Crockpot Pierogi Summer Sausage Casserole

If you’ve never had pierogies before, they’re little dumplings filled with creamy mashed potatoes and cheese. I would describe them as a Polish version of ravioli. They’re a freezer shortcut for an easy dinner. Try adding in more vegetables like fresh spinach, sautéed mushrooms or peas. It’s a rich meal, so don’t be surprised if a small bowl fills you up!

Ingredients/Substitution Ideas

  • Olive oil–or vegetable oil, canola oil
  • Smoked sausage–or kielbasa, turkey smoked sausage, or chicken sausage
  • Onion–or shallot
  • Chicken broth–or water and Better than Bouillon chicken base
  • Frozen pierogies–cheddar potato, potato and onion, or your favorite variety (I used Mrs. T’s brand)
  • Cream cheese
  • Half and half–or whole milk or evaporated milk
  • Parmesan cheese–or freshly shredded Romano or Asiago cheese

Steps

Heat a pan over medium high heat. Add in the oil and swirl around. Add in the smoked sausage and brown on each side. Add in the onion and sauté for 5 minutes. Pour in the broth. 

Stir in the frozen pierogies. Drop in the cream cheese. 

Cover the pan and turn heat to low. Cook for 6 minutes. 

Remove the lid and stir to incorporate the cream cheese. Stir in the half and half to loosen up the sauce. 

Scoop onto plates and serve topped with a little parmesan cheese.

Notes/Tips

  • Serve with green beans or peas.
  • Keep the pierogies frozen. There’s no need to thaw them before cooking.
  • Add a handful of fresh spinach during the last couple of minutes of cooking for a little extra color and nutrition.
  • If the sauce seems too thick add in an extra splash of milk.
  • Store leftovers in an airtight container* in the refrigerator for 4 days.

Ingredients

  • 1 Tbsp olive oil
  • 12 oz smoked sausage, sliced and cut into quarter inch rounds
  • 1 small onion, finely diced
  • 1/3 cup chicken broth
  • 1 (12.84 oz) box frozen pierogies
  • 4 oz cream cheese, cut into 1 inch pieces
  • 1/3 cup half and half or milk
  • Parmesan cheese, for topping

Instructions

Stovetop Instructions:

  1. Heat a pan over medium high heat. Add in the oil and swirl around. Add in the smoked sausage and brown on each side. Add in the onion and sauté for 5 minutes. Pour in the broth. 
  2. Stir in the frozen pierogies. Drop in the cream cheese. 
  3. Cover the pan and turn heat to low. Cook for 6 minutes. 
  4. Remove the lid and stir to incorporate the cream cheese. Stir in the half and half to loosen up the sauce. 
  5. Scoop onto plates and serve topped with a little parmesan cheese. 

Slow Cooker Instructions:

  1. Heat a pan over medium high heat. Add in the oil and swirl around. Add in the smoked sausage and brown on each side. Add in the onion and sauté for 5 minutes. Transfer to the slow cooker.. 
  2. Stir in the broth and frozen pierogies. Drop in the cream cheese. 
  3. Cover and cook on low for 1-2 hours. 
  4. Remove the lid and stir to incorporate the cream cheese. Stir in the half and half to loosen up the sauce. 
  5. Scoop onto plates and serve topped with a little parmesan cheese.
