Slow Cooker Amish Beef and Potato Casserole

This is one of those easy crockpot dinners that’s made with ingredients I almost always have in my pantry and refrigerator. It made my whole house smell amazing while it cooked. Dinner was ready after just a couple of hours in the crockpot because the potatoes are sliced nice and thin. If you need a longer cooking time, you can easily cook it on low instead of high. It’s also a great recipe to make your own by stirring in vegetables like mushrooms (stir in with the beef) or peas (stir in with the cream).

Ingredients/Substitution Ideas

  • Lean ground beef–or ground turkey, ground pork
  • Onion–or shallot
  • Kosher salt
  • Black pepper
  • Garlic powder–2 to 3 cloves fresh garlic
  • Dried parsley
  • Paprika–or 1/4 tsp smoked paprika for a deeper flavor
  • Russet potatoes–or Yukon Gold potatoes
  • Cream of chicken and mushroom soup–or cream of mushroom soup, cream of chicken soup
  • Chicken broth–or beef broth
  • Heavy cream–or half-and-half or whole milk
  • Green onions–optional

Steps

Heat a pan over medium high heat. Add in the beef and break it up. Add in the onion. Brown for 5 minutes. Drain off excess grease and transfer beef to slow cooker.

Season the beef with the salt, pepper, garlic powder, parsley and paprika. 

Stir in the potatoes, cream of chicken and mushroom soup and broth.

Cover slow cooker and cook on high for 2 ½ hours, or until potatoes are tender.

Stir in the cream. Top each serving with some sliced green onions, if desired.

Notes/Tips

  • Serve with steamed green beans and corn.
  • Sprinkle shredded cheddar, Monterey Jack or Colby Jack cheese over the top during the last 10-15 minutes of cooking if you want a cheesy version.
  • Try to slice the potatoes evenly so they cook at the same rate.
  • To make this gluten free use gluten free cream of chicken soup (made by Campbell’s).
  • I used a 6 quart slow cooker. This would also work in a smaller 4 quart slow cooker.
  • Store leftovers in an airtight container* in the refrigerator for 4 days. You can freeze leftovers for up to 2 months.

Ingredients

  • 16 oz lean ground beef
  • 1/2 cup diced onion
  • 1 tsp kosher salt
  • 1 tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp dried parsley
  • 1 tsp paprika
  • 3 medium Russet potatoes, peeled and sliced into quarter inch rounds
  • 1 (10.5 oz) can of cream of chicken and mushroom soup
  • 1/2 cup chicken broth
  • 2 Tbsp heavy cream
  • Green onions (optional for topping)

Instructions

  4. Cover slow cooker and cook on high for 2 ½ hours, or until potatoes are tender.
  5. Stir in the cream. 
  6. Top each serving with some sliced green onions, if desired.
