Viral Casserole–a chicken pot pie-esque dish. It is a super easy, casserole-style, one-pan dish.

Today’s recipe is my take on a viral chicken cobbler recipe that is fun to make and fun to eat. It’s layers of chicken, vegetables, gravy and a cheddar biscuit layer. It’s quite easy to make and then you bake it in a 9×13 inch dish and let it get all bubbly and golden brown. I served this up to Greg, Skyler and 3 of his friends. They were all excited to eat it and one kid mentioned “it’s like a really good chicken pot pie!” I appreciated that since it was much easier than making a homemade pie crust for a chicken pot pie. Ingredients/Substitution Ideas

  • Butter
  • Rotisserie chicken–or cooked chopped chicken (I like this recipe)
  • Mixed vegetables–I used broccoli, cauliflower and carrots
  • Kosher salt
  • Pepper
  • Poultry seasoning
  • Onion powder
  • Garlic powder
  • Paprika
  • Milk
  • Red Lobster Cheddar bay biscuit mix with seasoning packet–I found this at Sam’s Club
  • Chicken broth–or water and Better than Bouillon chicken base
  • Cream of chicken soup–or cream of mushroom, celery

Steps

Heat oven to 350 degrees F. Place butter in a 9×13 inch baking dish and place in the oven to melt the butter as it heats up. 

Once butter is melted add the chicken into the bottom of the pan in an even layer.

Then layer on the vegetables. Sprinkle the salt, pepper, poultry seasoning, onion powder, garlic powder and paprika on top. 

In a mixing bowl mix together the milk, biscuit mix and seasoning packet. Pour over the top of the vegetables (do not mix together). 

In the same bowl whisk together the chicken broth and cream of chicken soup. Pour over the top of the biscuit mix layer (do not mix together). 

Bake for 45-50 minutes, or until top starts to get golden brown. Let it sit for 10-15 minutes (it will look a little runny but the sauce will thicken like a gravy). Serve and enjoy!

Notes/Tips

  • Serve with a simple salad or steamed vegetables.
  • Store leftovers in an airtight container* in the refrigerator for up to 5 days or in the freezer for up to 3 months.

Ingredients

  • 1/2 cup butter (1 stick)
  • 4 cups rotisserie chicken, shredded or chopped
  • 1 (12 oz) package mixed vegetables (I used broccoli, cauliflower and carrots)
  • 1/4 tsp kosher salt
  • 1/4 tsp pepper
  • 1/4 tsp poultry seasoning
  • 1/4 tsp onion powder
  • 1/4 tsp garlic powder
  • 1/4 tsp paprika
  • 2 cups milk

    looks and sounds so yummy…I just had a quick question, could you use cubed potatoes or would they not get tender enough? if using the potatoes would you need to add more time?

      I feel like they would still be rock hard…they take a long time to cook. I would at least partially cook them before adding them in.
