Description
Instant Pot smoked sausage, carrots, potatoes and spinach with a bit of lemon pepper and parmesan cheese. An easy and delicious one pot meal!

- 1 Tbsp olive oil
- 1 (12 oz) package smoked sausage, cut into quarter inch rounds
- 1 cup diced onion
- 1/2 cup chicken broth
- 4 medium red potatoes, cut into half inch cubes
- 2 large carrots, peeled and sliced
- 1 tsp lemon pepper
- 1 1/2 tsp cornstarch (optional)
- 1/4 cup parmesan cheese
- 1 cup chopped spinach
Instructions
- Turn Instant Pot to saute setting. When display says HOT add in the oil and the sausage. Brown the sausage for 3 minutes. Add in the onion and saute for 3 more minutes.
- Pour in the broth and scrape bottom of pot so that nothing is sticking. Turn off Instant Pot.
- Add in the potatoes and carrots. Sprinkle the lemon pepper seasoning on top.
- Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 2 minutes. When time is up let pot sit for 5-10 minutes and then move valve to venting. Remove the lid.
- If desired make a cornstarch slurry by stirring 1 ½ teaspoons cornstarch with a tablespoon of water. Then turn Instant Pot to saute and stir in the slurry. It will thicken up the sauce quickly. Then turn off the pot.
- Stir in the parmesan and spinach.
- Scoop onto plates and serve.
