Description
A chicken pot pie-esque dish. It is a super easy, casserole-style, one-pan dish.

- 1/2 cup butter (1 stick)
- 4 cups rotisserie chicken, shredded or chopped
- 1 (12 oz) package mixed vegetables (I used broccoli, cauliflower and carrots)
- 1/4 tsp kosher salt
- 1/4 tsp pepper
- 1/4 tsp poultry seasoning
- 1/4 tsp onion powder
- 1/4 tsp garlic powder
- 1/4 tsp paprika
- 2 cups milk
- 2 cups Red Lobster Cheddar bay biscuit mix with seasoning packet
- 2 cups chicken broth
- 1 (10.5 oz) can cream of chicken soup
Instructions
- Heat oven to 350 degrees F. Place butter in a 9×13 inch baking dish and place in the oven to melt the butter as it heats up.
- Once butter is melted add the chicken into the bottom of the pan in an even layer. Then layer on the vegetables. Sprinkle the salt, pepper, poultry seasoning, onion powder, garlic powder and paprika on top.
- In a mixing bowl mix together the milk, biscuit mix and seasoning packet. Pour over the top of the vegetables (do not mix together).
- In the same bowl whisk together the chicken broth and cream of chicken soup. Pour over the top of the biscuit mix layer (do not mix together).
- Bake for 45-50 minutes, or until top starts to get golden brown. Let it sit for 10-15 minutes (it will look a little runny but the sauce will thicken like a gravy). Serve and enjoy!
