Soccer Mom Soup

Soccer moms are modern-day superheroes! They juggle chauffeuring, managing household chores and often holding down a job. With such a busy lifestyle, it’s nice to have a quick, nutritious, and comforting meal on hand that you can literally put together in less than 5 minutes. That’s where “Soccer Mom Soup” comes into play. This easy-to-make soup only has 5 ingredients, contains a vegetable (WINNING!) and is a warm hug in a bowl. My family loved this soup and I will be using it in the future when I have a busy day! You may just want to double the recipe because one batch was barely enough.

Ingredients/Substitution Ideas

  • Chicken broth–or water and Better than Bouillon
  • Frozen broccoli–or fresh broccoli
  • Campbell’s cream of potato soup
  • Bacon crumbles
  • Shredded cheddar cheese–or colby jack

Steps

Pour broth into bottom of Instant Pot. Spread out broccoli evenly in bottom of pot. Scoop the cream of potato soup on top of the broccoli.

Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the SOUP button to 3 minutes. When time is up move valve to venting and remove the lid.

Whisk in the bacon and cheddar until melted. 

Ladle into bowls and serve. 

Notes/Tips

  • Serve with a dinner roll, cornbread or French bread.
  • This recipe doesn’t make a large amount. You may want to double the recipe or even triple the recipe if serving a crowd.
  • I used my 6 quart Instant Pot*. You can also make this in a 3 or 8 quart pot.
  • Store leftovers in an airtight container* in the refrigerator for up to 5 days or in the freezer for up to 3 months.

Description

Instant Pot or Crockpot broccoli, cheese and bacon soup that only has 5 ingredients! A fast and easy dinner for busy parents. 


Ingredients

Scale
  • 2 cups chicken broth
  • 1 (12 oz) package frozen broccoli
  • 1 (10.5 oz) can Campbell’s cream of potato soup
  • 1/2 cup bacon crumbles
  • 4 oz shredded cheddar cheese

Instructions

Instant Pot Instructions:

  1. Pour broth into bottom of Instant Pot. Spread out broccoli evenly in bottom of pot. Scoop the cream of potato soup on top of the broccoli.

Slow Cooker Instructions:

  1. Add broth, broccoli and cream of potato soup into slow cooker.
  2. Cover slow cooker and cook on low for 4 hours or on high for 2 hours. 
  3. Whisk in the bacon and cheddar until melted.
  4. Ladle into bowls and serve.

    Good stuff Karen! I did use a whole cup of bacon crumbs and shredded a whole 8 oz block of colby jack so it would be nice and creamy.Split a sub roll in half, slathered butter on it and sprinkled garlic powder for a quick air fryer garlic toast. Dinner is served! Thanks again.

    Instead of cream of potato soup you could use cream of celery or cream of mushroom or, golden cream of mushroom soup. Just a thought. I hope this helps. .

    Although I have not tried this recipe yet, I would imagine any cream soup such as celery, chicken or mushroom would work.

      yeah, I think you’re right. The good thing about the potato soup is you get chunks of potatoes in the soup.

    This was delicious. I deviated a bit, but I need meat !
    I browned a lb of turkey and I may have added more than 1/2 cup of bacon crumbles.

      Nope, you just add the condensed soup in without diluting it.
