseroles!

Instant Pot Spinach and Ravioli Lasagna

Description

An easy 5 ingredient dinner! Cheese ravioli, spinach, pesto, mozzarella cheese and alfredo sauce layered in a dish and cooked until hot and bubbly. 


Ingredients

Scale
  • 6 oz spinach
  • 1/2 cup pesto
  • 1 (14.5 oz) jar alfredo sauce or homemade (Bertoli or Prego are my favorite brands)
  • 1 (25 oz) bag frozen ravioli
  • 1 cup grated mozzarella cheese
  • Optional: parmesan cheese and fresh basil, chopped for serving

Instructions

Instant Pot Instructions:

  1. Chop the spinach well and add it to a mixing bowl. Stir the pesto in with the spinach. 
  2. In a oven safe dish* that fits inside your Instant Pot layer the following ingredients twice: ½ cup alfredo sauce, half of the spinach mixture, half of ravioli. Spread any remaining alfredo sauce on top.
  3. Pour 1 cup of water into the bottom of your Instant Pot. Place plan with ravioli on top of a trivet with handles*. Lower the trivet and pan into the Instant Pot. 
  4. Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 25 minutes. When the time is up let the pot sit for 5 minutes and then move valve to venting. Remove the lid. 
  5. Sprinkle the mozzarella cheese on top and let melt. Use a spoon to scoop deep to get all the layers and serve garnished with a bit of parmesan and fresh basil.

Slow Cooker Instructions:

  1. Chop the spinach well and add it to a mixing bowl. Stir the pesto in with the spinach. 
  2. In your slow cooker layer the following ingredients twice: ½ cup alfredo sauce, half of the spinach mixture, half of ravioli. Spread any remaining alfredo sauce on top.
  3. Cover and cook on low for 4 hours or on high for 2-3 hours. 
  4. Sprinkle the mozzarella cheese on top and let melt. Use a spoon to scoop deep to get all the layers and serve garnished with a bit of parmesan and fresh basil.

    I don’t have a 3-quart insert to use, but I do have a springform pan (7-inch) that I use for cheesecakes. Would that work, or would 5he sauce leak out?

      It may be thick enough sauce that it won’t leak out. I’ve had bad experiences in the past with my spring form pan.

    If I were to use the slow cooker setting on the instant pot to do it the slow cooker way, would I still need to use the PIP method?

      I bet you don’t need to do the pip method. Turn the slow cooker setting to the highest one.

    How come you just used a 3 quart insert and not the 6 quart?

      I layered the pasta and ingredients in a 3 quart liner which I used as a pot in pot dish inside my 6 quart Instant Pot. You can also use a 7×3 inch Fat Daddios pan to layer the ingredients in.

    If I use red sauce, can I make it directly in the IP without using PIP. I know that other red sauce dishes I’ve done that plus perhaps some water??

    Do you need to put foil over the top of the pot in pot? If so I think it should be added or noted that it doesn’t need to be covered with foil. I am never sure what to do in these cases. Thanks
