Slow Cooker Quinoa

Lately my husband and I have been loving quinoa. I’ll make a big batch of it at the beginning of the week and then we eat it all week for lunch. My favorite lunch is spinach, quinoa, feta, tomatoes, hard boiled egg and Newman’s Own light balsamic dressing. It is so good! Give it a try! My husband will make a lunch of mushrooms and quinoa and whatever random things he can find in the fridge.

You can also make quinoa in the place of rice. For example serving quinoa with Slow Cooker Garlic Parmesan Chicken would be amazing. Quinoa is a super food that contains protein and it’s gluten free. It’s easy on the digestive system and it’s got a unique texture and neutral taste. My favorite place to buy quinoa is in the bulk section at Winco for only $2.00 a pound!

One thing that you need to know about quinoa is that it needs to be rinsed before you use it. If you forget to rinse the quinoa it will taste a little bitter. I use a mesh strainer* to rinse my quinoa. Even if the package says the quinoa is pre-rinsed I always rinse it, just in case.

What Slow Cooker Did You Use?

To make slow cooker quinoa I used my 6 quart oval Kitchenaid slow cooker.* I love this slow cooker (you can see me talking about it in a video here). It cooks low and evenly. I love the medium heat choice because most slow cookers that I’ve seen only have the option of cooking on low or high. If you’re going to buy just one slow cooker, this is the one that I recommend.

  • Cook Time: 4-6 hours on low
  • Total Time: 5 minute

Description

Ingredients

Scale
  • 1 part quinoa
  • 1.5 parts water

Instructions

  1. Rinse quinoa well in a mesh strainer. Add the rinsed quinoa to the slow cooker.
  2. Add in the water.
  3. Cover and cook on low for about 4-6 hours or 2-3 hours on high. If your crockpot is less full it will take less time to cook. If your crockpot is more than halfway full it will take more time to cook. Each slow cooker cooks differently. Pay attention to how yours cooks and make a note of how long it took to cook the quinoa.

      The recipe is meant for making any amount of quinoa, whether you want to make one cup or 4 cups. Common sense would say however much quinoa you use, add 1.5 the same amount of water lol
