Poor Guy Husband Casserole

When money is tight, sometimes the best thing you can make for dinner is something you already have in your freezer! You’d be surprised what you can come up with when you shop your own pantry and freezer instead of heading to the grocery store. For this recipe, I pulled out a package of pork, but you could use chicken, ground beef, roast beef, brisket, pork chops or just about any leftover meat you have on hand. Potatoes are always inexpensive, and while I used red potatoes, Russets or Yukon Golds would work great too. Grab whatever barbecue sauce and cheese you have in the fridge and you’re all set! For such a cheap and easy dinner, I was really happy with how it turned out, and Greg loved it so much he let out a hearty “MMMM!”

Ingredients/Substitution Ideas

  • Cooked meat–pulled pork, rotisserie chicken, cooked ground beef or leftover shredded beef are some options.
  • Red potatoes–or peeled Russets, Yukon Gold potatoes
  • Butter–or olive oil
  • Seasoned salt
  • Barbecue sauce–use your favorite brand
  • Corn–frozen, canned (drained) or fresh corn
  • Cheddar cheese–or Monterey Jack, Colby Jack or a Mexican cheese blend

Steps

Add 1 ½ cups of water into bottom of Instant Pot. Place potatoes into a steamer basket and drop the basket into the Instant Pot. Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set manual/pressure cook button to 2 minutes. When time is up move valve to venting and remove the lid. Move steamer basket out of the pot and discard the water.

Turn Instant Pot to saute setting and once it has heated add in the butter and let it melt. Toss in the potatoes and seasoned salt and fry up the potatoes in the butter for 2-3 minutes.

Gently stir in the meat, barbecue sauce and corn. Heat through.

Sprinkle the cheese over the top. Turn off the Instant Pot, place the lid loosely on top and let sit for 2–3 minutes, or until the cheese has melted. Alternatively, use an air fryer lid to melt and lightly brown the cheese.

Serve and enjoy!

Notes/Tips

  • You can use whatever kind of cooked meat you’d like. Some choices are shredded pork or chicken, ground beef or turkey, brisket.
  • This is a pretty complete meal on its own, but it would be good with a green salad, coleslaw, steamed broccoli or roasted green beans.
  • Store leftovers in an airtight container* in the refrigerator for 4 days. Freeze leftovers for up to 3 months.
  • Other recipes you can make with red potatoes are Power Potatoes and Instant Pot Parmesan Ranch Potatoes.
