Kielbasa Sausage Cheesy Potato Casserole–an Instant Pot or slow cooker dinner made with smoked sausage, tender potatoes, sweet corn, cheddar cheese, and a creamy sauce.

Kielbasa Sausage Cheesy Potato Casserole
We ate this until every bite was gone, and Greg kept commenting on how good it was. The little bit of steak sauce is the secret ingredient. It doesn’t make the dish taste like steak sauce but it makes all the other flavors pop. If you want to sneak more veggies in your meal add in some peas or broccoli. Enjoy!
Ingredients/Substitution Ideas
- Olive oil–or canola oil
- Kielbasa or beef smoked sausage–use turkey smoked sausage for a lighter option
- Onion–or shallot
- Chicken broth–or beef broth
- Russet potatoes–or Yukon Gold potatoes
- Garlic powder–or 1 Tbsp minced fresh garlic
- Black pepper
- Paprika–or ¼ tsp smoked paprika for extra smoky flavor
- Kosher salt
- Frozen sweet corn–or canned corn (drained)
- Sour cream
- Steak sauce–or Worcestershire sauce (use a little less)
- Shredded cheddar cheese–or Colby Jack, Monterey Jack or Pepper Jack
Steps
Heat Instant Pot to saute setting. When display says HOT add in the oil and swirl around. Add in the kielbasa and brown on both sides. Add in the onion and saute for 3 minutes.

Pour in the broth and scrape bottom of pot so that nothing is sticking. Turn off Instant Pot.

Layer the potatoes on top. Sprinkle the potatoes with garlic powder, pepper, paprika and salt. Dump in the corn.

Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set manual/pressure cook button to 4 minutes. When time is up let pot sit for 5 minutes and then move valve to venting. Remove the lid.

Stir in the sour cream, steak sauce and cheese.

Serve and enjoy!


Notes/Tips
- Serve with green beans, asparagus or broccoli.
- This can be gluten free if you use gluten free steak sauce.
- I used my 4 quart Instant Pot*. You can also make this in an 3, 6 or 8 quart pot.
- Store leftovers in an airtight container* in the refrigerator for up to 3 days. You can freeze it for up to 2 months, but keep in mind the sour cream sauce may separate slightly after thawing.

- 1 Tbsp olive oil
- 1 (12 oz) package kielbasa or beef smoked sausage, sliced into 1/4 inch rounds
- 1 small onion, finely diced
- 1/2 cup chicken broth
- 4 medium russet potatoes, peeled and cut into 1/2 inch cubes
- 1 tsp garlic powder
- 1 tsp black pepper
- 1/2 tsp paprika
- 1/4 tsp kosher salt
- 1 cup frozen sweet corn
- 1/2 cup sour cream
- 1/2 Tbsp steak sauce
- 1/2 cup shredded cheddar cheese

Slow Cooker Instructions:
- Heat a pan over medium high heat. Add in the oil and swirl around. Add in the kielbasa and brown on both sides. Add in the onion and saute for 3 minutes. Transfer to the slow cooker.
- Stir in the broth, potatoes, garlic powder, pepper, paprika, salt and corn.
- Cover and cook on low for 3 hours.
- Stir in the sour cream, steak sauce and cheese.
