Easy Cheesy Chicken Cobbler Casserole

This casserole has all the flavors of chicken pot pie without all the work. Greg took one bite and immediately told me it was absolutely perfect. It was hard to stop going back for another spoonful. The buttery sauce and fluffy biscuit topping are comfort food at its best, and using the Red Lobster biscuit mix gives it so much flavor with hardly any effort. If you don’t have that mix on hand, another biscuit mix will work just fine. Enjoy!

Ingredients/Substitution Ideas

  • Cooked chicken–I cooked boneless chicken thighs in the Instant Pot. Another option is to use rotisserie chicken or leftover turkey
  • Kosher salt
  • Black pepper
  • Garlic powder–or granulated garlic
  • Onion powder
  • Poultry seasoning
  • Smoked paprika
  • Butter
  • Frozen mixed vegetables–I used a package with peas, corn, carrots and green beans
  • Red Lobster Cheddar Bay Biscuit Mix
  • Milk
  • Shredded cheddar cheese
  • Chicken broth–or Better Than Bouillon mixed with water
  • Cream of chicken soup–or cream of mushroom

Steps

Heat oven to 350° F.

In a bowl stir together the chicken, salt, pepper, garlic powder, onion powder, poultry seasoning and smoked paprika.

Add the melted butter into the bottom of a 9×13 inch pan. Place the chicken into the pan. Layer the vegetables on top. 

In a bowl stir together the biscuit mix, milk and ½ cup of cheddar. Scoop the mixture over the top of the veggies. (I used an ice cream scoop).

In a bowl whisk the broth and chicken soup together. Pour the mixture over the top of the pan. Don’t stir.

Bake for 50 minutes. Sprinkle remaining cheese on top and bake for 5 more minutes. Serve and enjoy!

Notes/Tips

  • Serve with fresh fruit or applesauce.
  • Use rotisserie chicken to make this recipe even faster on busy nights. I didn’t have any rotisserie chicken so I cooked 1 ½ pounds of boneless skinless chicken thighs in 1 cup of broth in my Instant Pot for 12 minutes.
  • An ice cream scoop works really well for evenly portioning the biscuit dough across the casserole.
  • Let the casserole rest for about 10 minutes before serving so the filling thickens slightly.
  • I used my 6 quart Instant Pot*. You can also make this in an 8 quart pot.
  • Store leftovers in an airtight container* in the refrigerator for 4 days. Freeze for up to 3 months.

Ingredients

  • 3–4 cups of cooked, shredded or chopped chicken (I did this in the Instant Pot)
  • 1/2 tsp kosher salt
  • 1/2 tsp black pepper
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp poultry seasoning
  • Pinch of smoked paprika
  • 1/2 cup melted butter
  • 12 oz frozen mixed vegetables
  • 2 cups Red Lobster biscuit mix (1 pouch)
  • 3/4 cups milk
  • 1 cup shredded cheddar cheese, divided
  • 1 3/4 cups chicken broth
  • 1 (10.5 oz) can cream of chicken soup

Instructions
