Instant Pot Smoked Sausage, Green Beans and Potatoes
My cajun version of this recipe is so popular and so tasty I decided to make another version that’s basic and doesn’t have the cajun spice. What resulted was a most amazing dinner with very little effort or ingredients.
Start by cubing up some potatoes. I used yellow yukon gold potatoes but it doesn’t really matter what kind you use. You can use red potatoes or Russets as well. You can peel them or not. I didn’t peel mine. Then wash and trim some fresh green beans. For sake of ease, buy a bag of fresh green beans that has been washed and trimmed already. That’s what I did. I have not tried this recipe with frozen green beans. I believe that they would come out a little too mushy. But you can try it if you want! Finally take a package of smoked sausage and slice it into quarter inch slices. Smoked sausage can be found by the other cured meats at the grocery store. It is pre-cooked and doesn’t require you to brown it. It comes in many different flavors and options. I chose a beef smoked sausage.

Then all you do is add a little water into the Instant Pot followed by your prepared ingredients and then sprinkle in pepper, seasoned salt, garlic powder and finally top with a little butter.
You’ll only use a pressure cook time of 1 minute(!) for this recipe. The reason? The pot takes a while to come to pressure and is cooking the potatoes and green beans the whole time. One minute is definitely enough time for the food to cook through, I promise!
I can’t wait to make this one again really soon! We all ate it until it was gone. No leftovers at all!

What Pressure Cooker Did You Use?
To make Instant Pot Smoked Sausage, Green Beans and Potatoes I used my 6 quart Instant Pot Duo 60 7 in 1*. I love this Instant Pot because it has the yogurt making function which I use almost weekly. It has two pressure settings (high and low), and there are also little slots in the handles so that you can rest the lid there instead of putting it down on your counter-top.

Ingredients
- 1 cup water
- 1 (12 oz) package of pre-cooked smoked sausage, sliced into quarter in pieces
- 1 ½ pounds yellow, red or Russet potatoes, washed and cubed
- 1 pound fresh green beans, washed and trimmed
- 1 tsp black pepper
- 2 tsp seasoned salt
- 1 tsp garlic powder
- 4 Tbsp butter, cut into 8 pieces
Instructions
- Pour the water into the bottom of the Instant Pot. Layer ⅓ of the sausage, ⅓ of the potatoes and ⅓ of the green beans. Repeat 2 more times.
- Sprinkle in the pepper, seasoned salt and garlic powder. Add in the butter pieces on top.
- Cover the pot and secure the lid. Make sure the valve is set to sealing. Set the manual/pressure cook button to 1 minute. When the time is up let the pot sit for 3-5 minutes and then move the valve to venting. Remove the lid.
- Gently stir. Scoop onto serving plates and enjoy.

Is the 1 minute time correct? I used my 6 qt IP for this recipe and after 1 minute the potatoes were still hard and the green beans uncooked. Both the potatoes and green beans were fresh, not old. All together I had to cook for about 24 minutes to get the potatoes soft.
The recipe was flavorful and I would make this again. Can you please clarify the cooking time? Thank you.
How interesting. I always use the 1 minute cooking time and the potatoes are very soft. What kind of pressure cooker do you have? What kind of potatoes did you use?
If I wanted to add onions and mushrooms, when would I incorporate it into the recipe? And would it change the cook time?
I would add them in with everything else. And I’d keep the same time.

I would not pressure cook the canned beans. I would just stir them in after the potatoes have pressure cooked. Otherwise I think they’ll be completely unidentifiable
I created this recipe myself in a big skillet for my big family 20 years ago before there was an Instant Pot available with just a couple of changes that really add flavor: EV Olive oil instead of butter, 1t. powdered chicken bouillion, and a lot of onion powder and generous black pepper. Frozen green beans work just fine though I too prefer fresh. Smaller cubes on the potoes work best because you want them to “melt” somewhat, which adds a lot to the dish. My method could be done in the IP, but you’d do just the potatoes first for a minute in a bit of water so that they are crisp tender, then add green beans and sausage after that and do for min longer, which will allow the potatoes to melt a bit in the mixture. This is a real family favorite!
