Adele’s Casserole–Instant Pot smoked sausage, carrots, potatoes and spinach with a bit of lemon pepper and parmesan cheese. An easy and delicious one pot meal!

Adele’s Casserole
Today’s recipe is a colorful one pot meal with only a 2 minute pressure cook time! I bet it won’t last longer than 2 minutes either! The idea for the recipe didn’t come from the singer Adele but rather a recipe I found online by a woman named Adele Doyle. She claims the recipe is popular because of the seasoning used…lemon pepper. I do believe the lemon pepper seasoning brings the dish to a new level. Such good flavor!
This is a perfect summer meal. It doesn’t require a ton of effort and it is light enough not to weigh you down. You may want to double the recipe (keep the same recipe time) so that you can have leftovers for lunch the next day.
Ingredients/Substitution Ideas
- Olive oil
- Smoked sausage–I used beef smoked sausage. You can also use kielbasa, brats or even all beef hot dogs.
- Onion
- Chicken broth–or beef broth
- Red potatoes–or yellow potatoes or peeled Russet potatoes
- Carrots–or baby carrots
- Lemon pepper seasoning
- Cornstarch
- Parmesan cheese
- Spinach–fresh or frozen
Steps
Turn Instant Pot to saute setting. When display says HOT add in the oil and the sausage. Brown the sausage for 3 minutes.

Add in the onion and saute for 3 more minutes.

Pour in the broth and scrape bottom of pot so that nothing is sticking. Turn off Instant Pot.
Add in the potatoes and carrots. Sprinkle the lemon pepper seasoning on top.

Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 2 minutes. When time is up let pot sit for 5-10 minutes and then move valve to venting. Remove the lid.

If desired make a cornstarch slurry by stirring 1 ½ teaspoons cornstarch with a tablespoon of water. Then turn Instant Pot to saute and stir in the slurry. It will thicken up the sauce quickly. Then turn off the pot.
Stir in the parmesan and spinach.

Scoop onto plates and serve.

Notes/Tips
- Serve with a side of garlic bread.
- This recipe is gluten free.
- I used my 6 quart Instant Pot*. You can also make this in a 3 or 8 quart pot.
- Store leftovers in an airtight container* in the refrigerator for up to 5 days or in the freezer for up to 3 months.

- 1 (12 oz) package smoked sausage, cut into quarter inch rounds

- 4 medium red potatoes, cut into half inch cubes
- 2 large carrots, peeled and sliced

Can I make this without potatoes? I’m low carb . Any other suggestions ?
I would use cauliflower florets instead. Same cooking time!
I made this but I did NOT scroll all the way down the page and see the exact measurements lol. I added a whole box of chicken broth but it came out very good. next time I’m gonna add garbanzo beans and it will add a bit something more to it.

I made this but did NOT see all the way at the bottom of the page how much to use per ingredient lol. I used the whole box of chicken. broth it came out just as good .next time I will add garbanzo beans and it will be just a touch more more of yummy

How could I adapt Adele’s casserole recipe for a crock-pot?
I think so. Add all ingredients (except cornstarch, parmesan and spinach) into slow cooker. Cover and cook on high for 3 hours, or until potatoes are tender. Stir in the parmesan and spinach.
