Amish Wet Burrito Casserole
Today’s recipe is a stove/oven recipe that has ground beef, a creamy sauce and tortillas along with a layer of cheese. It’s quite easy to make and bake and uses easy pantry ingredients you probably already have on hand. If you are a fan of creamy enchiladas you’ll enjoy this beefy burrito casserole. This recipe is adapted from Amish Wet Burrito Casserole on Amish 365.
Ingredients/Substitution Ideas
- Lean ground beef–or lean ground beef
- Onion
- Green bell pepper
- Kosher salt
- Black pepper
- Onion powder
- Garlic powder
- Chili powder
- Cumin
- Smoked paprika
- Cream of chicken or cream of mushroom soup
- Sour cream
- Salsa–or picante sauce
- Corn tortillas–I used white corn tortillas
- Cheddar cheese–or mexican blend
Steps
Heat oven to 350° F.
Heat a pan over medium high heat. Add in the beef and break it up. Brown for 4 minutes. Stir in the onions and green peppers and saute for 4 more minutes. Drain off excess grease. Stir in the salt, pepper, onion powder, garlic powder, chili powder, cumin and smoked paprika. Turn off the heat.

Stir in the cream of chicken soup, sour cream, salsa, and tortillas until combined.
Spread the mixture into a baking dish. Sprinkle with cheese.

Bake for 30 minutes. Serve and enjoy!

Notes/Tips
- Serve with chopped tomatoes, shredded lettuce and salsa.

- 1/2 cup sour cream

- 6 small corn tortillas, cut into 1 inch squares
- 1 cup shredded cheddar cheese
