Description

Instant Pot smoked sausage, carrots, potatoes and spinach with a bit of lemon pepper and parmesan cheese. An easy and delicious one pot meal!


Ingredients

  • 1 Tbsp olive oil
  • 1 (12 oz) package smoked sausage, cut into quarter inch rounds
  • 1 cup diced onion
  • 1/2 cup chicken broth
  • 4 medium red potatoes, cut into half inch cubes
  • 2 large carrots, peeled and sliced
  • 1 tsp lemon pepper
  • 1 1/2 tsp cornstarch (optional)
  • 1/4 cup parmesan cheese
  • 1 cup chopped spinach

Instructions

  1. Turn Instant Pot to saute setting. When display says HOT add in the oil and the sausage. Brown the sausage for 3 minutes. Add in the onion and saute for 3 more minutes. 
  2. Pour in the broth and scrape bottom of pot so that nothing is sticking. Turn off Instant Pot.
  3. Add in the potatoes and carrots. Sprinkle the lemon pepper seasoning on top. 
  4. Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 2 minutes. When time is up let pot sit for 5-10 minutes and then move valve to venting. Remove the lid. 
  5. If desired make a cornstarch slurry by stirring 1 ½ teaspoons cornstarch with a tablespoon of water. Then turn Instant Pot to saute and stir in the slurry. It will thicken up the sauce quickly. Then turn off the pot.
  6. Stir in the parmesan and spinach. 
  7. Scoop onto plates and serve.
